The roti looks good @shelley262 hope it tasted good. It does bear a passing resemblance to Africa, and the zebra pattern plate suits it. Have a lovely time with your mum next week.

B: smoked salmon and scrambled eggs

L: lettuce boats with cream cheese, one with smoked mackerel one with salami. Followed by @Goonergal’s lazy mousse - I love this.

S: 20g hazelnuts

D: small piece of calves liver, couple of ‘Naked’ Cumberland sausages, cauli mash and buttered cabbage
Has anyone else tried these sausages? They are really nice and only around 0.3g carbs each

Have a great time in Scotland @Goonergal, is Haggis good for lchf?

Hello all.

Blood sugars in the morning were a little higher than usual (about 0.5 to 1 mmol). Yesterday, I haven't eaten anything unusual and last meal at 7 p.m. -- so don't really know what's been causing it. For the most part, have been pretty relaxed about this (unusual for me), but it seems there is nothing I can about it. Fortunately, blood sugars are down somewhat now (with the help of a walk and some dry red wine).

Today ...

Breakfast: Two double decaffeinated espressos with cream and erythritol. Two boiled eggs, one avocado, half a DD keto roll with butter.

Lunch: Nothing.

Dinner: Nothing.

Snack: Two squares of 88% chocolate. Six olives with olive oil and lemon juice.

Hope tomorrow blood sugars will be better. If I am up to it, planning on making some low carb flan, creme brulee or panna cotta tomorrow.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream (2 tsp) washed down with a black coffee.
Lunch: Skinny Café pancake with bacon and sugar free maple syrup followed by Greek yoghurt and raspberries.
Mid-afternoon: Hartleys 10cal jelly and black coffee.
Dinner: meal out with hubby and daughter, chicken skewers and stir fry veg with side salad. Hubby and daughter shared a chocolate fudge cake. I had a tiny taste, boy it tasted sickly :yuck:, this time last year I would have polished one off no problem! I had a square of Tesco 85% when we got home!

Also had some homemade ‘after-eights’ - came out surprisingly well. Can’t tolerate dairy cream so used coconut cream in middle. Just 100% choc, coconut oil, coconut cream and peppermint extract. The four I ate had no observable impact on my Libre BG.

Your ‘after eights’ sound good @PW1. Did you actually sandwich the peppermint/ coconut cream between the chocolate leaves, or just make a chocolate cup for it?

Breakfast : 3 eggs scrambled with 1 cup spinach, one medium potatoe sliced and fried with 100g garlic sausage and 1 cup of coffee.

Lunch : two big spoonfuls of mashed potatoes, 100g turkey breast, 8 mini meatballs (there like the size of teaspoons), stuffing, and garlic bread.

Dinner : Going to eat the same thing I ate for lunch because it's cheat dayyyy

I copied @Goonergal’s ‘tecipe’ melted 5 Hotel Chocolate buttons in the microwave and added a dollop of extra thick double cream. Bliss, especially the warm chocolate next to the cold cream.

Sounds divine, and I have some Hotel Chocolat buttons. Easter treat for tomorrow me thinks :hungry:

Hi all.

Started out intending to just eat dinner and ended up with a feasting day.

Brunch - really hungry about 90 minutes after returning from the gym. Didn’t fancy anything in the fridge so took a Lidl protein out of the freezer and had it with butter (the nice Waitrose one with sea salt crystals) and almond butter. Really hit the spot.

Dinner - Waitrose lamb kleftico followed by a small portion of lazy mousse. @Brunneria I’m so glad you gave me the idea of a 2 ingredient mousse. It’s so easy and really tasty!

Off to Edinburgh for a few days in the morning, so may not be posting so much.
It's blooming cold up here and chucking it down so it's a soggy Edinburgh you're coming to. Hope it stops tomorrow for the Easter Egg hunt!

@DJC3 - Haggis Sorry not low carb. I can eat small amounts in moderation but a normal portion of haggis would put me through the roof. Probably the barley in it that causes it.

Bed 6.8 FBG 7.8 so slight improvement but it is still creeping up in the morning although thankfully just to low 8's now. I arm pain is improving - only had one dose of painkillers today to get me through swimming.
B. Tassimo Americano grande with a dash of cream. Slice of ox tongue.
L. After swimming. Another slice of ox tongue with a bit cream cheese. Got hungry so had the other half of that Mattesons sausage.
Made a low sugar latte , one sip and I had to pour it out - it was way too sweet.
Still needed food so a slice of Hovis low carb seeded with pate pate the fruity one.
D. Smoked gammon , carrot and swede puree and I had to make celeriac mash again.
2 square of Lindt 90 % - then another 2.....well it's Easter.

@maglil55 really impressed with your dedication keeping up with swimming with your arm hurting. Hope the pain eases soon.
I take No 1 grandson on a Saturday so I have to persist. Yesterday at Aqua was painful. A bit miffed today as they are closing our Health Club at the end of May to replace it with a "luxury care home". We're quite a community and no one is happy about it. So We're all in search of a new place that isn't all body builders and pink lycra. I think I'll go to the Club attached to the Edinburgh College as quite a few from my group are planning on going there. It has a similar mix.

There’s 2 versions:

@Brunneria ’s original:

Melt chocolate bar in a bowl, in the microwave, till just liquid; tip in a dash of fridge temp cream, while using a hand whisk (one of those electric things with 2 removable balloon whisks); add in the rest of the 300ml of double cream and whisk until solid. Doesn’t take long. I then portion out into ramekins and store in the fridge. It does set very solid.

My slight variation:

Melt a few Hotel Chocolat 100% buttons in a ramekin, add in some extra thick double cream, stir and voila, a mousse ready to eat with a nice contrast between hot and cold.

Can't see it - it's too wet. If we get any Snow I suspect it will be a few flurries and the salt of the Forth should take care of that.

PS there's a Hotel Chocolat in Hanover Street.

Thanks! I’ve also located Nando’s and Five Guys near my hotel. Meeting a friend over from the US, who has booked us on a 12 hour tour to Loch Ness and various other places.
