What have you eaten today? (Low carb forum)

First thing a few spoons of my hm yoghurt with my daily supplements of magnesium, D3 and K2.
Lunch one lc seeded flat bread with hm pate and spoon of my hm sauerkraut followed by a few berries and hm yoghurt with a handful of nuts and two squares of 100% choc with orange oil
Dinner see photo ~loin of lamb with range of my hm salads plus a new salad added today,which is a mix of grated turmeric root,fennel,carrot, small apple and a raw beetroot mixed with a local farm shop live apple cider vinegar from a local orchard and olive oil it was delicious. I’m loving my new gut microbiome friendly diet and my bgs are staying stable. Also had a glass of red wine and followed meal with a hm sf yoghurt jelly cream with some more of latest hm live yoghurt ( this one was literally bubbling after its 36 hours ferment when took out of yoghurt maker this morning so know it’s definitely a live culture and it’s set as a thick bubbly yoghurt!)
 
Evening all.

A bit better food wise today.

Did polish off the rest of the Montezuma’s goodies this morning, but then proper meal number 1 was four Waitrose free range Cumberland sausages, air fried and eaten as I worked.

Meal 2 was bone in sirloin with a side of bacon. That was followed up by some 0% Fage and a few raspberries.

Bed 7 4 FBG 7.1 - BGs are stabilising again after my bug. Feed the boys day. I made 2 curries. A madras for Hubby and a milder one for myself and the boys. Best laid plans....

B. TAG and eventually bacon, 2 eggs and santini tomatoes.

L. Plenty water still

D. It should have been chicken curry. I had loads of veg in it - baby corn, mange tout, green beans, broccoli, tomato.....the boys liked it so much they had seconds!! I'd tasted Hubby's and I wasn't having that. Don't get me wrong, it was nice tasted but when it hit the back of the throat!!

So, a rethink was needed and I had the pancakes I intended to make last night but didn't.

Tablespoon of Almond flour
2 tblsp ricotta
2 egg yolks
Sweetener if you wish.

Put all together and whisk until smooth.

Separate bowl

2 egg whites and 1/4 tsp of bicarb. Whisk to stiff peaks.

Carefully combine the yolk mix with the whites and spoon into a non stick pan to fry. I used avocado oil. You put a glass lid on to cook.

I had a little LC maple syrup on top

They're a bit more brown than usual but I wasn't as diligent with the pan. They tasted great though.

No smoko, had a visitor from the palliative care dept from the base hospital with a ship load of paperwork to fill in.
Savoury liver and bacon, veggies, pineapple jelly for lunch.
Toasted ham and cheese sandwiches for supper at six.

Right out of low carb bread, my suppliers delivery truck is stuck in Gympie, and because of the flooding he cant go north or south. Helga's wholemeal bread tastes ok even if the carb content is high, I got a 4.9 fasting bgl this morning so go figure that one out.

I just had to give @Goonergal a hug for her rib steak today. :joyful:

B: chocolate yoghurt and chia seeds ( made the day before so really thick)
L: pack of cheesies, frittata, cheese, cucumber. 3 sqs 85% choc
Mid afternoon while stuck in a traffic jam, some 70% artisan chocolate with big pieces of orange.was lovely. Probably too carby
 
Sunday Bed 8 2 FBG 8 3 - Not as it seems! I've been out of action with a nasty bug. Slight nausea but let's say I didn't venture too far from a toilet. Warm but shivering so it was plenty water, into PJ'S and cover up. Fortunately I'd prepared most of today's dinner.

B. TAG and paleo granola with coconut milk.

L. Nothing

D. I'd made chicken sesame toast with SLC bread. Had a piece of that with a mini veggie spring roll. Duck with spring onion and cucumber, one pancake and no sauce. Lots of water and an early night!

Monday bed 12.4 FBG 7.4 - Not the food. Thanks to the bug. I was worse today. I was surprised to be down to 7.4 by morning.

