What have you eaten today? (Low carb forum)

Breakfast yesterday: Steak, eggs, mushrooms, tomato.
Lunch: Leftover cold fish and salad (my choice, dil reckons I am crazy man)
Dinner: Steak and mutton chops, snags done on the barbeque, fried onions, salad.

Drinks: Black coffee no sugar, beer, water.

The rest of the family arrives today from up north, gunna be a tight fit for sleeping space.
 
CWC first thing then braved town again for a couple of things Id forgotten.
Lunch was a couple of slices of the butcher’s home cooked ham topped with cream cheese, avocado and rocket.
Dinner was cod with a cream and mushroom sauce and broccoli. Very rich and filling.
Got the granddaughters staying over tonight as their mum and dad are out partying.
My arm is itching like mad, can’t be an egg allergy I don’t think now, so back to the drawing board for me. Pleased and cross in equal measure.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: cheesy scrambled eggs with Marmite on LivLife toast followed by Greek yoghurt, raspberries and macadamia and coconut keto granola.
Mid afternoon: coconut chia pudding and black coffee
Dinner: bbq chicken drumsticks, cauliflower and broccoli salad, pork scratchings and coleslaw followed by SF jelly, cream and LC chocolate granola.
 
Still absolutely miles behind but I'll catch up over the next few days. I've been flinching reading about @Annb fall & Neil's eye, @shelley262 horrible extraction and @Chook/@DJC3 lurgy and @DJC3 potential egg allergy. I hope by the time I get through enough 200 posts everyone has recovered. I got a bit better then regressed again and Hubby is still having cough issues. I've not been eating too much but I'll rattle through some.
Monday 9 December - bed 6.9 FBG 6.7
B. TAG with ADOC - No Aqua it was beyond even me today.
L. A couple of Dairylea cheese triangles
D. 2 pork loin chops with a spicy rub and a little cauliflower rice.
Tuesday 10 December - Bed 5.8 FBG 5.9 although I got a couple of high surges to 9.5 during the day.
B. TAG with ADOC
L. Nothing
D. 2 posh dogs with scrambled egg.

Lots of water!
 
Yum how do you cook the bacon wrapped halloumi fries? They look so good

I’ve been doing them in the air fryer - about 20 mins on 200c. Sure you could fry them - you can certainly fry bacon and Halloumi separately so no reason why not together. Trick is to get the bacon and outside of the Halloumi nice and crisp and keep the inside of the Halloumi soft.

That is perplexing and annoying for you. It would be great if it wasnt eggs but you do want to find out what the culprit is. Think about the hours before the itch to see if there is any clue. Allergies are so strange. My son’s GF discovered she is allergic to their (first). Christmas tree. While installing and decorating it both hands came up in red spots. As long as she doesn't actually touch it she’s fine. Really hope you can get to the bottom of it!
 
Wednesday 11 December - bed 6.4 FBG 6. @Brunneria - I remember the porridge but I'm blowed if I can remember where it came from. I've checked all my usual LC purchase sources and just cannot find it. I must admit Amazon was my first thought too. Avidlite do one with apple and cinnamon in boxes of 7 if that helps.
Anyway, still very much in the mire of trying to finish Christmas cards, decide on Christmas dinner, get presents etc and going merrily around in circles. Still doing morning and afternoon school run as well. At this point I was very up and down with the lurgy as well.
B. TAG with ADOC. Slice of LC toast with Dairylea and ham. Don't know why I've developed this longing for Dairylea triangles.
L. Nothing.
D. 3 lemon sole pan fried in butter, lemon and parsley with wilted spinach. DGF strawberry and cream blondie with a couple of sliced strawberries and cream.
Thursday 12 December - bed 5.6 FBG 5.2. Evening and fasting figures are good but I am still getting surges during the day. Felt a bit better today so I decided to go to Aqua and the humidity certainly helped.
B. TAG with ADOC.
L. After Aqua a LC toastie with cheese, ham and coleslaw.
D. Boys were here and wanted mince so later I too had mince with peas, carrot and a slice of LC bread for the gravy.
Got a few more presents ordered online too.

The porridge definitely came from Amazon, but the product and maybe even the seller has disappeared. :(

However, Mr B loves apples, so your Avidlite one may just do the trick - off to check it out now.

Edit: Drat. It is sweetened with Aspartame, which gives him headaches.
Looks like I am going to have to make it myself. Oh well, that is where laziness gets you...
 
