What have you eaten today? (Low carb forum)

Bed 6.2 FBG 5.8 and I seem to have lost the DP rises. Got myself out early in the hope of getting back to go on with the clothing sift......the best laid plans and all that. First phase went well. Got to Morrisons and back in 1 hr for a general shop. Got hubby to get the shopping in as I was going to make a trip to Marks then everything went wrong. Son , DIL and boys wanted a lift to Jump In trampolines. No problem - it's en route to Marks. Traffic was a nightmare. Every single route! What normally takes 15 mins took 1 hr 10 mins. Got round Marks no problem, wanted to go to Lidl too but couldn't chance the traffic as I had to collect them from the trampolines again as son was playing another wedding and had to get back to travel with the band. 5 hours after I left home I eventually got back.
B. TAG with ADOC.
L. Nothing trying to get through traffic.
D. Lamb shank with lamb gravy & red wine, broad beans and celeriac mash. Bit of Montezuma black forest chocolate and a bit phd raspberry bar. Have to admit I was not feeling good before I ate. Dont know if it was no food or lack of water. I should have carried water with me but I didn't expect to be gone 5 hours.
Will need to watch for boys swimming tomorrow. Feeling fine now.
 
Lunch yesterday: Prawn and XXXX Gold beer lunch.
Dinner: Grilled Nile Perch and salad.
Breakfast: Usual mushroom and cheesey omelette, some nice fatty bacon in this 1 kg packet, tomato, reheated spudlite.

Drinks: Black coffee no sugar / sweeteners, water, beer.

I put the green banana prawns into boiling water, then cooked for four minutes after they came back to boil. Drained into a strainer then into a large pot with icy water in it, then poured a another jug of icy water in the pot to stop further cooking.
 
Evening all. Decided my weekends will involve basically feasting in an attempt to gain the weight I seem to be losing in the week with the swimming. So:
B: peanut & chocolate protein bar with coffee
Mid morning - 30g dey roasted peanuts
L: 4 rashers smoked bacon, 2 poached eggs and some cheese
Mid afternoon - my new recipe of the week and the best dessert I’ve eaten since being diabetic https://www.dietdoctor.com/recipes/low-carb-molten-chocolate-cake/servings/2 I used green & blacks orange & almond chocolate and served with a huge spoon of clotted cream and a large coffee and well, it was nothing short of pure indulgence!
D: 2 flat iron steaks, a grilled tomato and a mushroom sauce made with garlic, mushrooms and double cream

Might have to give that chocolate pud a go too. Ive seen it on DD site but wasn’t sure it’d work. Good to know.
 
Ah I thought it might, maybe some raspberry chia jam or stewed rhubarb?
In retrospect I think The almond one was quite thin and runny - would probably work best with overnight oats really. Not as rich and satisfying as Greek yog.
Might it work well as a base for chia pudding?
 
I tried this but really didn’t like it maybe it’s what you add to it but won’t be buying again will stick to fage Greek my fave

Ive realised what it reminds me of now - it’s the low fat Mullerlights I used to eat. Maybe not such a good thing. I love the fage Gk yog too but for some reason I usually get galloping gut rot about 1/2 hr after eating it.
 
A bit late to the party tonight....just getting stuff organised on our return home from Wales. I've eaten far too much today....but hey ho!

Breakfast: Chia pudding with LC Nutella. CWC.
Lunch: All day breakfast (minus toast, beans and hash brown) at local café before our journey home. Americanos with a splash of milk.
Afternoon: Americano with cream.
Dinner: Roast veg and haloumi. LC Jelly and cream. Cocoa with almond milk and cream. Decaf tea with a splash of milk.
 
Oh wowwww @SlimLizzy that bun/sandwich roll has ingredients I can get behind! Wondering do they actually turn out so light and raised. I will try them too. Don’t have PH so will try oat fiber. Mr ZF being carried to Patient First later this evening poor baby. And chocolate soufflé basically — oh yessss!
 
Glad you are ok after your hectic day again @maglil55 I’m coming to the conclusion, like you that flaxseed would probably improve most dry mixes. Coconut or almond flour does tend to give a more cakey texture doesn’t it?

@dunelm sounds like a wonderful break you got there! Tell about making kefir please?
@Listlad and @ianpspurs I guess almond butters differ, but none of the ones I see is salted. I found that unusual but good to my taste. I’m with Ian on salt taste. Eating in restaurants is a challenge.
@BibaBee @Listlad @SlimLizzy @DJC3 sorry to say, (and @dunelm ) that grilled cheese sandwich was made with traditional quick bread... I make an8x8 pan and keep most in the freezer. It has lots more flax in proportion to almond than the mug bread I’ve been working on. Probably more time-effective to invest the hour to make the big pan, for me anyway. But nobody said I was always successful in my pursuit of efficiency! I’ll try to figure out how to put in my own recipe on CMT. All I can think of is to capture a useless recipe, and edit it out of existence! :hilarious:
I am sitting in rehearsal here, waiting out my time. I play an “offstage flute”
part which comes as the very final notes of a wonderful American work which is in essence a Jewish Requiem Mass. so for the concert I’ll sit in the audience for an hour, then theoretically pick up my stone cold flute and walk out of the hall (a synagogue this time) playing in a gently manner while moving fast. Marching band was 50+ yrs ago, give me a break!
Bfast the rest of the pretty darn awful frozen avocado with hm salad dressing, and halfway through added the egg and mooshed them up. Much improved the flavor, and tomorrow it’s back to fresh avocado.
Lunch 16 oz chix broth from freezer with PINK salt! Never had it until last week and it’s got such a gentle flavor; I love it for broth. Maybe some seltzer.
Supper TBA. Spinach and celery and maybe some cherry tomatoes for starters. Need the crisp cold crunch of that celery!
Before I left this morning I put on an IP of chix broth for Mr MizzableZF. I am driving him to urgent care this afternoon because his cough went from benign to really nasty in about 8 hrs 4 days ago, and he is reallllly puny for the third day in a row. I swear, the internet has learned how to carry germs!

Hi @zauberflote, we started making kefir because it’s a great probiotic and buying it is dead expensive.
So. Get some kefir grains, add to milk and after about 24 hours you get kefir. Sieve the grains out of the kefir and use to make your next batch - pretty easy. Also the grains grow so you can make larger quantities of kefir and also give some grains to someone else. Have a read of this:

What would happen if you tried to make little confections out of flower petal paste with sweetener? Not that I would harvest, wash, and pound 9,000 violet leaves! Would it keep its color?

Have a google for crystalised violets. They used to be big in cake decorating.

I know that if you mix peanut butter with double cream it makes a lovely fudgey mixture. Can add a few dark choc chips or liquid Stevia if desired. Can't see why it wouldn't do the same if using almond butter instead...
