What have you eaten today? (Low carb forum)

Breakfast; paleo granola, slice low carb toast, butter
mocha
Lunch: seeded crispbread, cream cheese salad. protein bar
Dinner: Chicken Jalfrezi with low carb wraps, berries and cream, Lindt 90%

Not planning to restart breakfast but have started to add in a couple of spoons of my hm yoghurts to have with my supplements - vits D3 and K2 and magnesium about 10ish. As I now drink black coffee I’m seeing it as similar to when used to have a dash of cream in coffee !
Lunch two boiled eggs and one lc hm roll followed by more hm yoghurt with a few berries, handful of nuts and three squares of 90% chocolate
Dinner roast chicken meal with a few organic carrots (I’m re introducing carrots- as seem ok with my bgs and used to be my fave veg),and cauliflower cheese served with a glass of dry white wine - pudding one lc chocolate brownie warmed and served with - yep you’ve guessed it - a spoon of each of my hm yoghurts.
 
Yesterdays marathon was 25,000 steps
B: yoghurt seeds and coffee stewed overnight
Early walk exploring Bath before the crowds arrived. Very cold so finished with a dark hot chocolate. Was assured it was just 72% chocolate and cream ,but it spiked my bg to 10.5
L: cold chicken
Supermarket shop.
50g taster of icecream spike to 10!
Dog walk
D: 2 beef burgers 97% meat with stir fried cabbage and leeks. 50g ice cream. 1 glass red.
Just 15,000 steps today.
Mildly interesting that I seem to tolerate some carbs as part of a meal, but not on their own. I sort if knew this but by Libre made it perfectly clear today. This libre finishes tomorrow. I'm still hoping it will fail before as that would make it 3 replacements in a row, ie buy 1 get 3 free :)
 
An artichoke with two dips, one of mayonnaise and mustard, one a quick vinaigrette of olive oil, balsamic vinegar, salt, pepper and a little mayo to bind.
And a lukewarm (by way of microwave) salad of chinese cabbage, tuna, grated cheese, onion, and things like mayonnaise, last bit of cottage cheese, bit of cream cheese, salt, pepper, not sure what else I added. Tasty!

B: yoghurt seeds and coffee stewed overnight
Had to read that twice before getting the components right in my head.
At least I hope you didn't let the coffee stew overnight with the "yoghurt seeds"! :hilarious:
 
Steamed my salmon and chard parcels but didn't get around to eating them. Had to have a phone call to my brother and then a Zoom meeting which should have been one hour but ended up as 2 hours. Too late now. Fishy breakfast maybe.
 
Bacon, two egg and cheese omelette, mushrooms, tomatoes for breakfast.
No smoko, except for my cordial brew.
Two chicken legs, mixed salad with some kimchi mixed in, green jelly (green jelly has to be breeding in the fridge) for lunch.
JO fish cakes, leftover salad, small portion of lemon / lime sorbet with four lychees on it, (I still have not found the lychee stash) for supper at six.

Four or five pepper crackers with tasty cheddar cheese on them, watching a old Australian tv show on Prime Video.

Yes I mix full fat greek yoghurt with milled chia seeds, and in this case some made up coffee, and leave it overnight to thicken.

Hi everyone. Looks like I'm Billy-No-Mates today!! Well, it's pensioners lunch today so we had Minestrone soup, Lasagne with salad. and as it's Pancake Day, a pancake with a clementine to squeeze. My bg was 8.3 before and 7.8 2 hours later (after a sleep). I don't understand that.

It is quiet, but the forum does that from time to time. Just by coincidence, everyone has things to do at the same time. Shrove Tuesday has come as a surprise to me this year. I wasn't thinking about it at all until a friend mentioned it yesterday. Not sure what is happening to time these days; dates keep taking me by surprise!

I hope you enjoyed your meal and your pancake. Your BG seems surprising, with fairly carb heavy minestrone, carb heavy lasagne AND a pancake, but it doesn't seem to have done any harm, so that's all to the good.

