What have you eaten today? (Low carb forum)

This just in! My erythritol came just now! I have to decide whether to trial those cream cheese brownies or the chocolate caramel bars to feed to my sisters in crime, er, law, next week on my night to cook. Choices, choices!!!

Breakfast of yogurt and berries. Then daughter took ill. She has asthma and was struggling to breath and running a temperature so we set off for A&E. Spent eight hours cooped up in a cubicle sitting on hard plastic chairs so no exercise. They were 2 vending machines. One was out of order so only drinks available. Sent husband on a mission to find food after a number of hours. He came back with the only option available- sandwiches! We were stuck with egg and cress sandwiches and baked potato crisps as if you leave the waiting area to go to the hospital restaurant for something healthier like a salad you lose your place in the queue. Husband is type 2 diabetic and daughter and I are trying to support him by eating a low carb diet with good results since Christmas but yesterday was just impossible. What do you do under circumstances like these?

Firstly, is your dd doing better? Secondly, welcome! I think you did the only thing possible under those circumstances!
I am thinking of packing a “go bag” for when my 91-yr-old mom with dementia winds up in the ER, as she did a few weeks ago. Mr ZF went home and brought me good foods, slippers, and a fuzzy sweater, as I was dressed for playing a concert! So my emergency food would include cheese and almonds for starters. Haven’t gotten any further.
I’m going to tag @BibaBee to come say hey. She is playing the same supportive role you and dd are.

Breakfast: Cheese and mushroom omelette, bacon, tomato. reheated spudlite.
Lunch: Cheese and vegemite sandwich.
Dinner: Tonight will be steak and veggies.

Hectic morning here, the low carb bread from Herman Brot turned up early. Same as the meat the from the butchers, he dropped it off before he went to lunch.

All packed away in portions into the freezer, and we are good to go for a month or so.

The cream cheese brownies, if goonergal’s (not tagging you, girl, it’s just not fair lol) send me to whatever website, but when I try, I get a Server Error 404....

@zauberflote the recipe is from the low carb program. Can you see the ingredients and method? CMT is down for maintenance now, so can’t check it properly. They’re good, so let me know if you need more details.

Oh I see that! It won’t be today, so they have good timing. I will check it later tonight and see if I think I will want details. I’ve got it on my own recipes from the last time you put it up here, so that’s one step in the right direction anyway!

Aw, thanks for tagging me. :) @Confused by differing advice I'm also supporting my recently diagnosed T2 husband and have lost nearly 4 stone by going LC. I don't stick to it 100% of the time, but everything at home is LC and I try to make sensible choices when I'm out.

We do sometimes find ourselves in situations where there are no good choices. I tend to have a stash of nuts and dark chocolate in my bag for these ocassions. We've also started doing a bit of intermittent fasting, so I might choose not to eat and just drink water and black coffee. Of course, this might not be right for your circumstances and this was a high stress situation for both of you. The odd hiccup like this isn't the end of the world. Quite rightly your daughter was your top priority, not seeking out the most sensible snacks. Sending hugs. x

Fairly certain that apart from possibly some cocoa ( mix of almond milk, soya milk and single cream) later I am done for the day apart from tea to fill holes. Plenty of tea up to 13.15 then chicken curry - chicken pieces, frozen garlic, small frozen shallots, h/m tumeric veggie stock, about 1/4 jar red curry paste 6.9 gms carb per 100 gms , broccoli rice and celeriac pellets thickened with coconut cream - all done in IP. After 1.5 bowls still hungry so cut some cheddar then ate a dinky bar of Sainsbury's Taste the difference 85% chocolate. All eaten within 40 mins max.
Generally a worthy day as at time of posting hope everyone had same of hopefully better but worthy is not too bad. Compressed eating window logistical not control related. Did learn that the farm which use for animal feed stuffs/ hardwear etc supplies Morrisons with pork (obs not all) and the one up the road supplies Morrisons and M and S with chickens. All animals roam around happily.

Can you get Swerve in the UK? Is it ridiculously expensive?
You can get it on Amazon and yes the price is ridiculously expensive. I dont get it that way though. As you know DIL is American so her Mum & Dad are very helpful at bringing things with them on visits. I'm very fond of Monk Fruit now though.

Day 4 (of 5 day fast)

On the menu today is.... nothing at all, just the usual calorie/carb free coffees and flavoured teas.

ALL your menus sound wonderful.

Just one more day to go. :p:p:p:p:p:p:p:p:p
I swerved giving you a hug for the menu envy/tribulation since you are going strong and obviously this is no accident.

Goodness @Chook what a stupendous fast. I didn’t know it was possible to fast for that long before joining the forum, I’m in awe of you - how are your bgs and weight responding?

Today I had 2 meals in a 7hr window.

First, 1/2 a flatiron steak (110gm) with 1/4 avocado, 2 poached eggs, asparagus and wilted spinach.

7hr later 4 Naked chipolatas with broc and cauli cheese, then sf jelly.