Friday 13 December - 4.8 (I won't call it bed as I was awake most of the night too watching the results come in). FBG 5.2 after a couple of hours sleep. As expected, I was exhausted most of the day.
B. TAG with ADOC.
L. Slice LC toast with pate.
D. Oven cooked trout with spinach and a few veggie chips. Had a bit DGF Millionaire shortbread (found a box in the freezer!).
I took the boys swimming today so that woke me up a bit as I have to watch the little one like a hawk.
Saturday 14 December - I had a very, early night after last night's marathon session. Bed 4.8 FBG 4.9 (so the swimming helped too).
B. TAG with ADOC.
L. Ended up running about with son picking up various click and collect orders and fitting my shopping in around it. No time for proper food so a couple of Dairylea triangles. BGs were staying low as well so no surges.
D. Put together an oomi noodle carbonara followed by a bit DGF Millionaire shortbread.
Sunday 15 December - bed 4.8 FBG 4.6 last swimming lesson of 2019 and a fun day for the pupils who have unlimited splashing of the instructors. The reindeer races and the reindeer conga line was really funny. Basically they have to sit on Noodles and use their hands as pretend antlers - utter mayhem but fun.
B. TAG with ADOC.
L. A quick LC toastie with cheese and mortadella before heading off to swimming lesson as I knew I had son & DIL to drop and pick up from gym.
D. Usual campari and soda and a fishy day. Lobster tail simply pan fried with butter and parsley, fruit de mere in a scallop shell with scallops, red shrimp, piped cauliflower puree and a white wine sauce topped with parmesan. Served with spinach and broccoli. DGF chocolate fudge brownie warmed with raspberries and cream.

On the way back from swimming the boys decided some questions and stories from the bible was required. During the journey they concluded it was a bit mean of God to kick Adam and Eve out because they ate an apple because apples are good for you. On the nativity, No 2 answered his brother's question on who really was Jesus's Daddy? Obviously, said No 2 it was God because he sent that Holy Ghost person down to put something in Mary's tummy but they had to tell Joseph. You see Joseph was kind of Jesus's step Dad and he had to know about the ghost person because Jesus was going to be born in his house. The classic though was No 2's question- you see when Jesus resurrected that Lazarus guy, did he come back as a real human or a zombie? Reasonable question.

I think I’m just going to take antihistamines over Christmas and try to figure it out afterwards. I’m pleased to be back on eggs though - had a leftover bit of bacon and mushroom crustless quiche for breakfast.
 
Sorry been behind in posting so slowly trying to catch up with posts.

Being on prednisone and I've been trying to stay LCHF even when I am my BSL still spikes 4 to 5 hours after eating to 10 or 13 mmol/L. So I've rang my diabetic clinic again on Friday morning and was told someone will call back its now Monday night and no call. I try to control my hunger but its also been hard especially in the afternoon when my BSL is high im not sure why that is can high BSL make you more hungry? But I'm getting annoyed as no one rang back. So I'm thinking might increase my medication dose myself I've got about another 4 more weeks of tappering my dose of steroids but im concerned about my high BSL one night about 2 hours before bed it reached 20 mmol/L surprisingly my morning BSL are between 5 or 6 mmol/L.
I'm eating eggs scrambled sometimes a sausage with them. Today I slept in till 12.30pm i wasn't feeling so well my BSL was 6mmol/L I ate a banana and left over scramble eggs from 2 breakfasts ago. Dinner I made hamburgers with the works I was ravished I ate it on a low carb bun. Then had some cream with mangoes I figured fruit is probably better then eating chips chocolates etc but I'm still eating more than I need as im always hungry from the prednisone or BSL being high...

So How am I going well I'm doing ok still have my days. Only find out today that we are having Christmas at my mums place but I'm not sure who will be going. Normally at Christmas all my family goes to either my mums or my sister place who died recently. I'm from a large family there are over 35 of us I've actually lost count how many lol..but I'm not sure who is going to be going this year. I think its going to be a tough Christmas for all of us. And as I am writing this I've started crying sorry not looking for sympathy just needed to post this. But I'm ok so. It's just tears of emotions sadness and happinest mixed all together

So What have I been up to Since being home from hospital I've done little as possible I've mainly been recorporating resting cooking some meals and I've been binge watching a lot of Christmas movies for therapy haha as well. As dorky as some of these movies are they can help give you that warm hug feeling that you some times need.

