What have you eaten today? (Low carb forum)

Breakfast: Boiled egg and buttered lidl protein roll soldiers

Lunch: Green salad and an 80g tin of tuna in olive oil which has chilli and garlic in it

Dinner: Home made beef burgers topped with Stilton - or I might attempt to put the Stilton in the middle with romaine, tomatoes and either red onion or avocado.

It's shopping delivery day tomorrow so not a lot of choices of fresh stuff left in the house. Which, I suppose, is as it should be....

I fry bacon (being lazy I use a couple of packs of lardons) and 1 medium onion and add to a large, pre-greased ceramic dish. I then beat 10 eggs with 300 mls double cream and pour over the bacon and onion and then add a bit of cheese. Top with thinly sliced tomato and bake until set. It's really filling and I get 5-7 portions out of that (keep a couple of larger portions for lunches, smaller ones for breakfast). Freezes really well too.
I will def try that!!
 
I make something very similar but bought a silicone mould tray for finger size cakes it's great for snacks and lunches also freeze some for when I can't be bothered to make packed lunch for the next day I just take it out the night before and by lunch time its defrosted

D. Crust less quiche ( haven't made one for a couple of years and it was delicious! Thank you to @Goonergal and others who have mentioned it in their food diaries) with salad and homemade Raita. Strawberries and yoghurt.
I'm really full now but if I do get a pang I have a pomegranate pot in the fridge.:)
 
Braekfast yesterday left over oddments fried up for a farmers breakfast, cheese and mushroom omelette for lunch. Dinners was steak and veggies, greek yoghurt and blueberries for afters.
 
Breakfast - crustless quiche

Snack (out at meeting meaning lunch was delayed) - 25g peanuts

Lunch - tuna mayo with salad

Dinner - home made burgers (second of the 2 portions made yesterday), sprouts, cauliflower. Dessert - 10 raspberries and cream.
 
B: Yoghurt
L: Beans on toast (Burgen Bread) not had that for over a year BS 5.1 @ 2hrs :)
D: Gammon steak, salad and 3 tiny new potatoes
S: There will be some - but no peanuts, I looked everywhere, there are none in stock

L. Celery, peanut butter, slice of ham.

D. Bolognese with courgetti

Snacks hand full of mixed nuts and a a couple of rice crackers
 
A bit better today bed on 7.7 (or was it 7.8?) and FBG of 8.5 so still high but a lot better than before. Feeling less stressed today.
B. Nothing. Did the usual school run but was giving son a lift to hospital for an outpatient appointment plus I had No 2 grandson for the day. Result it was so late when I got the chance to eat decided lunch was a better option.
L. The other Diet Doctor trout fillet from yesterday. As delicious cold as hot. Romaine lettuce, 4 Vittoria tomatoes, mini applewood smoked and mini Cornish cove, 3 walnuts and tbsp of Helmanns.
D. Diet Doctor stuffed chicken breast with cheese, jalapeno etc. A @Brunneria fest with veggies....Asparagus, brussel sprouts, mini cauliflower and broccoli - all steamed and 1/2 a roasted aubergine.
Still drinking loads of water.

Lunch: Tuna Mayonnaise wrapped in lettuce leaves

Dinner: Hot roast chicken, salad, grated cheese, mayo

Snack: Few walnuts
 
Yesterday:
Cheese and pepperoni omelette with mushrooms
Fathead pizza
2 Babybel to tide me over a twilight meeting at work
Hunters chicken at the pub with salad replacing chips

Today:
Cheese omelette, bacon and mushrooms
Lidl Greek salad (feta cheese, olives and oil and herb dressing)
Pork chop, stir fried cabbage and leeks in cream

I'm not sure about the pomegranate pot yet as I'm currently very full. :)
 
I will only put lunch in in, banana prawns and cheese omelettes. Here's some pix. :D
