What have you eaten today? (Low carb forum)

Morning all. Catching up after the weekend.

Both days were fasting days - definitely so much easier at the weekends.

Saturday’s dinner was slow roasted shoulder of lamb with garlic and rosemary with a side of cauliflower cheese and dessert of chocolate olive oil cake with cream.

Yesterday’s dinner was cold lamb, a spinach and tomato side salad with mayonnaise and a Lidl protein roll with butter. And of course, still eating the chocolate olive oil cake with cream. Only ate about a third of the lamb I was planning as not overly hungry, but was then peckish a bit later on so had a bag of Awfully Posh pork crackling and some more cake.
 
Hi all, Breakfast - 2 cups of tea
Brunch - home made thick vegetable soup with home made seedy/nutty loaf
Dinner - possibly oven baked salmon with a red pesto and cheese topping on a bed of spinach
 
Hungry day today.

Breakfast - none

Lunch - on the go, snacks from the Coop: 30g spicy pepperoni sticks, bag of pork crunch, small bar 85% chocolate.

Dinner - 2 Waitrose free range Cumberland sausages, 2 rashers bacon, 1 Birds Eye burger followed by chocolate olive oil cake with cream (just one portion left now).

Off to the gym shortly.
 
Hi all decided after Saturday and Sunday missing breakfast as wasn’t hungry to go for a week of 18/6. I’ve been fasting 23/1 two days a week and eating three meals the other 5 days but think I’m going to give this method a go this week and see what happens by Friday weigh in. If it doesn’t work will go back to my two one day fasts. Think it’s probably good to mix it around.
Lunches Sunday and Monday half advocado each day mixed with smoked salmon strips, mixed seeds, a few small tomatoes, a pinch of chilli, advocado oil, lemon juice and a sprinkle of flaxseed.
Dinner Sunday - roast chicken dinner, braised celery and celeriac mash Monday - cold chicken salad with a few celeriac chips roasted in coconut oil followed by coffee and 2 100% chocolate buttons.
 
1pm homemade lamb liver pate (lamb livers sauted in butter with a pinch of onion powder, a dash of balsamic vin, a drizzle of pomegranate syrup - yes, i am obsessed - rosemary and black pepper. When cooled, blended smooth with cream cheese). Eaten with a teaspoon. Lush.
6pm organic beef mince squished into burgers, served with a smear of tomato puree, a smear of mustard, a gherkin and a layer of melted cheese. I must say, there was a huge difference between this organic beef and the usual cheaper one. Definite improvement.

Hello all -- very long day at work today and also working from home all day yesterday, so am playing a game of catchup.

Sunday ...

Breakfast: Two double decaffeinated espressos with cream and xylitol.

Lunch: A low carb roll with liver pate and some low-carb chocolate mousse with whipped cream.

Dinner: Roasted vergetables (eggplant, zucchini, mushrooms, fennel, bellpepper) with parmesan. Cornsalad with Caesar's dressing and parmesan. One and a half glasses red wine.


Monday ...

Breakfast: Two double decaffeinated espressos with cream and xylitol

Lunch: Nothing.

Snack: Four Babybel cheeses, about 60g of macadamias, about four squares of 85% chocolate.

Dinner: Roasted vegetables reheated with full-fat unflavored Greek yoghurt and two chicken drumsticks marinated in soy sauce, garlic and cinnamon and baked in the oven, a heaping tablespoon of low-carb chocolate mousse, a glass of red wine.
 
Yesterday's broth sent me off to bed a bit higher at 6.5 but FBG back to 5.3.
B. Nothing had Physio this morning
L. My usual DD no bread breakfast sandwich - well it's quick and I like it. Tassimo Americano grande with a dash of cream.
D. 4 little grilled lamb chops, broccoli and wilted spinach. Had a prosecco too since I didn't have one yesterday.
Also had 2 squares Lindt 90% to see if I could cheer myself up. Trouble is now I'd like another 2!
 
I can’t stop eating this week - have been unusually hungry. Going with it for now.

