I’ve used OJ and orange zest before, mixed in with the liquid choc/egg yolk combo. So that worked. Not tried mixing it straight with the cream though.
I’ve done lemon mousse like this too but added lemon zest and lemon juice folded in after whipping cream with a small @mount of erythritol. Done for dinners with family and friends and goes down really well.

@shelley262 your holiday sounds brilliant, it must have been wonderful to swan around in your new skinny wardrobe.
Well done for avoiding the Italian sweet treats, no mean feat, they are delicious.
Losing 1lb while on holiday is a real achievement, you should feel really smug, especially in the face of your husband’s half stone on!

Thank you @DJC3 italians seem very skinny in general - so good not to feel different for a change! Re Italian sweets husband had them all- tiramisu, cassata Sicilian, coffee ice cream, all the various krapchen, biscuits served with coffee etc I could only gaze in envy and work out how I may be able to make a low carb version or not! Proves eating lots of carbs put on weight as if we didn’t know!

Hello all. Think I have finally beaten this cold thingy.

Welcome back, @shelley262. Wonderful self-control for not straying from LCHF while on vacation. What did you see in Italy?

Breakfast: Two decaffeinated espressos with cream and erythritol. One DD keto roll, one half with chicken liver pate, one half with goat cream cheese and smoked sockeye salmon (had to share some of the salmon with the cat). One wiener sausage. Some low-carb chocolate mousse with whipped cream.

Lunch: Explore cuisine mung-bean edamame fettuccine with pesto Genovese and scallops. Roasted vegetables (red bellpepper, eggplant, zucchini, mushrooms) with olive oil and Greek yoghurt.

Couldn't finish all, had the leftovers at 6 p.m. plus four squares of 85% chocolate.

After success of breakfasts last week going to carry on with them and see how goes plus it’s good to ring the changes!
Breakfast 97% pork sausage, bacon and egg
Lunch Stilton, vintage cheddar and Shropshire blue cheese, coffee and one square 90% choc
Dinner chicken and spinach curry served with slice of low carb bread fried in butter. Glass of red wine planned for later.
@ziggy_w we flew to and stayed in Verona this time and stayed in wonderful hotel by the arena - an amazing roman colosseum still fairly intact. From roof top hotel jacuzzi could see into the arena! Lots of walking, churches, squares,markets and small palaces, the Romeo and Juliet balcony plus the river and bridges - comes highly recommended if you haven’t been there already!

Today still 16:8 IF
B: coffee and cream

L: leftover small portion of garam masala chicken. Then leftover chocolate chia pudding

Few olives and walnuts mid aft.

D: roast chicken, roast celeriac, green beans, cabbage and bacon, small spoonful of mashed swede.
Chocolate orange mug cake to follow ( thanks @geefull for posting the recipe)
Whole meal 11g carbs which is more than I usually have so waiting anxiously for 2hr post meal bg reading.....

B - nothing
L - scrambled eggs, 1 oatcake, couple of sundried tomatoes, 2 squares 85% chocolate
D- tofu, grated courgette, grate cheese, garlic, 2 scoops oppo ice cream
snack - peanut butter on an oatcake
Feel I'm getting through a bar of 85% choc rather quickly, with chocolate ice-cream too today - all carbs counted and 47g total for the day, but still feels 'naughty!'

There’s another thread Type2s: what have you eaten today in the T2 forum, and maybe others still elsewhere on the site I havent come accross, if this isn’t for you.

Hi we do all low carb eating on this thread and try to encourage each other. However we do also vary re how low carb we go. I try to keep below 30 and often 20g of carb per day to stay in keto. I also have often intermittent fasted as have others. I do it because it works for me on both my bgs and my weight. However we all have different tolerances of carb quantities and some may find low carb to be significantly more than I eat. We’d welcome anyone wanting to work on lowering their carbs and looking for ideas and support.

No breakfast, am getting better at listening to my body and if it's not shouting for food then great!
L: Low carb tortilla toasted until crisp with melted brie, olives, kabanos and parmesan
D: Not very hungry so happy with a keto hot chocolate.......cream, cocoa and a little stevia, delicious but couldn't finish it

Not happy with all the meds for the anaemia, arthritis etc but have been able to reduce them slightly today so hoping this will be a trend....oh and I am getting up a little bit on speed on my crutches now too! Physio will be impressed....I hope.

Ah didn't notice the tags, I'll take a look and see if there's anywhere I can join in, thanks, wouldn't post there as seems like just for Type 2's

Haha thanks about the avatar, I think it was done using Facebook but it was that long ago I cant actually remember for sure! lol x

Sorry low carbing isn't for me and due to weight loss etc its not something my team would want me to do either as we are trying to encourage weight gain x

Not really difficult as I have the benefit of having the insulin but I have lets say 'issues' regarding food since being diagnosed x

@kaylz91 - Theoretically low carb is anything under around 130gr a day. I don't know if that helps you out at all
Ah I don't hit 130g a day so will post my todays menu with weights and an estimate of carbs per meal if that's ok? then yous can decide if I'm ok to post? x

B - 45g jumbo oats, 170ml unsweetened almond milk, 60g fresh raspberries, knob of butter and a coffee with teaspoon of milk - 30g ish

mid-morning - coffee with teaspoon of milk

D - wholemeal bacon sandwich, 30g raspberries and a nature valley peanut & chocolate protein bar - 40g ish

mid-afternoon - coffee with teaspoon of milk

T - 140g lean beef mince, 150ml oxo, 100g Brussel sprouts, 2 large mushrooms, 150g charlotte potatoes and a square Lindt 90% - 30g ish

After - coffee with teaspoon of milk, also 3 pints water throughout the day x

Any tips for getting 3 pints water in through the day? - I struggle to get in my water as I usually forget.
