Thanks for the lemon icing recipe - sounds lovely. I’m off to buy lemons tomorrow to make the cake.

Ive never heard of Breyers ice cream but will pop in to Tesco and look for it as I do like it creamy. Do you know the carb count?
The cookie dough one is 5.5g carbs per 50 ml scoop. They have other flavours and it's half price in Tesco until 23 April. To be honest one scoop is enough for me - very creamy.

Hello everyone, strange food choices today, didn’t feel hungry this morning until about 11.30 so we cooked some sausages and then topped them with cheese and mustard before popping them back in the oven, very tasty and kept me going for the rest of the day, shared a tikka masala curry, no rice or breads but 2 poppadoms. Hopefully tomorrow will be better, I’ve already prepared a tuna salad for my lunch and am trying to decide what to have for breakfast, I managed to get my favourite low carb bread so it could be the simple delight of toast, or I have ham, cheese and hard boiled eggs to choose from but I also have all the ingredients to make the coconut porridge, decisions, decisions

Evening all
At long last managed a successful lemon drizzle cake with only 1.9 g carbs per generous slice. Found recipe on www.everydaysugarfree.co.uk
You’ll need to search for lemon drizzle cake. Only adaptations made to the recipe is the addition of a few drops of stevia liquid to the erythritol to make a little sweeter tasting for the rest of family. I also baked for 50mins before adding the lemon juice which I did in increments 3 x five mins back in oven every time and it really is best ever tastes just like ordinary lemon drizzle and Mr G agreed with me.
Notice this site also has a low carb custard - doable in slow cooker and I fancy giving this a go would be like your flan @ziggy but without caramel but would need to swap milk for cream. Maybe later in the week!

Had planned one large meal today as fasting bg a bit higher than normal and wasn’t hungry this morning - but succumbed mid afternoon to warm lemon cake and cream!
Dinner roast belly pork, cauli cheese and braised celery followed by lemon and lime low carb mousse
Gin and soda planned for this evening.

Shelley - Is there any point asking if this can be frozen, or is that just a silly, silly notion due to it's vaporisation rate?

Evening all. Sounds like everyone has had a nice weekend; interesting to see that most people spend their Sunday’s ensuring they have food prepared for the week ahead; we did something similar.

Today’s meals;

Woke with a severe case of the DP 12.2mmol

Breakfast was a delicious omelette with lots of cheese, mushroom 1/8 orange pepper and chorizo. 2hr pp 10.5mmol

Lunch was abit snacky as wasn’t very hungry. I had some left over cooked chorizo omelette, a few small bits of cheese and a small bit of chicken thigh. Before lunch; 6.7 2hr pp 7.2mmol

Dinner was a lovely Greek salad and a few homemade lamb koftas. I also made a low carb raspberry mousse. Before dinner 9.3mmol, 2hr pp 9.3

I did make some lemon drizzle cake for work tomorrow. I didn’t have a piece, but I did dip my finger in the lemon drizzle icing to make sure it was lemony enough....I wonder if that’s what causes the 9.3 pre dinner reading?

As I said earlier today has been better but I did have a nap this afternoon. Bed 7.2 FBG 7.5. Still had an attack of the DPs but only to 8.2. No double figure highs today thank goodness.

Glad to read that you've been feeling a bit better today, @maglil55. Hope tomorrow will be better still.

Funny, I took pork out today to make this DD recipe tomorrow night. How were the chops and green beans?
Really tasty. I'm made this one before a few times. Love the avocado through the green beans and the sliced sprouts went well with it. I use a hotter chipotle paste and I steam the veg before I put the chopped avocado through it.

Thanks for the tips! I'll not be using the sprouts though as hubby doesn't like. I'm already pushing my luck with avocado

Good evening all
Thanks for tip the other week @Goonergal re m and s deli. Met up with with youngest son in large new m and s near Birmingham which had a deli bar would really recommend. They have nutrition online but applies to whole meal including bread so worked it out more based on the rest which was practically zero carb in what I had.
No breakfast as treat lunch planned
Lunch m and s deli bar small seafood platter - crab, prawns, trout and smoked salmon served with plain green salad swap for bread and mayonnaise rather than Marie Rose sauce to play safe! It was delicious - so much better than their cafe for us low carbers couldn’t find anything in the cafe to eat at all a few weeks back. They also on request gave me cream with my Americano.
Dinner chicken stir fry with bean noodles followed by lemon and lime mousse and a thin slice of lemon drizzle
Had fun day shopping starting to get a few things for my May holidays when taking my mum and her sister my elderly aunt away provided both well enough at the time.

1pm - Meatzza , my first, made it with minced turkey thigh as the base topped with mozzarella, salami and olives. Very tasy and filling
7pm - Roast leg of lamb with buttered garlic/chilli spinach

Lovely weather today really lifted my spirits, planning a cooking day making some easy portable lunch dishes.

Very hungry today and haven’t stopped eating. All low carb, but up to 36g, which is about double my usual.

Mid-morning snack/late breakfast - 25g almonds, 25g mixed nuts.
Lunch - nuts didn’t hit the spot. M&S to the rescue with prosciutto and cheese rollitos, followed by a bag of pork crunch and a peperami.
Dinner - chicken leg seasoned with garlic salt and buttered cauliflower and cabbage followed by 2 Hotel Chocolat 100% buttons.

Oh, and then there was the entire bar of Tesco 85% chocolate. I managed to avoid buying the Coop equivalent when I went in to buy the pork crunch, but succumbed later on in Tesco!

Amazingly BG has not gone above 6.1 and was at 5.5 post dinner. May well be high in the morning.

Challenging couple of days coming as traveling for work tomorrow afternoon returning Wednesday night, with a crazy schedule on Wednesday.

Hi, hopefully you won’t be punished with high numbers tomorrow after your chocolate fest. Good luck with the travelling and busy work schedule, I have a busy week ahead too so am anticipating a little bit of stress which may see higher numbers for me too :(

I find stress has much more impact on my bgs that what I eat these days! A bad nights sleep and even exciting stress makes it go up for a while - what are we like! I find my mindfulness headspace app 10mins a day is helpful in this respect for me. Hope all goes well for you in your busy week,

Yes, sleep and relaxation is definitely helpful. Exercise is also helping with BG, but it is also triggering hunger - think today is the result of the weekend’s exertions. Very hard to get the balance right.

Lunch: chicken soup with a Joseph’s low carb pitta bread, followed by Greek yoghurt and raspberries.
Dinner: tuna melts, celeriac mash with a small portion of peas and sweetcorn followed by chocolate hazelnut Oppo and strawberries.

Thank you and yes I think taking time out is a great way to try and create some quiet me time. I use a Pranamat and lie on it for 20 - 30 mins most nights, I find it extremely relaxing and I often listen to some music or a meditation session.

Breakfast ham and a hard boiled egg with my usual cappuccino
Lunch tuna salad
Dinner tuna steak salad and poached egg, strawberries and extra thick cream, I might have scales, fins and gills tomorrow after all the fish today ;)

I hope you enjoy it! Use a non stick pan on a low heat and stir throughout the cooking process or it catches easily.
