What have you eaten today? (Low carb forum)

Ah, and now I know why I didn't bother the first time I read it, ground almonds are ridiculously expensive!
Still, I might give it a go. :)
Try blitzed pork rinds instead of the ground almonds. Reckon that’d work, even just the cheese and cauli with some cream cheese added. Both of those work for fat head dough so I don’t see why not for this.

You can get reasonably priced ground almonds in the UK……
 
I was going to try making coconut porridge for breakfast, but for the life of me, I can't find the coconut flour in the larder, or even dessicated coconut, come to that. Not sure what happened to those. So I found a tin of salmon in my search so made up some salmon mayonnaise and had some of that on wholemeal bread and butter. Tasty.

2nd meal will be stuffed peppers - already made and waiting to be reheated. The filling is the veg mix from a day or so ago with egg and then cheese grated into the resulting custard. Looks good.

Cauliflower and broccoli with a generous amount of cheese and mustard sauce, and some small meatballs.
No idea what happened with the cheese sauce, as far as I know I did what I always do, but this time it tastes absolutely amazing, very happy there is enough to last me 3 days!

Question on reheating meatballs:
I made the meatballs the day before yesterday and stored them raw in the fridge, so I figured I'd best fry them all today, seeing I plan to eat them tomorrow and the day after as well.

So how best to reheat them? Microwaved they tend to shrink and become rubbery. Should I just heat them slowly in the frying pan?

Another off plan day today.
Big village fete
So quick breakfast of 2 scrambled eggs and a quick cup of tea.
Then off out for physical and tiring day setting up stalls and selling hard for charities.
Gulped half a cup of coffee at one point
Had an ice cream at another
Finally home after taking it all down and back away again.
Slow cooked lamb (thank heavens I remembered to throw it in the slow cooker at 9 a.m,, nothing else added) seved with green beans and courgettes. Small piece chocolate cake with a lot of extra cream
3 cups of tea and large glass wine and water.

No idea what bg was or is, legs ache.
At least £1000 made.
So glad it's only once year.
 
Saturday 27 August - bed 7.5 FBG 7.6.

@MrsA2 unfortunately, I'm way past looking! It's Hubby's fault. He decided new clothes were in order since we've bought very little the past 2 years. Enjoyable though. @Goonergal & @DJC3 will be able to relate to ....jumpers!! I used all my powers at the Sales and got 6 of them in the sweltering heat for a mere £45. Obviously not worn yet. M&S are a nightmare with trouser sizes. What was Regular is now Small/Petite or Short. Short has no consistency in the colour labels as different brands use different colours. I gave up, went home and ordered them online instead.

B. TAG and a bit crustless quiche.

L. Much later DGF chocolate and caramel crunch.

D. Usual cold cuts - ham, smoked chicken, wafer thin roast beef, pork & egg and coleslaw.

Sunday 28 August bed 7.2 FBG 7.6

B. Decided to gave a fry up this morning. Slice of GF Black pudding, streaky bacon and a fried egg. Slice of SLC toast and, of course, TAG.

L. Nothing. At swimming lessons with grandson.

D. Sizzle steak with mushrooms, green beans and celeriac dauphinois (which I hadn't made for ages). Usual campari and soda.

I would braise the fried meatballs gently either in a pan or in an oven. Put them in a pan or dish with a little water or stock and a fair bit of butter. Heat the pan or dish gently and let it come to the boil. Simmer gently until all the water is gone and you hear the meatballs frying. If you're worried they might stick, just swirl the pan around a bit. By the time you hear them beginning to fry, they should be heated through.
 
Bacon and well done eggs, two slices of vegimite on toast for breakfast.
Cold chicken legs and a mix of salad stuff for lunch.
Hearty beef and veggie soup, couple of slices of toast for supper at six.

Half a small loxal mandarin that are just coming into season here,, tried a bit of the Frey 91% chocolate and segment of mando together. I think I set a world record for spitting food out.

Had two small glasses of single malt to get the ****** taste out of my mouth.

I reheat rissoles in the microwave, I do not use the defrost button on our LG microwave.

I press the start button which counts down from 30 seconds. I have found stopping them on 20 seconds and see how hot they are, rthen inse and repeat toll they are heated through.

I do like eating cold rissoles as well.

@maglil55 well done on the jumpers! I added to my unnecessarily large t-shirt collection in the FatFace sale on Saturday. And agree on the M&S sizing, it’s shrunk upwards and inwards! I may have grown widthways but I surely haven’t got any taller.

@Antje77 its weird when you unexpectedly get something very delicious. My sister and I once accidentally created an amazing roast potato / baked onion mix when making a roast dinner. We spent years trying to do it again but never managed it. Now I don’t try for obvious reasons, but boy I still remember how good it was.

Yesterday I had my customary hotel breakfast of omelette with onions, ham and cheese with a bacon ‘side’. Later on some Greek yoghurt, cream and raspberries. Dinner was some rotisserie chicken from Morrisons. And I may have snuck back to Hotel Chocolat for another hot chocolate.
 
Morning all. Not sure if I posted yesterday! Had the rest of the chicken with green veg and cauli mash from Sunday and a sausage sandwich for tea. Today no bf. Lunch bacon, egg, sausage and tomatoes. Tea, egg mayo and cress on 2 crackerbreads. Nearly run out of fresh foods but have plenty of tinned ham, salmon, mackerel etc so definitely won't starve!! Have a nice day folks.
 
Just had salmon mayo on crackers. I have to go out shortly and may not be back very early, so I had to have something quick. It had taken me all my time to do the essential chores, get showered and struggle with these darned stockings to get them on. When I see the nurse, I'm pretty sure she'll get me to take them off again so will take my wire gadget with me to get fresh ones on. I hope she has self adhesive elastic bandage available to hold the stockings up. I've ordered a suspender belt to see if that will help with this problem. Just hope that I can get it around me when it does come. Everything that has to be done before I go out, has been done now so I have a half hour in hand.

There will be a second meal but what it is depends on what Neil can get for me at the supermarket. It will have to be something meaty because my innards are starting to protest against all the veggies again.
 
2 fairly thin slices of topside. 3 babybel cheeses. Haddock and mixed veg.
 
Bad nights sleep, busy head and pounding legs after yesterday's activity.
Really annoyed to weigh 1lb heavier. Hardly ate yesterday and was active all day. That's 4lbs on since June and no idea why.

B: hm lc yoghurt with damson puree and seeds
L: lettuce, cucumber, tomatoes, cold lamb, coleslaw. Hm yoghurt with coffee.
D: bottom of the fridge curry with chicken. 1 sq hm lc brownie. 1 sq 85% choc