B. Water and more paleo granola with coconut milk.

L. Water, water.

D. Coconut milk and leftover bits from yesterday's dinner. Didn't stop BGs hitting 14.7 at one point.

Lots if water. Oddly I've slept well though. The PJ'S helped my legs.

@shelley262, reading your post you said 100% chocolate with orange oil. Do you buy it like that or diy? That must be very few carbs? Also the jelly cream, is it 300g of yoghurt to a half pint of cooled sf jelly plus squeeze of lemon? I forgot to write the recipe down.
 
Breakfast: eggy bread, using 1 slice of wholemeal bread.
2nd meal will be a sausage casserole with a couple of pork sausages and lots of veggies.

Neil went shopping this morning but, once again, the shelves were pretty empty. No idea why this time. He did manage to get some haddock in the supermarket though, and some sirloin steak, so I should be OK for a while with the veggies I still have in the fridge.
 
I'll be eating out tonight for the first time in some two and a half years!
It's an all you can eat tapas thing, so lots of opportunity for low carb choices. But I expect I'll have some of the higher carb stuff as well, we'll see. :)

HIya the bar is from the Montezumas 100% choc range they also do with almond and think peppermint it’s a very good chocolate packs a punch so one or two squares usually do it for me plus only 7g of carbs for 100g and 2g of carbs for a 25g portion which would be more than I personally could eat in one go. I could eat way more of the 90% and below versions! It’s also better for you as it’s pure cocoa solids with just the oil or almonds added dep on variety see

Oh no shouldn’t have looked at that page looks like there is a new peanut butter version it’s a bit more carbs at 8g per 100g but probably a good introduction to 100% Montezumas because of sweetness of peanut butter. Mind you I’m certain that some people on this thread have talked about ‘making their own’ by opening a jar of nut butter and dipping their bits of 100% chocolate into the jar?

Re jelly yup that’s right re amounts of liquids but beat it all up together to make it thick I also try and add some lemon or lime grated zest into jelly with the juice gives it more of a tang.

Edit @Antje77 enjoy your meal out bet it will feel odd but hope you have a fun night celebrating we all need to build fun times in when we can especially in these current upsetting and difficult times.

My goal is to get everything stable again, diabetes wise, before midnight, and not worry about any rollercoasting BG's before that. I didn't have much practice dosing for higher carb foods in the past years, so it's OK to not get it right. (I'm trying to say this to myself so often that I'll start to believe it.)
And my friend offered to pick up and bring me back home, so I won't have to worry about hypos when driving, very happy with that! :)
 
Breakfast; paleo granola, low carb toast and butter
mocha
Lunch; seeded crackers with cream cheese and salad, protein bar
salted popcorn
Dinner: sausage , poached eggs and tinned tomatoes, blackberries, strawberries and cream. 90% lindt

and some pistachios later I think whilst watching the Apprentice.....

The wet cold weather inspired me to put a game casserole in slow cooker this morning to cheer us up with enticing smells as day went by!
While it was cooking:
First thing a few spoons of my hm yoghurts with my supplements
lunch was smoked salmon and salads with lc seeded flatbread ( see photo) followed by a few spoons of my hm yoghurts and a few berries and three squares of 100% chocolate with orange oil
Dinner hm game casserole served with cauliflower mash and asparagus plus a glass of red wine then pudding of lc blondie warmed and served with more hm yoghurt .
 
Bed 7 7 FBG 6.8. It went merrily upwards to 8 4 mainly thanks to no food. I did not have a good night at all. Arms and legs aching, nausea, and back pain at shoulder blades. I suspect the infection is lingering on.

L. Just loads of water.
D. Feeling of nausea increasing so I decided I'd better eat something.Easy option of a DD sausage tray bake. Loads of veggies, seasoned, drizzle of oil and grated mozzarella mixed through. GF sausages. I also had a slice of SLC bread and butter that arrived today.

Did you know SLC are making truffles now? I'll report later as I don't think my tum will take it today.

Currently on cold coconut milk which seems to settle things. Hopefully, I won't wake up at 5 am again!20220303_184940.jpg
