What have you eaten today? (Low carb forum)

Today’s foof as follows:
Breakfast: 1 slice HiLo toast topped with two fried eggs.
Lunch: cup of veg soup. Planned to go through to evening but felt empty and thought it might lead to munchies late afternoon.
Supper: out at 7pm will likely be steak and salad and a glass of wine.
 
Evening all. An almost OMAD day here. Almost, because tea with cream in John Lewis around lunchtime turned out to be rather a lot of cream - was due a free hot drink and cake. Spotting the large portions of clotted cream with the scones I picked one up and was allowed that instead of a cake. Have done that before but wasn’t sure it’d always work. Stocked up on little pots of cream too.

Dinner was more of the delicious lamb ribs done in the air fryer. Marinated in olive oil, garlic and thyme. They’re fast becoming my new favourite thing.

@Brunneria your muffin things look delicious. Thinking that tuna melts would also work in the fryer, searched for some silicone cases in Lakeland but to no avail.

Have discovered that there is a keto cafe near me (spotted on Twitter). Booked in for a sampling event next weekend :)

I just bought 24 silicone cups from Amazon. They cost £5.99 (I think) but because I was only buying the one thing, it wasn't post free so I had to add another £4.99. Still, £10 for 24 isn't bad. Made cupcakes with GDaughter yesterday and they worked very well.

Breakfast 2 boiled eggs and half slice toasted LC roll

Lunch. Yoghurt with berries
Nuts and some slices emmentaler
Tea. Water
Evening veggie stir fry (broccoli, red onion , chilli, mushrooms, 3 runner beans sliced, piece of red paprika sliced, then added the rest of the curry sauce. Water.

Goonergal, our Poundsaver shop has silicone cake cases. I noticed them when I was stocking up on alluminium take-away-styleeeeee dishes a few days ago.
 
Still need food at breakfast so lots of tea and small slices of corned beef and comte (last day tomorrow I hope). Lunch was pilchard (in tomato sauce) salad plus 10 cal jelly and double cream. Evening meal was egg and cheese salad. Had lots of water so more full than I thought so should have had the planned Fage and raspberries at lunch rather than jelly and cream. Also not sure what mad impulse makes me go for corned beef. Still, 2 salads and only boiling eggs is a winner for me. Stay dry and batten down the hatches folks,

Wish we could buy corned beef that way. I'm just experimenting with my first home corned beef. It's still in the brine and will be out on Wednesday ready for cooking. Not sure how it will turn out. Grey, I expect, since I didn't use any nitrite. Worth trying anyway.
I do not use anything but salt when I do dry salted brisket at home, it comes out reddish when cooked.

Thanks. I opted for 6 larger ones. As I had a £5 voucher due to Amazon messing up a previous delivery, ended up pretty cheap even with postage.

Bed 6.6 FBG was also 6.6. Finally finished the labelling. My fingers are sore even after using a thimble. I'm worn out again but it's down to not getting a good night's sleep. @Goonergal - the Scottish Water vans were out in force this morning. The drains just cannot cope with that amount of water. I've certainly never seen it so heavy. It's still raining but nowhere near as heavy. Son was playing a gig in Dalkeith last night. One minute they were sitting in sunshine waiting to go on - 30 mins later the car park was flooded. I took son to Tesco thus morning and the water has cleared again but it's been a long time since I've seen a river running down the high street.
B. TAG with ADOC. Waiting for shopping to arrive. Yesterday's weather put me off shopping.
L. Tried a slice of HiLo bread with ham. It's OK I suppose but I prefer skinny bread.
D. Remains of some prawns that had to be eaten. Rib eye and a portobello mushroom, green beans, celeriac dauphinoise (which us my best yet even if I do say so myself). Campari and soda.
Made more LC creme brulee today so will be having one with its crunchy inulin top and raspberries.

Today I've had
B/fast... Muller light cranberry with raspberry yogart.
Lunch... Mackerel and cod (fishpie) 4 teaspoons.
Dinner.... ½weetabix with milk.

Liver dumping remedy will be a cherry muller light yogart. With Toujeo300 it is a great 5 or 6 on rising.

Maglil, which Creme Brulee recipe do you use? There seems to be several around.

In keeping with the thread title, this evening we had a lovely piece of roast leg of pork. The crackling was stupendous.

I have a couple of litres of yoghurt brewing, which I'll strain in the morning to make it Greek style. I have more whey in the fridge than I can shake a stick at. Aside from using it as a starter for my yoghurts, and the odd batch of scones for MrB, I'm at a bit of a loss for uses.

Tomorrow, I will be making a new batch of clotted cream, which MrB declares wayyyy better than shop bought. I must admit it is jolly nice.

I bought some from Amazon recently too and they have been great for everything except jelly - I was hoping to be able to turn little jelly moulds out but it stuck to the sides.

Ooh I haven’t had celeriac dauphinois for ages. I love it, even more than I did potato dauphinois. Sadly I can’t get celeriac in our local greengrocer or Coop - they don’t even stock radishes or aubergines so I’ll have to make an effort to get to a bigger town supermarket.
I do hope the water situation improves near you soon.

Lunch: Balti chicken curry with cauliflower rice, followed by SF jelly, cream and LC chocolate granola.
Mid afternoon: salted caramel phd bar and black coffee.
Dinner out at a Beefeater for my birthday, 21 again :angelic:! Lamb steak with vegetable medley, pickled red onion and red wine sauce (only had a smidge as not sure of any carbs content) followed by strawberries (no unsweetened cream on the premises :wideyed:, despite my being reassured there was when I booked! :rolleyes:) but I had a Carb Killa chocolate brownie in my bag, so had that with the strawberries instead.

No the Carb Killa brownie is one of a commercial range of low carb bars made by a company called Grenade, they are aimed at sporty folks as they are high protein but they are also low carb :)
 
Lunch yesterday: Banana prawn sandwiches.
Dinner: Corned silverside, veggies, mustard sauce.
Breakfast: Usual omelette, bacon, tomatoes, reheated spudlite.

Drinks: Black coffee / tea, no sugar, water.

and as you'll see it's an IP recipe. 9 mins full pressure 15 mins natural release. Works every time. I blowtorch inulin on top which gives that real creme brulee 'crack'. I fed them to everyone when the in laws were here and they couldn't believe they were low carb.
