What have you eaten today? (Low carb forum)

@Moggely rissoles really takes me back. My grandmother was a devotee of them and the word really reminds me of my childhood. Do you have a low carb version or just go for it as a treat?
@ianpspurs Hi. yes it is a low carb version and we have it quite often as my mother use to make it often when we were kids. I will find the recipe for you. Have to be honest here, my husband does a lot of the cooking:joyful:. He is a great cook and since we have retired he simply took over the kitchen. It's a win win situation. I do however make deserts for him as he isn't diabetic.:singing:
 
We are going to try cooking a frozen breast of lamb in the IP as a tester for how useful it may be. We have found hints and tips on the internet. Any tips from members who have more love for the IP than I have yet to muster would be appreciated.

Always, always, always do a natural pressure release. Using a fast pressure release can lead to tough meat.

Is your lamb breast rolled, or a slab? I tend not to use the IP for rolled joints, and never for frozen minced meat. As I understand it, frozen mince tends to cook as a block, almost like a hamburger or meat loaf.

Are you going to be using a recipe or winging it straight off?

I'm doing the keto chilli beef today, as my OH is playing golf. Unfortunately, I'm waiting in for an Amazon order, so might have to defrost the minced beef in the micro, prior cooking in the IP.

Thanks for the reply. The meat is rolled and we only want to cook it as meat no recipe per se. Lamb breast turns out to be a good choice for a start as it is cheap and nasty as they say. We had read the tip on natural pressure release but thanks. I have quite low expectations so am very unlikely to be disappointed:angelic:

My keto chilli is doing its thing at the moment, and also have a long infusion doing nicely in the SV, with another couple of hours to go.

Did you have your pot last winter? I love it for super-quick-soups from whatever's hanging around the fridge and some decent stock, or lobbing a couple of frozen chicken joints in with some spices and see what comes out.

We didn't have the IP last winter. Winter is where we think it will be most useful. What is in keto chilli - I will google it but we have had some total nightmares with any recipe having a keto prefix.

Thanks for that. We will need to adapt as Mrs P would find it way too spicy. I would be very happy - anything with tomato and onion is perfect for me. Therein lies another problem - I could/would eat that combo most days with plenty of garlic and meat but Mrs P does not like such dishes.
Edit: Seems to me that the sous vide is the perfect solution here - I can seal my tomato/onion garlic version separately. Problem seems to be I like strong flavours from those and they would have highish carbs which is why I have tended to avoid this type taste and I really miss that.

Hi all.

A bit off the rails last night and today. High cocoa chocolate addiction getting the better of me.

Breakfast - started the day hungry so had an impromptu breakfast of 30g almonds, a bag of pork crunch and a Coop pack of 4 Gouda and chorizo rollitos

Lunch - Lidl antipasto platter of salami and Parma ham. Followed by an entire 100g bar of Lindt 90%!

Not planning on dinner - off to Pilates shortly, which should distract me from thoughts of eating.

Wow @Goonergal. I can't really visualise the actual portions but I instinctively imagine that food list as a light snack. Granted, I am 2.5 stones heavier based on your signature but I am full of admiration for anyone able to thrive on that level of food. It certainly makes me reassess my bg targets. I salute you for thriving on that intake.

Thanks for that. I would definitely go for shoulder of lamb. Leg of lamb is really not for me I couldn't be convinced I would ever find it enjoyable. I do like shoulder though - same with pork

Better weather today, shame our fair was yesterday lol
B coffee with cream and a cheese omelette
L peppery leaves, tomato, gherkins, pickled egg and Stilton cheese followed by mini loaf size clafoutis
Frothy coffee and half a raspberry phd smart bar when I got hone from work
D curried turkey steak with home made cauliflower rice
Glass of red

Remaining cauliflower made into my favourite soup for lunch tomorrow
 
HI all hope good Mondays had by all. I’ve been beavering away again on recipes - still it keeps my mind off forthcoming cholesterol test on Wednesday am - the nhs one which no doubt will be followed by the statins persuasion discussion. I will be pleased when it’s done and hope this one at least corresponds to,or is lower than, my last lower private test a month ago! Mind you the last one on my nhs records from 3 months ago was 13.8 so hoping they will be impressed - it’s got to be lower than that! So will be early tea tomorrow and 12-14 hours water only fast again. I’m fine about the food but miss my late night black tea and wake up coffee!
Breakfast one slice of bacon and egg
Lunch five lc seeded crispbreads with pate and handful of nuts
Dinner trout in lemon butter and cauliflower cheese followed by one small clafoutis and cream
 
Breakfast - low carb toast and peanut butter. Tea.

Daytime was a bit of a disaster - went out pre holiday shopping and didn't think ahead so found myself surrounded (again) by coffee shop chains full of carbs. I'm not diabetic (only just prediabetic) but felt right out of sorts confronted with all kinds of things I've been trying to avoid because I don't want to DEVELOP type 2.

The least awful thing was a full fat yoghurt granola pot and a hazelnut milk cold brew latte. Must think ahead! Husband doesn't really understand what foods contain carbs (his nutrition knowledge is dreadful generally) and didn't understand why I didn't want crisps, pastries, cookies etc.

Anyway on the way home we stopped at services where ther was an M&S so I bought two packs of chicken pieces and a pack of chilli prawns and scoffed one of each.

Dinner - home made chilli with tiny portion of brown rice, Halo Top and SF jelly. Normal service will resume tomorrow.
 
Good evening all. As Simon and Garfunkel had it home is where I wanna be - sure beats sleeping on a Tesco inflatable bed! Today was about Mrs P taking her 88 YO mum to be assessed for a knee replacement. So over 3 years she will have had both hip replacements replaced and now her knee - proper bionic woman. Luckily, her car is being repaired so Mrs P took her and they found out MIL has a heart issue, OP will go ahead but using epidural. Tomorrow No1 son will collect her for a meal so she can see new Ms P. Quite proud of him for that with no prompting from us.

Mid morning snack: 2 pints of Tea
Lunch: Tea (just the 2 pints - no need to be excessive); avocado and mackerel salad with plenty of olive oil and chia seeds.
Afternoon snack: H/M high fibre chocky bar - these may need to go
Evening meal: Lamb breast (first test of cooking from frozen in IP); courgette, tomato, red wine, garlic, onion and broccoli sauce - test of effect of my favourite tastes on bg levels 3 years on

I tend now - learnt from experience- to take emergency snack pot with me when not sure. Things like nuts / high % choc or cheese etc. Usually things that won’t spoil if not eaten while out. You can also buy commercial low carb bars like Adonis that you can stick in your bag.