Today was a very rare 3 meal day.

Breakfast - ate the lunch I’d taken to work. Lidl protein roll with butter and almond butter. Very nice although the untoasted roll isn’t as good as having it toasted.

Lunch - small bar Coop 85% chocolate and a bag of pork crunch.

Dinner - sea bass fillet with sautéed courgette, onion and broccoli. Last piece of chocolate olive oil cake with cream.
 
I feel like Ive eaten loads today but all I had all day were pistachios and a salmon salad. Got home and had half a Lidl protein roll then had the other half with some chicken but couldn't finish it. For a total carboholic like myself its so amazing not to be able to finish a meal. But Ive remembered why I go off track so often, theres a lot of cooking especially when you have a family and they're not joining you in the low carb life, you're working full time and theres no flinging of oven chips et al into the oven. Then the expense is another consideration. Grass fed butter, good cuts of meat and just made keto cookies and I taught my daughter, Truvia and almond flour £££££.
Ive left out so much cauli this time as the house totally stunk a lot.
I enjoy feeling in control like this so much, and most amazing of all Ive been FASTING...who'da thunk it...one 24 hour fast and most days 16/8.
 
Hi all Still 18/6 so no breakfast - although did feel hungry mind you husband was making toast in front of me!
Lunch chicken leg left over from Sunday dipped in low carb chilli sauce with walnuts on the side
Dinner beef casserole served on bed of cabbage followed by a no sugar jelly and cream
Plus several coffees with cream of course.
 
8.30am lamb liver pate, eaten with a spoon
13.30 a Maccies quarterpounder with cheese. I removed the bun, the onion, the gherkin and the ketchup and just ate the cheese and beefburger. Really enjoyed it.
20.00 will be pressure cooked lamb shoulder, served without anything but a sprinkle of salt.

You know, that pate was a revelation for breakfast. I'm a big chocolate fan (you may have noticed ;) ) and chocolate mousse is a favourite. Especially those intense dark posh ones. I have an excellent Delia Smith recipe for one that beats any restaurant version. Anyway, I can honestly say that I enjoyed the liver pate just as much as one of those choc mice. I never thought I would say something like that! This Zero Carb thing is really shifting my perceptions.
 
Bed on 5.1 last night FBG 5.3. Bitterly cold day with lots of snow.
B. Yes DD no bread breakfast sandwich and Tassimo Americano Grande with a dash of cream.
L. Bowl of vegetable soup as I was out and frozen and a bit naughty , an egg sandwich on seeded bread. Didn't do too much damage - got to 8.1 but came down pretty quickly as I had some walking to do. Also had a couple of diet cokes- highly unusual for me.
D. Finally found that enjoy cuisine edamame and mung bean pasta so I made it into carbonara with panchetta and mushrooms. Did absolutely nothing to my BGs. A really acceptable substitute for pasta. This is a keeper. Pasta has no taste its all down to the sauce. Currently, I'm at 5.1 so I can live with that.

Pleased that the fettuccine worked for you too it did for me with the carbonara sauce. I bought the spaghetti today as still on offer at Sainsbury’s planning to try in a day or two. Problem is when you’ve got out of habit of doing pasta you need to remember it when you’re menu planning,

Lunch: Half a low-carb roll with liver pate and two heaping tablespoons of low-carb chocolate mousse with hot blackberries.

Dinner: Two scrambled eggs with Northsea shrimp, roasted vegetables on full-fat Greek yoghurt, a cornsalad with Caesar's dressing and parmesan.

Just decided to have half a glass of wine to end the day.

It's helped me as my family are all pasta lovers. Until I discovered Oomi noodles I'd just stopped with pasta and although I still made it for family there were moans because they didn't get pasta as often. I like Oomi noodles but they're not the 'same'. These are - it's like a fettucini Verde. Portion size is bigger too. My DIL is Italian background and my sister is married to an Italian so I know a LOT of sauces. This is very much back on the menu. I'll be stocking up.
