What have you eaten today? (Low carb forum)

Bacon, eggs and mushrooms, and a slice of fried bread for breakfast this morning

Pot luck for lunch.

Dinner at the Bowls Club Bistro, chefs special tonight.
 
Today...

Breakfast: Nothing
Lunch: Scrambled Eggs
Dinner: Chicken and Asparagus Risotto - using cauliflower rice. This is an experiment and I'm really hoping it works out well as Chicken and Asparagus Risotto is one of Mr C's favourites.
Supper/Snack: Nothing
 
B: none
L: chicken broth with chicken meat
S: 3 squares 70% choc
D: same as last night - chicken and broccoli in a cream and cheese sauce. Tonight I am adding konjac rice.

A bit p'd off with the konjac rice, actually. Tescos had a good deal on it, and the shelf was cleared. So they rushed more stock in. Only the new stuff is very wimpy. A lot less rice in the packet, bulked out by more water, so it needed rinsing. And then the wimpy rice just dissolved and ran through the holes in the sieve!

I feel a phone call to Tescos customer service coming on.

(bought 5 packets, and so far 2 have been like this. opening the 3rd tonight. I expect you will be teetering on the edge of your seats waiting to hear what I find...)

D. Indian restaurant. Popadom with raw onion and mint yoghurt. Tandoori King prawn with lettuce. Chicken tikka with side salad.

Not sure if I have room for pomegranate :)
 
Breakfast - crustless quiche (eggs, cream, bacon, onion, spinach, cheese, topped with tomatoes)

Lunch - tuna mayo, salad (spinach, rocket, 6 cherry tomatoes)

Dinner - lamb chops, cauliflower, sprouts

The pack was edible, this time, but not as good as the first ones I bought before they did the special offer thing.

Have to say though that these konjac rices are an excellent option to replace rice and soak up a sauce. I had tried the various konjac options before, and abandoned them (fishy smell, rubbery texture, ridiculous price), but either this brand is different, or the whole world of konjac has progressed since then. Apart from the 2 watery packs, I have been pleasantly surprised.

Although I should add that rice has never been a favourite of mine. Always found it incredibly boring and a waste of plate space.

I also find rice a bit uninspiring although although I did make a really nice Chicken and Asparagus risotto for dinner yesterday.

Which brand of konjac did you buy? I don't normally get the konjac rice - usually use cauliflower rice - but I do get konjac noodles in place of spaghetti or egg noodles. The one I get is from Morrison's, just can't remember what it's called.
 
Is that the one where it says it is non smelly?

I must be lucky - I've tried a few different brands and never thought it was smelly. On the other hand I might just have a rubbish sense of smell.

Did anyone see that Michael Mosley programme about rice? Apparently it contains arsenic and should be rinsed thoroughly before boiling in a lot of water. Bit worrying as Mr C and I (before low carbing) always had risotto once a week (different flavours but same arborio rice) and very often brown basmati with curries on another day. Any one know the symptoms of arsenic poisoning??? LOL
 
Yesterday - Thursday
B. Usual 2 scrambled eggs with parsley and a dash of cream, 2 rashers crispy streaky bacon and a couple of mini portobello mushrooms.
L. Nothing as was going to theatre at night.
D. Ate out - flat iron steak with salad and mayo and buttered veg. 1/2 pint dry cider.
Went from 6.2 to 7 which was OK.
