What have you eaten today? (Low carb forum)

Glad the crumble worked but personally I could never, ever, eat desiccated coconut. The idea of baking the topping first then breaking it is a keeper though. Oh, and hold the ginger for me.
I know you're not a fan of coconut in sweet things. G & R AMFEO IMHO ;). Twice baked crumble topping is definitely the way to go.
 
Lunch yesterday: Toasted cheese and onion sandwich,
Dinner: Rump steak, mushrooms and reheated cooked mashed spudlite.
Breakfast: Cheese and mushroom omelette, bacon, tomato.

Drinks: Black coffee, no sugar / sweeteners, water.

Gunna cook and mash up a big bag of spudlites to put in the freezer this morning.

breakfast: my new nutty granola home made, am hoping photo will appear here

lunch, just a cup of tea,
dinner: cottage pie with cabbage followed by LC crumble with cream, both from yesterday.
so far no wine, just water.
Had a lovely day out, visiting relatives in wales, beautiful countryside, spring flowers and a warm welcome, what could be nicer?

No surprise about the 3am florentines (apart from the fact you only had 5!)
 
Does anyone else on here make the DD rolls? I think @ziggy_w might. I have leftover egg whites from making my custard today, but I'm too tired to make rolls now. Does anyone know if the end result will be adversely affected if the egg whites are a day old?
 
I will pray for you but I can't make any promises. I have a long running special prayer for another grandson that is understood to be top of the list.:angelic:
Thanks I think but I might make amends for coconut but can you really not like ginger? Root in stirfrys, tea, stem, and my abso fave cats!!!

have made meringue successfully with day old egg whites, think it should be ok

Re egg whites, no it won’t matter. Ive made the DD rolls quite often and have often kept egg whites in the fridge for a day or 2.
 
Evening All!!

Just getting over a up and down BG day - lowest was 3.1 (just before dinner) highest was 10.6 (2 hours after breakfast)

Breakfast: Egg, bacon, mushrooms, chipolatas and two tinned tomatoes - weirdly my BGs went up 3.2 after eating this, no idea why

Lunch: (more low carb comfort eating) cheese, cheese and yet more cheese - and (strange for me) some chocolate

Thoughtful Mr C, he wanted to get me something to make me feel better and, knowing i hate cut flowers and rarely eat chocolates, decided to get me a selection of my favourite cheeses

Dinner: a jumbo size prawn cocktail - 200g prawns, bag of mixed salad leaves and an experimental cocktail sauce made from Hellmans / Greek yoghurt / sugar free tomato ketchup and Worcestershire sauce

Drinks: black decaff coffee and still water

Have a look at the Delia Smith recipe for florentines - they are really easy to make.

Going to have a go at this dipping sauce @Chook, but leaving the tomato sauce out, and replacing it with a Nando's Peri Peri marinade.
