Lunch avocado on crispbread with cucumber and a solitary home grown radish. A Clementine, still trying to improve my vitamin C intake.
Dinner red cabbage casserole, Toulouse sausages home grown French beans from the freezer and a mini baked potato reheated . Cake( bad Lizzy)and severely
glasses of fizz.
Later back on the grated cheese. I don't need it, am not hungry yet keep on stuffing it into my mouth. This has got to stop.

This was the worst day with my suspected gall bladder issue but it eased a bit at night thankfully!

I must have missed the fact that you have a troublesome gall bladder on top of everything else. You really are having a hard time of it. Are you having any kind of treatment for that? Or is it just up to you to avoid the things that irritate it?

As usual I was up early this morning and I felt hungry around 5 am, so I took my first insulin dose (60u of Humalog) and had some toast. Very naughty, but the operation dropped my BG down by 3+ points (11.9 to 8.5). Haven't eaten anything else yet, but have had water and tea. Planning some bacon and egg around lunch time and something veggie for later - quite a lot of courgette to use up.

@maglil55, how do you do your hasselback aubergine? Do you remove the skin? (Hate aubergine skin.) I know you said you would put it on your Copy Me That page, but I can't get into it, so can't see your recipes.

Was that your spell checker having its way, or were you really being severe when you had your fizz? Is it extra fierce bubbles when you are severe?

Pt at gym, took black coffee & coconut oil with me,
Breakfast. Slice soughdough toast with butter, marmite, whole avocado, 2 poached eggs & handful blueberries
Lunch
Tofu Buddha bowl with 80g (cooked weight) of quinoa
After work 45 minutes Peleton endurance ride, blood sugar fell to 3.9 so had 1/2 wild trail sweet & salty bar (had to drive home)
Dinner 2 pork steaks, broccoli & cauliflower cheese, body coach banana, oat & blueberry muffin, handful of pecans & 2 cheese strings
Feel like I eat a lot more than others
5ft 4 and 48kg always weigh the same so must be eating the right amount of calories

D. Chinese dish of chestnut mushrooms and cashews with tray of fresh Mediterranean vege that was half price at the supermarket. 2 cherry liqueur chocolates.

Breakfast two boiled eggs and one and a half slices of LC bread
Lunch handful of walnuts with small amount of Stilton and vintage cheddar followed by a few raspberries and yoghurt 0% fage
Mid pm DGF brownie
Dinner pork ribs with salads and glass of soda water with dash of dry white wine followed by DGF brownie
I have been deliberately not buying nuts as get too tempted but bought a pack of walnuts to do youngest son’s coffee and walnut Birthday cake - made cake today as celebrating tomorrow hopefully, interestingly I’m not tempted by the cake because of the fact can eat the DGF ones and head off the high sugar temptation- but as for the nuts ......they may well appear next few days as the rest of the packet is in the tin!

You've now put something into my head that will not annoy my tender stomach - boiled egg mashed with butter. That's breakfast sorted when I get back from the eye check up tomorrow.

I always adored the cherry brandy chocolates. Mon Cherie (the chocolates).

I've had gall stones for ages. Basically, so long as they don't bother me they are leaving it alone. I'm not 100% it was the gall bladder but the symptoms certainly fitted. I thought it was a goner thus time but it is settling.
I'll put the Hassleback aubergine on later today but, No, it isn't peeled.

Managed to keep eating window to 18:6 today
1st meal was leftover bacon cheeseburger casserole from yesterday. Eaten cold straight out of the fridge and I preferred it that way surprisingly.
2nd meal: https://www.dietdoctor.com/recipes/keto-curry-chicken-coconut-lime which was lovely but I’ve never really got the hang of lemongrass, it stayed hard and crunchy. Good for fibre I suppose. Followed with DGF pumpkin pie spiced latte cake, with blueberries and cream. Only one of these left now and I’ve managed not to buy a bottle of rum to try @shelley262 ‘s suggested addition. Btw I agree about the moreishness of nuts - I try not to buy them either but don’t always succeed.

OK Hasselback Aubergine (Thanks to Tesco - minor amendment by me!). The carbs come from the passata (unless you can get one that's sugar free. I make my own (which is the change I made in the notes on my CMT.

Here's the notes

The 10g carb content is coming from the bought passata. Making your own will bring the carb count down. Basic sauce is just chopoed tomatoes and I cook them gently with a little veggie stock and a tablespoon of red wine vinegar. Once it looks like a sauce puree (when cooled) with a tablespoon of olive oil and about 1/2 cup of the liquid from cooking. Add tsp salt, a grind of black pepper, 1/2 tsp red pepper flakes and 1 tsp each of onion powder, garlic powder, oregano, parsley, dried basil whizz again. If it is bitter add about a tsp of Monk Fruit and taste again.


