What have you eaten today? (Low carb forum)

Evening all.

Sunny and nippy here too @Chook - headed out for a long walk just before 6am and ended up very glad that I talked myself out of shorts. Lovely and warm in the sun by the time I got back (5 hours later) and thoroughly enjoyed wandering around some deserted areas of central London.

Was aiming for OMAD but very, very hungry around 1.30 so ate a bag of salted almonds and a DGF chocolate brownie with cream.

Dinner was 5 large lamb ribs marinated in olive oil, lime juice, garlic and thyme and then air fried. Delicious. Dessert was another DGF brownie and cream. Last of that batch. One more box in the freezer, but that can stay there for a while.

@DJC3 have you been to Lidl yet?
 
@shelley262 & @DJC3 - How did the Zoom sessions go? I'm considering setting it up with the Australian family group so am curious. @DJC3 - BBQ sounds like fun it's been a glorious day here today. Fear not though. I'm sure you still have time to succumb to the air fryer.
Yesterday - bed 5.3 FBG 4.8.
B. Got tomato pork GF sausages from the butcher this week so slice black pudding and 1 sausage for me both air fried. Sausage done from frozen again (one for Hubby too). Had a fried egg with mine too and usual TAG.
L. Nothing didn't need it.
D. Had a wee prosecco with dinner. Made the kung po beef again. Had bought a bit too much fillet for Sunday so used thin slices for the kung po. Had mange tout, onion and peppers through it and I had it with Lidl's high protein noodles. 2 squares Lidles 95%.

I made the kung po earlier and reheated in the air fryer.
 
@SlimLizzy - as has been said already you'll need a schedule but it's surprising how the time flies when you are busy. You can always plan a special meal for his return. In my working days Hubby was frequently in the USA for weeks at a time and I travelled a lot for work but, when at home, I used to focus on all these jobs I never had time to do. You still miss them though.

As I said it's been a glorious day but I awoke this morning feeling off again. Bed 6.8 FBG 5.3. I feel like I did at the tail end of that bug, niggling throat (not agony but enough for paracetamol), runny nose, occasional not too bad cough but no fever. Hubby not happy but I'm trying to convince him I don't feel too bad. Had a hot shower and inhaling the steam helped. Decided that doing something might work it off. Stripped our bed and it's washed and outside to dry. Hubby assisted with remaking the bed. I also made LC creme brulee and, since that left me with egg whites, I also made LC Choc mint cookies.

It's on my CMT but the link is above. You won't be surprised to hear I changed it. I didn't fancy 2 cups of powdered erythritol in it so I did 1 cup and 1 cup almond flour. I also used 95% chocolate and the combo gave quite a strong cookie. Next time I think I'd add a little more mint. They needed about 5 mins longer but they crisp up when they cool.

After that I was sweating a bit so Hubby insisted I stop.

B. TAG and 2 Dairylea.
L. Couple of slices of mortadella wrapped around another 2 dairylea.
D. Rick Stein's beef stroganoff with celeriac chips which will be done in the air fryer rotating basket. The chips have been tossed in olive oil and paprika. There's no doubt I will have a LC creme brulee and my usual campari and soda.

Will be staying on the paracetamol. Hopefully this is just a little niggle.

I am currently roasting a 2 kg free range chicken from the fsrm shop collection on Friday which will keep us going in various guises for several days to come.
Breakfast today was slice of Nimble brown toast , butter, lots of tea.
Lunch was a very very thin slice of the doirdough bread from the farm shop loaded with very good soft Brie.

@maglil55 Zoom sessions are very good, better with a laptop than a smartphone if you have a few different groups I think. Having said that MrC and I came last in yesterday’s quiz. This is a first for Mr C who is very competitive and was horrified. He even got a Man.U question wrong ( maybe too much red wine before the quiz started had something to do with it)
Today a late breakfast/ brunch of Capresse omelette ( Mozzarella, cherry toms and basil)
Dinner was slow roast pork shoulder, my new favourite cut of meat - meltingly tender. Cauli cheese, buttered cabbage and roast celeriac. Another of the lc IP custards to follow, cold with grated 100% chocolate on top.
I intended to put a link in for these as they are so simple and delicious but can’t find the original recipe. I have a feeling it was Maglil55 who first drew my attention to it so it may possibly have been tweaked and ‘Maglil’d’ from the original ( I do hope you’re feeling ok now by the way, it really is dragging on isn’t it? )
 
@maglil55 so sorry to hear that your bug is still giving you kickback take care. Re zoom I loved my virtual zoom coffee morning. I put app on my I pad and it worked really well. I used my iPad cover to hang my iPad over my pc screen toget right camera angle! It was lovely to see my friends faces their smiles and reactions - so much better than phone calls or what’s app. So much so that I’ve suggested a zoom chat with youngest - would be great to see him. I’m also going to try and see if autistic son would give it a go - not sure he will but sure it would be good for him.
@SlimLizzy thinking of you during difficult times but the work your OH does will be so so valuable and appreciated

