What have you eaten today? (Low carb forum)

IP is an Instant Pot. An electric pressure cooker, come slow cooker, come steamer.....wonderful thing. Many of us possess one. I had to force myself not to buy a second one. Mine lives permanently on the worktop in the kitchen it is used so often. There are lots of different models but they pop up on offer every so often View attachment 53500

Some of us have two, and I do know of folks who have more, but for me that would be just waaaaay OTT. :)
 
breakfast; low carb granola, a toasted slice of carbzone bread and butter
mocha
lunch; seeded flatbread cream cheese, serrano ham, salad, protein bar,
dinner; roasted chicken breast, creamy mushroom sauce, peas and roasted tomatoes. raspberries and strawberries (which seem to be a bit more palatable as the year progresses - less white in the middle) and cream. 90% lindt

'll be carrying on with the usual low carb whilst the husband eats white toast with butter (one of the few things I miss)! To be honest he does the low carb with me, even though he's not diabetic and I don't think he's looking forward to any of it!
 
I have an Instant Pot too, @RosemaryJackson - was persuaded by some on here that it would be a good idea and indeed it was, once I got used to it. Can be used as a slow cooker as well as a pressure cooker and lives on my counter next to the air fryer. The latter is used more often, but both are god sends.

Having said that, it was the old fashioned gas oven for today’s main event - slow cooked pork belly. Aside from that I’ve had clotted cream, raspberries and 25g of 85% chocolate.

Oh @Goonergal, I am drooling!

Bit of a change of plan for today. At the hospital, they insisted that I had to have lunch before they would let me go home after the iron infusion. So, reluctantly, I chose roast pork salad. Problem being, that I hadn't expected to eat and so hadn't taken any insulin with me Strangely though, I seem to have got something right today and BG was in the 5's so I thought it was allright to risk it. And it was; I didn't eat all of the things on the plate (turned out to be ham after all) and BG stayed in the 5's and even now is only 6.4. Just as well I didn't have any insulin.

So, that's probably it for food today and I'll keep the gammon and greens for another time.
 
Do try freezing some too. It works, although I prefer to use fresh. Not sure where my logic comes from on that, bearing in mind I use the cold start method with UHT milk. :facepalm:

It worked! Maybe a little thinner than with a yoghurt starter but I always strain as much whey off as poss anyway so it ended up thick and delicious like Greek yoghurt.
Now I just have to remember to save some for the next batch. I can’t see the Kefir being a big seller in this village so I’ll need to rely on my stock. IMG_1645472983.275908.jpg

1st meal around 2 pm DD Keto meatloaf. Grandchildren here today and they like that so helped me make it.
D- smoked haddock topped with poached eggs. A few raspberries and a spoonful of the new batch of yoghurt (@RosemaryJackson the yoghurt was made in the IP too, I’m another that was persuaded to buy one by the good folk on this thread and I love it)
@Goonergal - that pork looks divine!
 
Bad, virtually sleepless night with sciatica pain, eventually slept from 7 to 11 am
Easy(!) way of skipping breakfast.
Lunch was several little gem leaves each with a bit of coleslaw then either ham , salami or brie .bit of cucumber 1 cherry tomato. 2 sqs hm lc brownie
Dog walk.
6:30 Thai green chicken curry with added avocado. 2 glasses red. Yoghurt jelly. 1 sq brownie

Missed a day yesterday, took a five hour round trip to see my Mum who is still poorly in hospital down south :(
So today was:
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and an Atkins bar.
Skipped lunch.
Mid afternoon: coffee shop coconut cappuccino and a Carb Killa bar.
Dinner: two small beef burgers with cheese on a low carb roll and leafy salad followed by SF strawberry jelly and cream.
 
Three slices middle bacon, two egg and cheese omelette, mushrooms, tomatoes, two slices low carb toast and vegimite for a late breakfast.
No smoko, just lemon cordial and osmolax mix today.
Cold chicken legs and mixed salad, green jelly for a late lunch.
Steak sandwiches (not low carb as we run out it) for supper dinner at six.

There is supposed to be something lucky about today's date 22.02.2022, I hope so as you never know your luck.

Made sure the skin was very dry and firm - left it uncovered in the fridge overnight then took it out a good couple of hours before it went into a very low oven (gas 3, but my oven runs low, so more like 2). Wrapped the meat (but not the skin) in a foil ‘box’ to keep the moisture in, then rubbed a little chilli oil and plenty of salt onto the skin and cooked for 2.5 hours before turning the oven up to 9 for about 20 mins or so to crisp up the crackling. Pretty pleased with the outcome.
 
Morning all. Had ff Greek Yoghurt for bf. Lunch will be Turkey with green veg. Tea will be probably 2 boiled eggs with buttered Ryvitas. Have to be good after monday lunch! @Goonergal, that looked absolutely delicious. Made my mouth water!
 
Em came early. I cooked some bacon for her breakfast but she was so exhausted after last night's storm (her bedroom is in the roof space) that she fell asleep sitting at the table. So I put her into the big chair and used the bacon and had a sandwich with a single slice of Neil's magic wholemeal bread.

Later I will have a lamb leg steak (used to be called a gigot chop) with kale.

Em has been here all day and has only just gone home so I'm a bit down on fluids (too busy helping her find stuff on the internet for her school project), so I must make that up.

I recovered from the effects of the iron infusion, so all's well. Quite unpleasant though.

B: bacon, coffee with double cream
Lunch: yoghurt jelly and cream
Sunny (yay!) dog walk. Stopped at a cafe, had a mint tea and watched hubby eat a toasted teacake
D: an all in one roast of sausages, onion, carrot, broccoli and cauliflower. Final yoghurt jelly. 2 glasses red
 
Very quick meal of broad beans (tinned) with bacon and a flattened (to make it cook quicker) burger with mayonnaise in a couple of leaves of endive.

Next week I'll be going out for dinner with a friend for the first time in what, two and a half years?! It'll also be maybe the third or fourth time in a year I'll have something I didn't cook myself! (Christmas, and 2 or 3 days of Chinese take-away, that's it I think.)
Exciting in an odd way. :)

It will be an all you can eat tapas thing, so plenty of low carb choices.
But I'm sure I'll want to try some of the higher carb tapas as well, and that's fine, it being a once in two years thing!
As a compromise to diabetes I requested to book an early timeslot (5:30) to give me enough time to get things stable again before bed, so I'll call it a win when everything will be back to normal by midnight, anything out of range before that doesn't count! :D