Steps

Preheat the oven to gas 4, 180°C, fan 160°C. Cut lengthways slits into the aubergines about 1cm apart, leaving the stalk attached and taking care not to cut right down to the bottom (as this will hold the tomatoes and mozzarella in place).

For the herb oil, blitz the garlic and most of the basil in a small food processor. Season, add the oil and whizz again to a smooth paste. Using a pastry brush, brush 1 tbsp of the herb oil all over and between the cuts in the aubergines. Reserve the remaining herb oil for later.

Pour the passata into a large roasting tin or ovenproof dish and season. Arrange the tomato slices in single rows in the aubergine pockets, nestle the aubergines into the passata, then bake for 40 mins.

Remove from the oven and increase the temperature to gas 6, 200°C, fan 180°C. Carefully push the mozzarella slices into the aubergine pockets next to the tomatoes, using a butter knife to help. Return to the oven and bake for a further 20 mins until the aubergine is tender.

Meanwhile, whisk together the mustard, vinegar and 2 tbsp oil. Season and toss with the leaves.

Drizzle the reserved herb oil over the aubergines, scatter with the remaining basil leaves and cut the aubergines in half lengthways, serving half per person with some sauce and salad on the side.

Tomorrow I'll need to get up at 6:30, which is very much the middle of the night if you usually get up between 9:30 and 11. So I figured I'd best save the leftovers of yesterday's yummy oven dish for tomorrow so I don't have to think about cooking, and improvise today. :)

Why is it they insist to do diabetic eye checks at 8:15 in the morning? I mean, diabetes is not great fun at the best of times, but adding things like this doesn't make it more fun in any way.
Very happy with a lovely neighbour (another one, not the one from the turkeys) who says she really doesn't mind driving me to hospital at 7:30!
All went according to plan :)
Didn't oversleep, neighbour brought me, got the full menu for the eye test. First the mysterious machine which shows a cute little house going in and out of focus, then the machine with the puffs of air blowing in your eyes, then the machine the specialist nurse uses to look at the outside of your eyes and the eye chart (scored 120 on that one so I must be seeing really well, no glasses needed, despite my shouting some random letters at the smallest line :happy:), then the dreaded eye drops and the eye doctor waving his light in my eyes to pronounce all is well.

Walked to my friend's house, had a coffee, and off we went to the swimming pool.
He brought me home after swimming and we had more coffee, both my friend and my neighbour who came by to return my dogs.
This morning I thought it would be more fun for them to join her than to stay home alone, so I took them with me.
Apparently the've had lots of adventures, visiting a ship and playing with the kids, very good decision to just inform my neighbour she was going to take my dogs with her today! :hilarious:

As expected, I was knackered after all this, so very happy with my leftovers reheated in the microwave!

B: a small piece of manchego cheese
Exercise class. First back in the hall for this class. They kept all the doors open and it was freezing, even though I worked up a sweat
L: a few bits while I cooked some egg muffins for a packed lunch tomorrow so I had a bit of ham, a couple of olives, an egg. 1 sq 85%.
Then dance class, also cold with the doors open.
Sore throat back with a vengeance but at least I've managed to get some sugar free strepsils.
D: belly pork , supposedly slow roasted but over cooked and nearly burned so quite crunchy. Celeriac mash. 1 sq 85%
Had a few grapes in the day just becuase I can't bear to see the snails eat them instead.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and Carb Killa bar.
Skipped lunch.
Mid afternoon: black coffee and coffee chia pudding.
Dinner: kedgeree made with cauli rice followed by SF raspberry jelly, cream and LC nutty granola.

Oh dear, another school week. My irritated stomach and painful back has improved a bit. Just as well as GP is constantly engaged. Nausea was still present though. @DJC3 - OMAD would be simple if you felt like me. Weather thankfully dry.

Too much water - was up at 4.15 to visit the loo!

Today - Tuesday Nausea has subsided but still not 100%. Pain has mostly gone but stomach still a bit tender. Bed 7 3 FBG 7 1.

B. TAG and I chanced 1 slice of SLC toast with egg mayo.
L. Lots of water.
D. Took a chance on queenie scallops which I did with spinach in a cheesy, fishy sauce. 3 of the M&S crackers. Few strawberries after.

Decided to chance a Garibaldi gin Hubby made me as No 2 had another hellish day. Thanks to the latest gin box. An Irish spiced gin (that is very un gin like) mixed with campari and their mixer of blood orange, raspberry and ginger with a garnish of orange slices and fresh raspberries. All in a nice gin glass with a straw! I am quite relaxed an no sign of an issue yet....

Two mexican sausages, two egg and cheese omelette, mushrooms and tomatoes for breakfast.
Tub of high protein yoghurt, glass of cordial and scoop of Osmolax mixed in for smoko.
Rib fillet steak and salad stuff, sugar free orange jelly with a spoonful of mango sorbet for lunch.
Cheese on low carb toast for supper at six.

I think the sausages are chorizo in disguise, they are better cold than hot.
