6.45am - 2 eggs mashed up in a cup with butter. Mug of earl grey tea

elevensies - half a bar of a protein chocolate crispy thingy from Home Bargains. Mug of earl grey

Drunk loads of water throughout the day

Dinner (couldn't be bothered cooking so on way home from work ...) - Spanish burger thingy from MacDonalds but I swapped their roll (which looked really nice but one of my son's helped me out and took it off me and ate it) and I had the burgers on my SLC roll. Kefir with some raspberries & a little banana (for a change - actually fine for me at dinner time). Large glass of my own pepsi max with lime. 2 squares of black & greens dark 85% dark chocolate

Usually I have dinner about 6pm then nothing until the next day, and when that is depends on schedule and whether I'm hungry.
But I was reading that a little soemthing before bed can lower fasting bg in the morning so I gave it a try last night and had about 30g cheese at bed time.
But fasting bg was slightly higher than usual at 6.8 so that's a no then.

Brunch at 10:30 of 2 scrambled eggs, 30g camembert and a quarter of a pear.
Coffee with cream.
Just mint tea and water until 6pm
2 95%meat sausages cooked with savoy cabbage, a bit of onion and garlic and Tomatoes in the same pan. Small portion hm lc hazelnut ice cream and small portion hm lc chocolate and raspberry ice cream.

No exercise today except a walk to the dentists. Mostly catching up on admjn on the computer.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a PE bar.
Dinner: kedgeree made with cauli rice followed by SF raspberry jelly and cream.

I don’t know why it never occurred to me to make kedgeree with cauli rice. Feel a bit daft admitting that. :facepalm:

Today been busy. Skipped meals until early evening, white cabbage fried in garlic butter, and cheesy beef mince . Drank coffee and water throughout the day.

It's a Select On The Go High Protein 22 bar - Home Bargains have them in Chocolate Brownie Flavour (4g of carbs per bar), they also have a banana flavour and strawberry one - the last 2 were sold out the last time I went so I can't give the exact descriptive flavours and they are only around £1.15, imo a bargain which is really good (a lot cheaper than the others I sometimes have) - I find them really handy to have when I am working around 11am with a cuppa and they are ok especially for the price. PHD bars are nicer but a lot more expensive - they are worth a try ...

I don’t, generally , have sweet things, but useful to have when out and about, and can’t always get low carb food, or if unexpectedly delayed somewhere.

Cottage pie,green veggies for lunch.
Hearty beef and veggie soup, 400ml mre two sliices of toastt for supper at six.

Small single mat whisky, couple of peices of Freys chocolat, brfore going to bed early

Hi All. MIA again! Tuesday night used the last of brother’s h/g potatoes and made Spanish omelettes with diced chorizo and shallot, I had four slices of potato in mine because it had to be done but Mr PM had lots. It really was incredibly tasty.
Yesterday usual brekkie of slice LC toast, copious tea. Then went to the coast with my friend and had a glorious walk and took cool bag with pack of rollitos, berries and water. It got too hot after lunch and we had to go home about 2.30 but that was after 4 hours. Supper was two Green Cuisine plant burgers topped with juice Portobello mushrooms.
Today same brekkie, lunch will be scrambled eggs and supper will be chunky cod fingers and green veg. Then tomo we are off to Exmoor for the long weekend to meet up with old friends. @maglil55 have a great meet up with your friends. @DJC3 it was good to see you back.

For my lunch which I'm eating right now, I'm having left over roast gammon (from last night) chopped into a pan of white cabbage, a large spring onion and a yellow portion pot = 44g (from Rosemary Conley) of frozen garden peas sauteed in 30g of butter. I'm not sure what my diabetes health coach will say about the cooking in butter part but it's very tasty.

Cream of mushroom soup for breakfast.

2nd meal will be braised cabbage with bits of streaky bacon (the last 2 rashers from a pack) and 2 slices of Lorne sausage chopped up into little cubes. Braised in butter with a little olive oil and a large spoonful of my onion puree that I made a week ago. It's braising at the moment so should be ready for eating once Em has been taken home.

Just heard that another younger person of my acquaintance died this morning at the local hospice, of cancer. He was such a fit man - only in his late 50's and his wife was our local pharmacist until 3 years or so ago. They must have taken early retirement because of his health, but I didn't know that. Such a shame.

I'm sorry about your aquantance. I just heard this morning that my cousin has metastasized lung cancer. Very large strong healthy man otherwise, 52 years old. Stupid disease.

Yes. Stupid disease. Awful for the sufferer and for their relatives. So sorry to hear about your cousin's disease.

Onion puree is:

Onions, any kind, chopped finely and gently fried in butter (with a little oil to help prevent burning) until it is well caramelised, but not burnt. Actually, they don't need to be all that fine, because they will be blitzed in a food processor.

Add chopped garlic and stir around in the pan for a short time, but it shouldn't burn at all - or you could use roasted whole garlic and squeeze out the resultant goo.

A little salt and pepper to taste.

A spoonful of tomato puree cooked out for a minute or so (might need to add a little water at this point to stop it burning - depends on your hob and the pan you use).

At this point I usually add either some soya sauce or a vegetable stock cube for a bit of extra flavour.

Allow to cool for a short time and then blitz in a food processor, or, if you don't have one, press it through a sieve - if you use a sieve, you really need to chop the onions finely.

Put it in a sealed pot/pots and keep in the fridge or freezer. It keeps well for about 4 weeks at least in the fridge. Use it in savoury dishes about a tablespoon at a time. Very good in soups and stews (used it in the mushroom soup I had yesterday).

Quantities depend on how much you would be using and how many onions you have available. I think the secret is the butter - it helps the flavour and helps to preserve it. I use unsalted butter, then I can control the saltiness myself.

Variation on a theme today with my meal of the moment. Added some chopped streaky bacon to the standard mix of mince, courgette, onions, egg, feta and grated mozzarella. Occurred to me as the taste is reminiscent of a rice dish I used to make, the mince is a nutritious ‘substitute’ for rice and basically goes with any leftovers that may be lurking in the fridge.

I'm another with a friend in her 50s recently diagnosed with metastasised cancer. Lovely, vibrant woman. A stupid disease indeed.:shifty:

B: one cold sausage
A rewarding morning getting a tombola ready for our village fete this weekend , with 6 other volunteers we got a good production line going and got the job done in less than 2 hours.
Mixed emotions as it's sweets in a jar we do, makes us hundreds for charity, but does conflict with my anti sugar learnings. Ho hum!

L: a cold sausage chopped into scrambled egg. 1 hm lc choc ice cream.

D: gammon steak, grilled mushrooms, cauliflower with grated cheese on.
