What have you eaten today? (Low carb forum)

I think the AF will become important to us - combines attributes I like about the sous vide and IP e.g. consistent temperature with better finish than those. Interestingly, we tried our smallest tray in the AF but it was just too big so thanks.

What about something like this tray bake solution? It's never going to be heavy,as it's only collecting drippage, so it doesn't have to be a heavy pan. Even a round sandwich tin would do, unless your shelves are well loaded to the edges.

I don't want to bleat on, but it did increase the comfort, and confidence factor for managing the hot fat.

If you haven't already, I recommend you have a go with some decent lamb chops.

Forgot to actually post food...
B: small bit of the bacon and mushroom crustless quiche/ frittata / DD casserole. CWC earlier.
L: leftover chicken and veg soup. Still raised bg by 1.5 mmol. But still can’t figure out why. Shame, it was really nice.
Youngest daughter popped in this aft. We had coffee and a DGF strawberry& cream blondie.
D: Mixed ‘grill’ ( air fried) lamb chop, Merguez sausage, halloumi chips and wilted spinach. 2 glasses of red. I slice Emmental and a few pecans to finish the red.

@ianpspurs. Hadn’t thought of airfield duck breast but that is definitely on the to do list now.

Nice thought but I think from now on lamb = shoulder only. Have you done that in the AF? - OH now that's an idea. Rotisserie rolled shoulder.:)

Thursday 19 December - bed 6.3 FBG 5.8 so a return to less low readings. @ianpspurs - hope you've recovered from the bug. My Hubby can't seem to shake his version and refuses to go to doctor. Having said that, I am getting a niggle in my throat and sinuses again. Time for another spray of First Defence. I also agree with @Goonergal that it depends what it does to your BGs. DGF with me lowers my BGs and I think both @Goonergal & @shelley262 has the same experience. @Goonergal - love the reindeer. The halloumi fries are looking good too. @SlimLizzy - it looks like the building work is moving on at pace now.
I've been distracting myself finishing off Christmas planning. The last of the cards have been Moonpigged, 2 presents to go and I've pretty much worked out Christmas day food.
B. TAG with ADOC. Cancelled Aqua as the gardeners were coming this morning, I had bacon rolls to make for them and garden has had a good tidy up for the end of year. That flaming grey squirrel though keeps digging up my bulbs and eating them!
L. Had a couple of posh dogs with mustard.
D. One of the Iceland red shrimp with chilli and tomato and added, spinach, mushroom, tomato and oomi noodles. DGF Millionaire shortbread.
Today was No. 2's school party. Although school ends on Friday, I still have the boys for 2 or 3 hours on Sunday afternoon and a couple of hour on Monday morning as Mum has to work. Then I get a rest.
 
@maglil55 I’m so sorry to hear of your family’s loss, and such a blow when it looked like this year was turning out to be better than last. My OH is the same in that he prefers a bit of quiet and space to think at times of sadness or worry.
I loved the look of that salad wreath. I don’t think I take enough care with presentation of food. It makes such a difference. Please thank your hubby for being kind enough to pardon me the desiccant mistake! I’m just so glad you mentioned yeast - now I can have a turkey sandwich Christmas night. Wouldn’t be the same without.
Will do. Along with many other things I'll be making will be sugar free cranberry sauce so that on boxing day I can have a skinny bread turkey, stuffing and cranberry sandwich.
I agree I thought we were going to make it but when I spoke to his elder sister she said it was a blessing in a way as he had become so confused he couldn't understand where he was and kept asking for his wife. They tried to avoid the answer as it just upset him because he couldn't remember she had died 6 years ago. He was 97. It still affects you though as we well know after last year.
 
Friday 20 December bed 5.1 FBG 5.3. Last day at school. They finish at lunchtime and we have a quick change out off school clothes then off to the annual visit to Santa's Grotto. After 8 years of going to Dobbies we are having a change of scenery as we were 2 hours in a queue last year despite having booked slots. 2 hours in a queue with 2 children is not fun. Changed to Carbery and what a difference! Limited number per 1/2 hour slot, lovely waiting area with tea, coffee, soft drinks ( and elfs), areas to take photos and a lovely walk through the grounds to the Grotto so that No. 2 could bend Santa's ear about why there were so many pretend Santas going about. No. 2 gets his moneys worth with Santa questioning. He'd even be a match for Andrew Neil. Lunch afterwards so quite relaxing. No. 2 ended Term 2 with 63 good behaviour certificates so he's well on track for 100 by the end of the year.
B. TAG with ADOC.
L. After Santa - white wine spritzer (more soda than wine), mixed leaf and chicken salad with sesame coated walnuts (hence the addition to the salad wreath). Chicken breast wrapped in Parma ham, a lovely chicken sauce and extra veggies as I didn't have potato.
D. Nothing much - slice of LC toast with Philadelphia and a Sainsbury's delivery at 10 pm with non perishables.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
(No Lunch, went swimming late and didn’t feel like lunch when I got home)
Mid afternoon: white chocolate phd bar and black coffee.
Dinner at Hungry Horse: fry up of eggs, bacon, sausages, mushrooms, tomato and a hash brown (!) :wideyed: followed at home by SF jelly, cream and LC chocolate granola.
The hash brown was a mistake! I intended to have just a small bite but we were so deep in conversation I absent mindedly ate a whole one! Got away with not too bad a rise in BS, 4.6 before dinner and 5.4 after, phew!

