What have you eaten today? (Low carb forum)

Breakfast: at 10 am. A bit late but BG was pretty high still and I wasn't really hungry, so there seemed no point in eating. Decided that I had better, though and had 2 rashers streaky bacon (unsmoked) and 2 fried eggs.

Nearly 2 pm now and still not hungry but eventually I will have some of the veggie casserole and maybe the few bits of chicken salvaged from the carcass. (A litre of chicken stock in a pot and in the freezer.) Em will be in in about an hour so will probably not eat until after her Dad comes to pick her up after work.

I'm hoping to get that 3rd freezer that I have been after in the next week or so. I'll have to move furniture around to find home for it.

For the first part of the summer, I didn't use a quilt on my bed but have recently started using it again. And I've found that I can't remember how to get the cover on it. @maglil55, do you have the link still for the video that shows how it is done by rolling the quilt and the cover together?
There you go Remember I said that the rolling is easier if you do it from the side of the bed but 2 people is better!

 
Monday 23 Aug - bed 6.2 FBG 6. Back on the school run. We started increasing grandson's schooltime today. Just 15 mins but every little extra.
B. TAG and 2 slices of SLC toast with Philly.
L. Nothing home schooling is priority.
D. 2 GF sausages, duck egg and a slice of GF black pudding.

Tuesday 24 August bed 7 FBG 6.1

B. TAG and 2 slices of SLC toast and Philly
L. Nothing home schooling again.
D. Hubby got me a take out - chicken and lamb mixed kebab with peppers, mushrooms , salad , chilli and garlic mayo. Lovely not having to cook. Grenade ice cream bar.

Finally got my hair cut too! Badly needed it. Even Boris's hair looked better than mine

Wednesday 25 August bed 6.9 FBG 6.6

B. TAG - that was it. Gardeners arrived, chiropodist and nipping forward and back to school. Grandson now up to 12.00 - start of lunch.
L. Sandwich with ox tongue and coleslaw.
D. SLC hot dog with soft & crispy onions, tomato and mustard.

Did I say something about boys being good? Younger one has gone into cheek mode again. Very frustrating.

L: 2 slices full carb wholemeal bread with tuna mayo and a fruit scone with jam and clotted cream (part of my libre/carbs test). A rise of 5 that took 5 hours to come back to average, but did fit in another Hours walk after
Thought the effect would have been worse. Though I have had a headache and felt bloated ever since.
D: lamb steak with fresh green beans and peas, 1 large glass rose
 
I fry them first to seal the outside then put in the oven. I get the Mexican cheese in Morrisons but cayenne in it will work too. Just don't overdo it. Cayenne can be mouth burning hot

I made them a couple of days ago and they were very good, thank you for the inspiration. I really liked the crumb mix but I didn’t see your ‘fry them first’ tip in time, so they probably weren’t as crispy as yours ( I put them straight in the oven) but they were very popular. I made 2 each: 1 with smoked cheese rolled in cayenne ( I use it a lot - we all like food with a bit of a kick!) and the other with a Babybell given the same treatment.
 
Couple of hard boiled eggs on low carb toast, small tub of chobani greek yoghurt for breakfast.
Three homemade fish cakes and a bit of a salad for lunch.
Pork loin chop, and green veggies and gravy for dinner.
 
I’m back! Have to go back for further surgery, but temporarily fixed for now.
Food over the last few days in hospital has been dodgy but I was starved for two days anyway!

Breakfast: chopped up bacon in a 2 egg omelette.

Snack: more a nausea cure than a snack - some potato crisps.

2nd meal: I meant to have some more of the veggie casserole but when I opened the fridge there was a sweetcorn cob nestled in amongst the other vegetables. Didn't even want to resist so I grilled it and put lots of butter on it. I decided that the only way to do it justice was just to gnaw at it, uncomfortable gums or not, so that's what I did. Got myself covered in melted butter but it was wonderful.:happy: We'll see what it does to my BG.

Welcome back! I know you have a bit to go yet but take it easy and enjoy being home.
 
Made a very nice moussaka today!
In fact, I made two little ones instead of one big one. I love moussaka, but with the cheesy bechamel sauce on top it never tastes as good when reheated the next days, so I haven't made it in a long time.
Until I thought of simply making them in small casseroles as single portions :)
The other one is in the fridge, ready to put in the oven tomorrow.

I asked my resident food experts what they thought of my moussaka, and with 4 experts agreeing I think I can safely say I make a very yummy (albeit not very Greek) moussaka. :D

Thursday bed 6.3 FBG 6.6. The geese have started practising for migration. Every year they come over our house 3 times a day, squawking commands. It's interesting watching the young go from being all over the place to perfect formation when they eventually leave.

Took eldest grandson swimming after school. It was wonderful to get back in the pool again.
 
Back to my normal meal plan today :)
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and an Atkins bar.
Skipped lunch.
Mid afternoon: black coffee and chocolate chia pudding.
Dinner: LC bread with Brie and a smidge of redcurrant jelly followed by DGF choc. birthday cake, cream and LC chocolate and raspberry granola.

D: (simmering now) chicken thighs with Mediterranean veg in Pataks mild curry paste. Plus garlic, umami paste, coconut cream powder and a dash of Worcestershire. Oh, and Mr B got one of those packs of onion bhajis, and veg blobs. Av 5 g carbs ea. I wonder if I will be able to stop at 4...?
Hi is the crustless quiche a supermarket one? I wondered if I could tolerate a quiche L without a crust from Asda. Ooooo I do hope so. Xxxx

I don't know about Asda, but Sainsbury do crustless quiche, but at around 15gm carbs per 100 and around 20 ingredients, they are not on my menu!! I'll stick to home made omelettes.

I suspect it would have been a home made quiche. The trouble with supermarket quiche is you don't know what's lurking in the ingredients. Making it yourself is simple and easy to control.