You'd probably find on another day that it would put your BG up. There don't seem to be any hard and fast rules about how carbs affect either different people or even the same people at different times. I'm having a day like that today - BG staying pretty low despite having foods which, on other days would have put it up.

So far today: breakfast of streaky bacon, fried eggs and wholemeal toast (that should have put BG up, but didn't); at the hospital tea and white toast, by now, on another day BG would be in the 11's or 12's on that. Currently around 7.

Last evening I cooked, but didn't feel like eating, some little parcels of salmon wrapped in Parma ham and in a chard parcel with a slice of lemon. I'll be having a couple of those for my 2nd meal.

Keep up the good work - you've been doing so well recently.

Brunch: homemade bone broth with pheasant gravy from Saturday night's roast pheasant, mushrooms, garlic, peppers, courgette, vegetable stock cube, turmeric, cayenne, olive oil aaaand (drumroll) half a packet of mixed salad leaves stirred in at the last moment. A piece of cheese (double Gloucester) about an hour ago. Dinner will be pork chop with a kidney (lush) purple broccoli, cauliflower and brussels sprouts.
 
I’m currently preparing a range of very diverse salads at beginning of the week and then popping them into the fridge in kilner glass jars so that can have small amounts of them so not putting carbs up wildly but keeping diversity of vegetables for my gut. My red cabbage and beetroot ferment is also ready and in the fridge (4 jars should last a while!)
Made the following 2 salads:
pepper and artichoke - Roasted 6 peppers in oven whole for 20 mins until charred and left to cool then peeled skin off and took out seeds and stalk. I then thinly sliced and added the following- some sliced artichoke hearts (from a tin), some cloves of garlic, juice of one lemon, handful of basil leaves torn, garlic granules,a sprinkle of dried herbs, small dash of balsamic vinegar and then enough extra virgin olive oil to cover and keep veg submerged. You can be generous with olive oil as can be used up as a salad dressing when veg eaten up.
Bean salad - strained a tin of mixed beans (preserved in brine) added following veg - some strips of fennel from a fennel bulb, some ginger root peeled and chopped - just a few cms - some spring onions, thinly sliced celery, sprinkle of sesame seeds lots of chopped parsley, and a dressing made of miso, lime, dash of apple cider vinegar and lots of olive oil. The beans tend to soak it up.

First thing a spoonful of each of my hm yoghurts with black coffee and my supplements
Lunch roast chicken left overs with my hm sauerkraut and hm lc roll followed by hm yoghurts with a few berries and handful of nuts and two squares of 90% chocolate
Dinner frittata with a spoonful of each of my salads followed by sf yoghurt jelly cream.
 
No breakfast
Dog walk that was planned to end in town for a cafe lunch, but the cafe was closed so home for cheese on lc soda bread toast. Small scoop ice cream (eating up fridge as we return home Wednesday)
D: Pub. Whitebait and mussels shared, then baked aubergine with Mediterranean veg stew. Home for more coffee ice cream and red wine.
 
Forgot to mention. My libre ended on time without failing. I do miss it, really helps me stay on track when temptation is about. Might treat myself to another for next trip mid April

Was that real whitebait? I thought that catching them was no longer allowed so larger fish were being used, cut into strips and cooked in the same way as the whitebait. I've been trying to get hold of them for ages, without success.

Thanks @Annb, I didn't understand it but I'll be more careful in future. I took my bg because I wanted to see how the meal affected me and must admit I was really surprised. I thought it would be sky high.
 
Bacon, two egg and cheese omelette, mushrooms. two slices low carb toast and vegimite.
Chicken pie without the lid, lemon / lime cordial with a scoop of osmolax mix.
Grilled coral trout fillets, mixed salad of lettuce, sliced red onion,sliced green and red capsicum, tomatoes, raw mushroom, fresh cold sliced beetroot and a bit of some chopped up spicy green plant / weed that grows wild in places for lunch.
Leftover fis and salad in low carb wraps for supper at six.
