What have you eaten today? (Low carb forum)

Wouldn't you know it? Finally got myself organised today to make sausages and I can't find the sausage skins that I bought! So, I blitzed the pork belly chunks with some spices (sage and mace), salt, garlic and half an onion (the food processor didn't like it and kept on pushing the blade up and stopped the chopping process so I had to keep on opening it up and pushing the blade back into place). I was going to add the pork mince (only 5% fat) to the processor but gave up and just mixed it by hand in a big mixing bowl. Tested a small patty and it tasted just right. But by that time I was shattered and seriously sore so I really didn't feel up to making individual sausages so I now have it in a 1lb loaf tin in the oven, making a kind of meat loaf which I will then cut into slices to freeze. Because I couldn't add the mince to the processor, it is a bit coarser than I wanted. With any luck my 2nd meal will come from that. Maybe just with some salad - really don't feel like prepping vegetables.

Breakfast was bacon and eggs with one slice of low carb bread. BG dropped too low around lunchtime so I had one more slice of the bread and a cup of tea and that pushed it up to 4.8. Probably the tea more than the bread.

The only time I’ve cut my finger in the kitchen was while trying to remove the protective guard from my mandolin slicer. last week I saw a recipe using mandolin sliced jicama as a wrap instead of rice paper so I might be about to give it another go. I’m expecting the jicama, crab and raw vegetables with a sauce to do better as a bowl than a wrap but worth a try.

And it'll grow back, so it's a free source of fresh free range protein too!

Looks like a mess, tasted fine!
The eggs should have been a tad softer but tasted fine still.

Two slices of LC bread, one with 'zwiebelmettwurst' lots of raw onion, remoulade sauce, and a duck egg, one with a tasty old cheese, 'katenspek' (a warm smoked pork belly in thin slices) and a duck egg.
Didn't eat it all so I'll have half a slice of bread for lunch tomorrow.

Will snack on chicory and hummus later on.

All this talk of sausages, beef olives and "finches" :hungry:

Today I had this as a bigger meal cause I needed to use some things up and dislike wasting stuff, just split my "allowance" along 2, not 3 meals.

Tasted better than looks, About 300g of creamed spinach (milk, cream, butter, shallots, Regato, salt, garlic, black pepper, thyme, nutmeg)

with around 170g of roast chicken breast re-grilled to char it up a bit.

oh, and a little bit of microplaned "red" cheese, no fingertips!

Was around about 14g of carbs based on a fag packet calculation, but can manage that in one meal as long as the fats and proteins are there too.
 
Skipped breakfast and saved my carbs for a cafe lunch.
Had ham, 2 fried eggs and chips. Gave most of the latter to hubby but did have some.
8pm, only when hubby enquired about food did I realise I hadn't been hungry since lunch. Would have fasted on if on my own but ended up with about 50g cheese and some ham.
Did polish off the remainder coconut chia berry pud and 2 glasses red.
Well, it is Saturday night!
 
Evening all. (for people my age, that sounded like Dixon of Dock Green!) I had cottage pie for lunch at a local cafe. That wasn't too bad carb wise then I went and spoiled it by eating 2 fried eggs on ordinary buttered toast and then because I enjoyed the toast so much (I've missed toast) I had 2 more. Tomorrow I'm having chicken drumsticks grilled with veg, then cheese for tea. To be honest, foodwise it has not been a good week for me. I have not been disciplined enough. Loved reading all the funny bits tonight. Enjoy your Sunday. :happy:

I've run out of bacon! Thought there was another packet in the big fridge, but no. OK -

Breakfast will be a slice of the baked sausage mix that I made yesterday with a couple of fried eggs and a tomato/onion mixture fried in butter.
2nd meal will be baked fish - some slices of salmon and haddock, baked together with some butter. Going to try to make celeriac chips to go with it.
 
The fish were larger than I expected so I have a haddock tail-end and a salmon tail end and trimmings left after prepping my fish for this evening. I am baking the larger pieces and will make something later with those, but there are still some little pieces that I thought I would make into some kind of fish cakes but, obviously, can't use potato to hold it all together.

Does anyone have a recipe for low carb fish cakes? I have a bottle of fish sauce and I have some coconut flour and some eggs which might come in handy. Also have some of the celeriac left over.

I often use the salmon cakes recipe on onceuponachef website. I just omit the breadcrumbs and they hold together fine; although I do pop them in the freezer to firm up a bit. I’ve cooked them in a skillet on the stove, in an air fryer and on a grilling plate on the bbq, all without them falling apart. The recipe makes lots so I usually freeze most of them anyway.