@PenguinMum loving how you are finding some other bread options and loving the sound of your local farm shop - think our local shops are definitely coming into their own during current times - costing us more in cash but lovely tastes and really appreciate their efforts.
@DJC3 great you are benefiting from being in Cornwall re the fish bumper harvest. Our local farm shop usually has fish but wholesale market in Birmingham has been closed now for quite a while
@Rachox impressed by your clementine adaptation I’ve managed some lemons from my delivery but a lot of them have really yuk skins so you need to zest a fair few lemons to get enough for lemon curd.
Breakfast one slice of bacon and one double yoked fried egg
Dinner roast chicken, sausage, Worcestershire asparagus, braised celery and roast celeriac with glass of dry white followed by oppo ice cream and cream ( had email today from oppo they are doing a direct delivery service so took up option of ordering some more!) warmer weather makes ice cream more attractive!
I managed to get a Sainsbury’s online delivery for mum tomorrow morning in York’s I’m thrilled as she was running low on provisions especially fresh stuff. She’s improving albeit slowly. Barnsley council offered her some emergency food as a vulnerable person but , like me, she’s not keen on carb stuff. We are both however grateful for offer of help.

Thought to contribute to this thread again with this very satisfying meal :)
Don't get fooled by the plate, it's actually a saucer and it has a very small lonely leftover meatball with onion and oyster mushroom on it.

The rest of my meal shows the good parts of living alone: If you like your peas (6 gr of carbs per 100 gram and I ate about 120 grams of them, I think) best straight from the pot, you can just eat them that way without funny looks or objections :)
You can also put mayonnaise and balsamic vinegar on your tomato/onion/cucumber salad without worrying about the nasty colour you'll get.

Hope your meals were all as satisfying as mine was!

For anyone remember my prattling on yesterday, this evening we had the Lechon that went into brine yesterday. It was quite, quite stunningly good and we have both eaten rather a lot of it! The crackling was also excellent, but one would expect that having had the benefit of a salty brine.

It would work well to brine the meat in batches, then vacc and freeze the "extras" for another time.

The only downside is the many hours of torture as the meat cooks and fills the house with gorgeous aromas.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Late morning: black coffee and birthday cake phd bar
Late Lunch: 2x Babybels followed by Greek yoghurt, orange chia pudding and macadamia and coconut keto granola.
Dinner: roast chicken, one tiny roast potato and mixed veg followed by SF jelly, cream and LC chocolate granola.
 
Stew update:
Had diced lamb shoulder (1.2kg), lamb hearts (x9) diced.
Lobbed them into the instant pot with some wine, onion and herbs. Forgot the garlic, but not missing it.
30 mins, natural depressure, then added 300g liver on top for 10 mins on the keep warm till cooked through.
Lifted out the liver, blended it til velvety smooth, and returned to pot to make a really rich gravy.
Will do this again.
Mr B is plotting having it with mash.

Lunch: Cheese and pickled onions, coupla Gold stubbies.
Dinner: Roast goat leg, veggies, gravy.

Drinks: Black coffee, beer, water.

We get our 2020 / 21 fluvax today when we go to our GP so get out podiatry HCP done for the next year.

Thursday Dinner night rib eye steak with baked charred broccoli and zucchini noodles cooked in butter and garlic
Friday Breakfast scrambled eggs and a slice of bacon and sour dough toast
Breakfast for dinner well yes .... homemade yogurt fresh strawberries and raspberries chia seeds and toasted coconut clusters with a touch of honey. Nomnom so good

Sunday breakfast left over egg frittata with tomato bacon and cheese
dinner Slow cooked beef ribs

Snack chocolate ice cream on cone

Monday home made banana muffins

Low BSL 4 and felt needed to have some thing so had some grapes and plum

Dinner rocket tomato parmesan cheese and pinenuts dressed with balsamic vinegar and EVOO

Oh and a sneaky pavlova find a small pavalova shell at Woolworths so added fresh cream strawberries and passionfruit. This was eaten through out the last week.

Edit to add Oh was wondering if anyone has any thoughts as its made me a bit anxious ive been seeing a new GP at the same clinic due to my old GP on long term sick leave. I seen her only 3 times so still trying to get use to her but at my last visit I saw her for a follow up on blood tests and to get flu injection she brought up my pain medication I take for chronic pain that was prescribed by a rhuemotolgist I'm on and said I don't know you well enough yet but you have been on them for long time I think you should lower dose gave me a prescription for lower dose for 2 weeks but I can suffer some days with chronic pain and they provide some relief. The thing is I can't take any other medication like antiinflamaories as I'm allergic to them. and suffer from chronic pain I am not sure how or what to do about this sorry for the Question its causing anxiety as I feel like she doesn't know my medical history and just brought it up without any reason ive never abused them and take only as prescribed. Any suggestions on how to approach this with her thanks

I've only ever filled this form once when it first started but I'm also on a disability pension so wonder if that's also why?

It was. I imagine the bigger the piece of meat, the better it'd be. I was a bit concerned about the rind not being scored, but too be honest, with the tight stringing, the rind just immediately underneath was easier to cut, so something to bear in mind when tying, To almost create portion sizes with the string? We just got a bit lucky on that

The leftover meat from ours has become pulled pork, and what was left of the crackling will disappear today, I'm sure of that.

Your meals look lovely, the strawberry one could be in a magazine!
Re your painkillers, could you contact the rheumatologist and ask for advice? Maybe if he/she thinks you should stay on the current dose they could email your GP?