Oh these are some of my flowers I have more photos but just selected a few photos of some I'm growing in my garden and a bunch of flowers a friend sent me. I hope you enjoy the photos of the flowers and cheer you all like they do me.

It's a tough time of year. I lost 6 family members last year including a brother and a sister and the first Christmas is always the worst. Like you there are a lot of us and we overcame the issue last year by going out 2 days before Christmas. We had a private dining room as we were so many which meant the little ones could play and we could chat and remember. It was also nice to have someone else do the cooking and cleaning. Christmas Day was just a quiet, peaceful day. Hugs xx you'll pull through it in your own way. Flowers are gorgeous by the way. I miss the colour in the garden here at this time of year. It's a bit sparse.
 
@Chook I envy you being so organised for the 25th. I will have a lot done by the end of Thursday. Our sons arriving home on Friday but I have an eye injection so supper will be a takeaway. I am hoping to get to the shops over the weekend to finish food shopping.
I will continue to test FBG each day and will be careful but will have a little stuffing and a roastie on my plate. I might have a dessertspoon of Christmas pud if I feel like it. I might have a little dark chocolate but will swerve the Quality Street because if I have one I have six! We actually have one meal at 5pm and during the day have various h/m canapes and fizz which is fairly lc if I dont overdo it. Enjoy your Christmas and hopefully no hypos or surges!
I'm with you on Quality Street. That and Roses at Christmas was a bit of a tradition. To counteract I'm making a chocolate fudge to serve with coffee and I'm going to make some of it minty too. I'll post the recipe later as I've been trawling through my recipes to adapt for Christmas Day and I'm working out the adapted versions. I've also adapted another Gino recipe from his latest book. It's a chocolate dessert, very fudge like and packed with nuts but I'm adding some dehydrated raspberries and cranberries to it as well (son did the dehydration for me). I'll hopefully post them later as I have to get out to pick up the last Christmas presents.
 
Hi I think you are trying your best with the challenges the meds cause you. Its not easy when the clinic didnt get back to you. Maybe you should try them again. I am sorry about your loss, around many gatherings there will be someone missing this year but they will be very much there in your heart. I am glad you are able to distract yourself with Christmas movies. The Grinch is our fave. The flowers in your garden are beautiful they must give you so much pleasure. Take care of yourself, it will take time.
I watched the Bishop's Wife yesterday (the original with David Niven). Loved that movie. Dudley the angel. I could do with the ever full drink bottle as well!
 
Went to bed quite late last night and slept in till 1pm my BSL was 5.9mmol/l.
brunch/Breakfast had fruit salad and black coffee 3 hours later I was feeling like something else to eat ..checked my BSL it was 8.8mmol/L then ate 3 large tiger prawns with a sprinkle of lime juice they were leftover from Thursday nights dinner and enjoyed them.

I really enjoy fruit and stone fruit are my favorite. I figured it's way better than eating chips etc especially at the moment but think should back of on the amount of fruit. By 6pm was wanting more food ... So Dinner had grilled quail with grilled broccolini and my homemade pesto sour cream/mayonnaise dressing. And still had the munchies so had a bowl of ice cream.

Its 12.30am and my BSL is 9.9 mmol/L... now.

Its been quite windy tonight. I do hope its not causing to much issues with the fires here in NSW.

Anyway should try and see if I can get some shut eye But I'm watching jamie Oliver do some cooking for Christmas ideas and it looks really good I think his making breakfast pork tacos I'm not much of a taco eater but these look so good.

One of my sisters who looks after mum due to her dimentia texted everyone to say they are having Christmas still at my mums place I think its important that we do and need to get together but I'm not sure if everyone is going though.

My sister will be cooking pork turkey and having a fresh leg of ham on the bone we don't cook the ham prefer it as is, tabbelah salad and her legendary icecream she makes for Christmas and fruit platter. She asked others to take a plate so I'm making a big bowl of mixed salad with a side of my garlicky lemon salad dressing, might also make some hummus and I always make my legendary white Christmas yep a very sweet slice but everyone loves them and I'm not going to fuss to much its a once a year treat that's made at Christmas time.

Oh ok don't have an airfryer but maybe I can do them in my electric oven it has a fan force option so might give it a go. Thanks
