What have you eaten today? (Low carb forum)

Got distracted yesterday as No 2 had another meltdown without a jelly bean in sight this time. He's with the deputy head today (or as No 1 said "he's in custody". Bed (eventually) 6.6 FBG 6.3 although as I said above , DP took me to 9.5. Currently 6.2 but no food yet. @zauberflote I do hope you and Mr Z are recovering and @Brunneria - is Mr B in isolation?? So, yesterday -
B. TAG with ADOC.
L. To keep hubby quiet ended up with 2 M&S 97% pork chipolatas, 3 rashers crispy streaky, 2 bits GF black pudding (which had to be used) and I ended up with yet another double yoker.
Having scrubbed out the bins I then started work on my veggie baskets and butchers block.
D. Really wasnt hungry but later (again to keep Hubby happy) I had the last of the Honduran prawns and anchovies (very little left) , 4 king prawns, spoonful of M&S whipped cheese and I had some of the chilli oiled anchovies from the fish hut and ended up eyes watering and breathing fire! Gee they were strong.
Couple of bits of Montezuma black forest.

@DCUKMod I slow cook the broth set for 8 hrs, and I can always switch to pressure cook if I change my mind. Around here things tend to happen when you least expect them (adult son has had perfect timing his entire life) so I can’t get too lengthily engrossed in the kitchen. I have to save the “Do Not Disturb” sign for work or marriage. Also, I have this mysterious creeping disorder that makes time go so much faster than it did 30 years ago when I only had one baby... :hilarious: and re that salmon, I had a piece of planked salmon last summer with a sweet balsamic glaze that was to die for. @dunelm
@maglil55 my heart really goes out to all of you stuck experiencing Brexit in slow motion! The suspense and frustration must be wreaking havoc with everyone’s peace of mind. Our Mueller investigation was/is nothing compared to that. But did you know, I heard a story on NPR a few weeks ago, that there were dying people who literally refused to die until the results of that were in!!! LOLOL
Another cloudy raw day here. Spring is happening but we’ve had our teaser weather for the week. We do get sunny and mid 70s come Sunday, but then back to this. Welcome to Piedmont Virginia spring.
Today is another “day off”, meaning, nothing on the calendar but a to-do list a mile long. I seem to be nearly fully recovered, and Mr ZF is working on it. I bought a thick Ahi tuna steak at Costco yesterday that has to be grilled tonight. Mouth is watering just thinking about it. Might marinate it in something balsamic dijon garlic-y. Fingers crossed there’s propane left in the tank!!

Sorry you're still feeling awful. Is it not time to consult the Doc?

Mind reader! I rang this morning and the next available appointment is in two weeks time.

I had a bit of a hissy fit about how long to the appointment and how poorly I've been and got put through to the triage nurse who kindly told me that this virus is going around and can take up to three weeks to finally disappear. Lovely. Also that, as a diabetic, I must eat regularly including plenty of carbs so I can take the Metformin. If I wasn't a diabetic they would be telling me to fast until the tummy part of it disappears. Basically the advice is keep warm, keep hydrated and wait it out.

I didn't like to say that I stopped the Metformin a couple of days ago when i got the dodgy tummy.

Afternoon all. May as well post now as after work consists of doctors appointments, coursework deadlines and then swimming so most I will manage tonight is chocolate with my coffee
B: peanut & sea salt bar with coffee
L: felt like I wanted something warm and comforting - compromised with a ready meal ‘slow cooked chicken crown with gravy’ - 9.6g carb for the whole box so I can live with that and the gravy was very nice! Had some ribs of fire with it too just to add to the meat overload.

It sounds silly but I've stopped watching the news because of the constant and unrelenting Brexit news reporting. On the odd occasions that Mr C has turned it on its been like Groundhog Day with the same things being said by the same people and all coming to the same conclusions.

Today's food

Breakfast: Nothing
Lunch: Nothing
Dinner: Not hungry... I did go for a rummage in the biggest freezer to try to find something that might persuade me that eating is a good idea and am now defrosting some chicken wings

Drinks: About 3 litres of water - no coffee

@Chook no I don’t blame you for turning the tv off! All they’re doing is going after advertising. Last time I *watched* news was 9/11. I read my news so can pick and choose.
Metformin requires carbs??? I sure hope the triage nurse is right about dx-ing you over the phone without even seeing you. There are times when I’m grateful for our broken healthcare system. At least we have urgent care doc-in-a-box facilities which most insurance plans cover fairly well.
@Emma_369 good luck with the coursework! And enjoy swimming :)

@Brunneria - is Mr B in isolation??

