What have you eaten today? (Low carb forum)

Cheese and onion toasted sandwiches for breakfast.
Mexican sausages, mre mashed potato, gravy for lunch.
Leftover pickled pork, and salad sandwiches for supper at six.

Single malt whisky before going to bed, I had a nother good night my right anckle did not give me problems to wake me up.

The Blue Care ckinical nurse was happy to get the box of dressings, she said that it help a few of the clients that having finanial problems here in the Wide Bay/ Bundaberg area.
 
I think your best bet would be the Seriously strong one. I've just looked it up and the ingredients are very close to the Dutch one, except they must use a lot more thickener (and likely water) because the carb count for the seriously is 5.6 grams per 100 and the Dutch one only 1.7.
Still, used in a sauce or soup, this still means a very low carb meal, and I bet it would taste great on a cracker with slices of cucumber as well.
I’d never heard of it. Seems there’s also a ‘Vintage’ version @Annb which has fewer carbs - 3g/100g.
 
hone ahead, explain. I often ask them to get some local cheeses in. Or have 2 starters, are they any better?


I often have two starters instead of starter and main course. It really helps.

Yesterday brunch was decadent! Fish pie mix with Italian salad greens stirred in at the last moment. Dinner was cold beef salad.
 
Thanks so much @Annb @MrsA2 and @Outlier for your comments re food choices when I am on Exmoor. I emailed the pub yesterday and asked if they could provide a piece of unadorned protein either chicken lamb or fish with green veg one night of my stay as I was diabetic and the menu was carb heavy and I would have steak & salad from menu second might. They emailed back saying I could deconstruct anything on the menu and not to worry, honestly (!) as they were very knowledgeable about Diabetes as receptionist’s daughter was T1 and former chef had Diabetes until he was cured by a transplant. That made me mad as a box of frogs that they thought all diabetics have equal requirements and they knew better than me what suited me. Its the same round here which is rural and why we never eat out, I am fed up of steak and salad being my only option. I will try the two starter route while away. Its very awkward to bring the tone down when sharing with three other couples on our annual jaunt so I will grimace and bear it!
Brekkie today slice LC toast, lots of tea.
Lunch will be an avocado with a few prawns, maybe followed by a small ramekin of berries. Supper will be Indian t/a (only food option for miles for me) Tandoori King Prawns and cauli bhajee.
 
Sardines on toast for breakfast today.
Then a couple of crackers with butter, ham and cheese for the 2nd meal.

Em came up to see me again and wanted to bake some cupcakes. She decided on chocolate ones and made 12 small ones for her toddler niece, who loves to get cake, although I think 12 even tiny ones might be a bit much for her. She made another 12 to share with everyone else in the house.

Currently sitting with a glass of iced coffee and waiting to join a Zoom meeting. Not hungry but quite thirsty - hence the iced coffee.
 
Very bad nights sleep, saw 3:30 come round for some unknown reason. Seemed to be hungry as well.tried to ignore it
8:00 small hm lc yoghurt with chia seeds and raspberries
9:00 yoga
Weekly food shop, not a good idea while tired and hungry. And my loyalty coupon gave me 200g free milk chocolate!!!
4sqs chocolate while driving home. Would have done the whole lot if I hadn't had the sense to put it in the boot
L: mussels, a hard boiled egg
Mid afternoon 3 sqs chocolate brownie with guests. Definitely no self control today.

Suddenly nasal streaming and sore throat and headache... which might explain a lot.

D: 2 cold chicken thighs
4 sqs milk chocolate, which son has now been given on instructions to hide it where I can't find it.
Quite thirsty, probably the carbs or the cold!
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a PE bar.
Dinner: pizza! (LC pizza base from the LC Food Company, topped with 1/2 small tin of chopped Italian tomatoes, mozzarella, ham, and mushrooms) followed by LC lemon drizzle cake and cream.

And my loyalty coupon gave me 200g free milk chocolate!!!
My local supermarket currently has a thing where you get a scratch card for every 15 euros of groceries. I keep winning croissants. :banghead:
On the up side, it's real fun to ask other shoppers if they like croissants when they are bagging their groceries and surprise them with my cards! That way I still enjoy winning but without the fight with diabetes. :happy:

My first effort in my resulution to eat myself room in the freezer.
"Fish fillet á lá Bordelaise", bought at either Aldi or Lidl, who knows how long ago. Surprisingly low in carbs, according to the package, 4.7 grams per 100, the whole thing is 400 grams and I had half. Not a 'fillet' at all, being chopped up and pressed pieces of fish but that's fine with me. Taste was good too, except I have a feeling this one came from a bad batch with way too much salt. I like salty foods, but this was close to inedible salty.

So instead of simply reheating the other half tomorrow, I'll improvise a trick with added veggies or such to have all this salt spread over a larger amount of food.

I had it with a very tasty salad of endive (still from neighbour's giant head of endive), tomato, onion, cucumber, tuna and green olives. :hungry:

Not been too well, so not felt like eating.
Yesterday no food until evening when I had lamb and bean soup, and a piece of toast.
Drank iced coffee and water throughout the day.
Today brunch: two boiled eggs and coffee. Dinner salmon with cream cheese, decaff coffee.
 
Hello all. Haven't been cooking these last 2 days because I've been so dizzy. So have eaten easy to get at things like the cheese rolls I bought for my grandson and he left here. So I'm hoping I'll be normal tomorrow and I can cook again. I got a turkey joint out of the freezer and am looking forward to that with veg. Crossing fingers again.

Are you still not feeling yourself, Rosemary? That's gone on for quite a while now. Do you think it might be time to talk to a doctor? Perhaps you already know what the problem is, of course. But if you haven't investigated it after all this time, maybe a word with a GP wouldn't go amiss. Do take care of yourself.

L: iced, black coffee, unsweetened ice tea, lemon water.
D: home-made tacos made with 80/20 ground beef, cheddar cheese shredded, lettuce shredded, and avocado chunks on egglife egg white wraps.
After dinner: unsweetened ice tea, and lemon water. One tsp of home-made taboulleh made with Hemp Hearts (first time using - producer is Manitoba Harvest) in lieu of bulgur wheat.

PS Egglife egg white wraps were tasty but pricey (six for $USD5.00). I will likely try to make a knock-off of this product at home.

Their ingredients look a lot better than Seriously Low Carb who use too many seed oils for my liking. Was that a side plate or full size plate the pizza was on (trying to gauge size)?
 
Morning all. @Annb. I have been to the dr. All this started when my beloved daughter died unexpectedly. Have had counselling but still find everything extremely hard. Seeing my son will undoubtedly help because we can talk about it and help each other. Thank you for your concern, but I'm a tough old bird and I will get there eventually. Roast turkey today with veg for lunch and boiled eggs and Ryvita for tea.

Full size dinner plate! I reckon the pizza base is about 18 cm diameter.
 
The worst part is that I've never even made stock, I simply use a cube. So no excuse, except just putting too much veggies in the pot. :bag:

Today will be the last day of my cheesy leek soup, tomorrow will be something from the freezer with a salad, I need to make room in the freezer.
Years of working in restaurants when I was still at school got me into the stock making habit. The kitchen was one of my earlier stations where you learned to cook well (and ignore language!).