Oh yes! Sf cranberry sauce on my list too. I made @Goonergal ‘s lc stuffing today using pork scratching in place of breadcrumbs. Saved a portion to try tomorrow with a chicken but looks and smells good.
Dementia is such a cruel disease. My middle daughter has just finished her nursing placement doing dementia care, we’ve all learned a great deal from her experiences. Hugs to you all.

I'm putting the boys to work tomorrow making ties for napkins and Christmas name place cards. Also picked up some of the perishables that were staying in date. Just a few more things to get on Monday night when I pick up the M&S order.
B. TAG with ADOC and a slice of LC toast with Philadelphia and mortadella.
L. Nothing but had a coffee when I got back from the seriously busy shops.
D. A simple cold cuts day, slice each roast pork, ox tongue, ham, mortadella. Coleslaw and veggie chips.

I have a busy few days coming up. Going to make LC Baileys and LC creme brulee. Also making a "deconstructed " black forest "mess". I'll make the chocolate sponge from the black forest gateaux recipe on CMT, mixed berries will be soaked in kirsch and I'll make mini meringues from the egg whites left over from the creme brulee. Assembly will be whipped alcoholic cream on the base, bits of the chocolate sponge and boozy berries, the little meringues and chocolate stars.
Starter as you know is the salad wreath with italian meats, olives and cheese. To amuse the boys I'm making meatballs to look like Christmas puddings. Really easy. Use these mini meatballs you buy in the supermarkets (Swedish or German). Fry gently for about 5 mins on a low heat then drain of the fat. Put some cranberry sauce (sugar free one) in the pan and glaze the meatballs for about 1 min. Remove and they can be stored in the fridge until assembly time. Topping is a mix of Fage and dill and dried cranberries and dill make the holly. Finished article below. I'll be posting a few more ideas as I've been busy food planning.

Cracking. I’m looking forward to the other ideas too. We’re having 2nd Christmas when middle daughter and her partner come back on New Year’s Day so I need some fresh ideas
 
I’ve been doing them in the air fryer - about 20 mins on 200c. Sure you could fry them - you can certainly fry bacon and Halloumi separately so no reason why not together. Trick is to get the bacon and outside of the Halloumi nice and crisp and keep the inside of the Halloumi soft.

I made bacon wrapped halloumi for my brunch today - first time ever. I did them in the AF but they were a bit tasteless/disappointing. I don't use smoked bacon, so maybe that's why they were lacking in flavour. I had some of my home made kind of chutney (no sugar or sweetener) with them and that was an improvement. Do you think the unsmoked bacon would be the issue? I had intended to do pigs in blankets but found the pack of halloumi and changed my plan.

This evening I used 3 of the pork sausages, cut into small chunks and sauteed with Brussels sprouts and onions. Not bad, but I keep going off the flavour of the sausages that I buy locally. These were from the Co-op's "Irresistable" range. Last time I tried them, after going off the ones from the only butcher I can get to, I thought they were pretty good. But today, not really. Maybe it's my taste buds! Still love the Brussels sprouts though.

I love Dairylea, triangles, slices or spread. I'm not sure what is in it and I'm wary but it's a love I share with Em and she usually eats it all before I get a chance, so that's all to the good.

Got to say I haven't looked but I just developed this sudden taste for them and they're so easy just to grab and eat.

Your grandson sounds great. So good that he has a questioning mind AND winning good behaviour certificates as well. A paragon! Em is pretty sharp too, but all I hear about her at school is that she is ahead in reading, maths and writing and very able BUT she will not maintain focus on what the class is doing and gets bored and wanders off into her own world when she should be working. Sounds very much like her uncle Neil, the difference being that she is charming about it and he was just truculent. She had a great surprise this evening. She was left with me while her Mum and Dad went to town to prepare a surprise present for her. When she went home and untied the big bow and opened a huge box (which had contain a fridge-freezer), out popped her beloved eldest brother, home for the holiday from his college on the mainland. She was so excited that she could hardly speak when she phoned to tell me.

I just checked online and the ingredients look innocuous enough (apart from inulin):

Dairylea Cheese Triangle:
skimmed milk (water, skimmed milk powder), cheese, milk fat, skimmed milk powder, stabilisers (citric acid, sodium carbonate), milk protein, whey powder (from milk), inulin, emulsifying salt (triphosphate).

But on Wikipedia it is described as "a cheese flavoured paste.." which is rather off-putting.