:) as good as. Lol.
When we first met I was tutoring in a university, which is an even worse plague pit than a primary school. Fresher’s Flu, anyone? *shudder*
So we learned to initiate Plague Protocols - with great success.
Basically, the sick person stays out of the kitchen (even the fridge and kettle), and doesn’t touch the healthy person’s cutlery or crockery. Bathroom hygeine is increased, including door handle and taps.

And generally, we don’t swap germs. Which is great.
The only thing that has sneaked through (and caused us both to catch the bug)in a looooong time, was the Flu this last xmas.

So far, I am clear of this one. Phew!

Doc-in-a-box?????

I'm not worried - I know it's just a bug and will go eventually. If I felt worse than I do I could go and see a doctor at my local hospital's Accident & Emergency GP Unit - but it would be at least a 4 hour wait (minimum) with a 90 minutes return trip on a bus. Something not to be undertaken lightly with a tummy bug.

I am determined to give this to Mr C. Muahahahaha. :shifty: He's the one who is carrying it and brought it home to me. He's generous like that!! Apparently his colleagues are all dropping like flies at work.

Ok, so dinner today saw my very first foray into tofu (sudden though - it is low carb isn't it? Have just assumed so. I'll look it up in a minute!!). Loved it, so if BG levels ok in the next hour, it will become a staple in my diet as it is very cheap! This is the recipe I sort of followed, omitting things not allowed and substituting things I didn't have: https://myfoodstory.com/crispy-sesame-tofu-zucchini-noodle-meal-prep-recipe/
B - snickerdoodle pancake (last of the batter used up today), strawberries, Greek yogurt
L - chicken salad with pesto mayo
D - tofu as above
Snack - lump of cheese

DJC3, do your bathroom scales give you any data in excess of the straightforward weight? I have found my Omrons invaluable for the additional information. Some of it can be influenced by dehydration, just as body weight can, but I found them good for just having an idea where my body fat percentages and visceral fat scores sit.

No my scales are just the bog standard type. I’ve been doing some training with weights at home and going to the gym a bit and I can definitely see a little muscle definition, but realistically it’s probably not enough to take care of all that chocolate!
I shall look up the Omrons scale though, thanks for the tip.

@Brunneria wow that’s a great system you’ve got there. Around here we are mostly walking dead, so I count on my neti pot to rinse out anything I may have picked up. Pretty good record with it. When the kids were young, there were times when all four of us were sick, so we have got some extra immunities built up from that time.
@Chook “doc in a box” is slang for these free standing urgent care places we have. ER is hideously expensive even with insurance, so some enterprising person came up with a place for when your PCP is closed for the day but you don’t have an emergency. Bear in mind our health care system is for-profit since... maybe the 1970’s. Usually, if one has health insurance, one saves the ER for heart events, strokes, psychiatric emergencies, suicide attempts, sudden wrong-time labor (where they get you upstairs immediately!) knife wounds and shooting victims. If one doesn’t have insurance, one indeed waits up to 8 hours to be seen for flu or the like. Then one gets in the system as a charity case. Search for patientfirst.com for an example of urgent care. There are also “ortho in a box” places dotted around for when your kid breaks their arm. Wish we’d had that for our kids!
Drinking my lunch now, highly salted broth. I’m thinking, this is not true fasting bc it has nutritive value. I only like it really when I’m respiratorily compromised anyway.

That stir fry recipe looks good. I’ve got almond butter which I’m sure will be fine in the peanut sauce. Good idea to whizz up a batch and leave it in the fridge for a salad dressing too as the recipe says.

@DCUKMod I’ve just been looking up Omron scales but they’re a bit more than my budget allows for, especially as I hardly ever weigh myself.
I might look again come Black Friday!

TWAM until after swimming lesson - 6.30 to 10.40 - then a soy milk latte with sugar free caramel. 1.20 lunch of very large salad with avocado, egg, tuna steak and mackerel fillets in EVO (leaving the bream:angelic:) . Evening meal at 17.20 was pot roast brisket, portobello mushrooms, celery and celeriac pellets; h/m LC trifle. More food than I think I need and dessert 3 days running is not going to become 4 - that'll do me for sometime.

That day when you have to check your medical travel insurance with your provider because you are going to visit the massively medically expensive and crazy world called the USA. All sorted - and declarations received from our insurers after more grilling than a POW at Colditz.

Lunch; half a 90 second mug bread, two slices of bacon and an egg all chucked into a single pan to sizzle and splutter.

Dinner; a roasted cauliflower “tree” on a bed of spinach, topped with a home made burger and drizzled with a hot sauce vierge.
