What have you eaten today? (Low carb forum)

I never thought to blend any kind of mushroom soup, makes sense though.

My experiments with mushroom soup will have to wait a bit, I'll be working on a ship next week (monday evening through saturday afternoon) so food will be interesting.
Food is supposed to be included but I have no idea what to expect, and neither does my skipper who I called today to ask if she knows anything about it.
It's a sailing ship, we'll have 14 paying guests, but it's not the kind of trip I'm used to. This time we're mainly the hotel for people doing a 5 day walk, so they'll walk, we'll move the ship (under motor, not sailing) to the next place to provide a place to sleep for the walkers.

It'll be 6 ships and the food is the responsibility of the overall organisation, not of the individual ships, and we haven't been told if it will be catering brought to the ship, or eating out, or something else. The walkers (and supposedly the crew) will be provided with breakfast and lunch packets, but again no idea if they'll make their own breakfast and lunch on board or if they (and we) will be provided with ready made packets.

I hope the breakfast/lunch stuff will be a do it yourself thing, which means I can simply put whatever they have in the fridge on my own low carb bread. If nothing's stored in the ship's fridge I'll need to find a different plan.
As for the evening meals, no idea if I'm expecting simple fare like lots of pasta or rice with a little sauce, or something more sophisticated where I can pick and choose.

So I'll bring quite a lot of basic snacks and emergency rations, but not much which will go off if not used, in case the food is better than I fear.
I'm happy with whatever food I can eat with them, and I'm happy to provide my own, but life would definitely be easier if I knew a little more about what to expect!

Tonight was the same as yesterday, except I did hear the kitchen timer so it wasn't burnt this time. :joyful:
There's still some tuna melt batter left so I'll have that as a muffin tomorrow with a substantial salad or such.

And from monday on it will be a surprise, wish me luck with that!

Good luck! It all sounds too uncertain for my liking, but enjoy the "sailing" anyway.
 
They were really nice but definitely needed the skinny syrup with them. A dollop of yogurt or some cream would do the same thing.

I prefer them savoury and do those ones with the tbsp mayo instead of yogurt, and add a bit of onion powder and garlic pepper. I keep meaning to do a batch for the freezer but they're so quick to make that I've not bothered, and I like varying the spices too.
The savoury ones sound good. I don’t have a waffle maker at the moment but I’ll keep an eye out for one. Ive also added some skinny syrup to my shopping list
 
Breakfast wasn’t exactly low carb, but overall my day still was (still about 6x fewer carbs than the AU diet guidelines)

B: muesli with cinnamon, extra protein soy milk
L: low-carb wrap with lettuce, tomato, onion, ham
D: stir fry chicken (leftover roast chicken, brocolli, green beans, cauliflower, carrot, water chestnuts, oyster sauce, sauce, garlic, ginger)
After-dinner snacks will be protein bar, no added sugar ice cream and maybe — depending on BSL — protein shake using hazelnut milk
 
FB: 5.6 (woohoo!) Ended up doing 14000 steps yesterday which is the most I've done for ages.

B: Savoury waffles (3 tbsp ground almonds, 1 tbsp mayo, 1 egg, 1/4 tsp baking powder, 1/4 tsp onion powder, garlic pepper, 1/2 tsp water to thin the batter) with rocket, a few walnuts, tomatoes, cottage cheese and chives.

I doubled the mix and my husband had this too. We got an extra waffle out of it but really, two was plenty.

I think this will likely be brunch but I'll have a mug of mushroom soup if I'm hungry later.

D: What I planned but didn't have yesterday as we were still out - halloumi and roasted Mediterranean veg.IMG_20230514_115523.jpg
 
Saturday 13 May bed 6.8 FBG 6.6. In between taking youngest to jujitsu, doing maths with eldest while jujitsu was on, getting shopping, and REALLY getting into nooks and crannies in bedroom, I ended up with the eldest staying the night to preserve DIL's sanity and stop him strangling little brother! We had a nice cosy evening introducing him to some of the wonders of Eurovision (which he found very odd).

B. TAG and 2 slices of SRSLY toast with ox tongue and whipped cheese. Benecol dairy free

L. 2 slices of SRSLY fruit loaf with Benecol spread

D. Cold cuts - ham, roast beef, corned beef, pork and egg - nicked a few of Hubby's chips again. Peroni 00.

Apparently, he was relating his Eurovision experience when he went home today. He was puzzled by the Finnish entry. Why was he dressed as a brussel sprout? He thought Italy was not a good entry for the country responsible for wonderful pastas, and the winner (after I told him this morning) involved a lot of rolling around on the floor!
 
Breakfast two boiled eggs and half a low carb roll cut into slices and buttered
Lunch rhubarb with hulled hemp seeds and yoghurt and to drink lemon and ginger water with ACV
Mid pm tried a new - for me - tea, own brand Waitrose, of dandelion, fennel and ginger with liquorice root really like it and reasonable price just over a pound a pack of tea bags - I love and usually buy their mint tea but good to try new tastes .Also a few squares of 100% chocolate.
Dinner starter of my drink of lemon and ginger infused water with rest of my daily ACV and a few vegetables with spoon of hm hummus then main of roast chicken with a couple of pork chipolatas (98% pork) local asparagus and roast butternut squash with glass of dry white wine then a LC cake with decaffeinated coffee.
@Antje77 wishing you fun times on the boat tomorrow and really hope there's enough flexibility to choose food that suits you and allows you to continue to manage your health as you do so well when at home - I'm crossing my fingers for you.

That looks fantastic! I’d never have guessed it was Halloumi on the waffles though, it looks more like cottage cheese from here.
 
Lunch: ‘breakfast’ wrap - srsly low carb wrap, egg, bacon and sausage.

Dinner: roast chicken, broccoli, cauliflower and some home made gravy.

Snacks: Greek yoghurt and strawberries. Also tried my first carb killa bar which didn’t spike me but the wrapper confused me as it said 1.2g carbs but the nutrient content stated 20g so I’ve no idea now

Were most of those carbs polyols?
Polyols shouldn't spike you so it could be the 1.2 are 'net carbs'.

I had the last of the tuna melt batter pan fried, thinking scrambled eggs, with a very nice salad with fried Turkish sausage bits.

The pan fried tuna melt stuff looks quite tasty, but don't let looks fool you!
I managed 3 bites before deciding it really was pretty much inedible, I guess the mayonnayse in the batter works fine when oven baked but not pan fried.

The dogs very much disagreed, and despite them being very small dogs, they made that whole plate (minus 3 bites and of course the salad) disappear in 30 seconds so all is well, nothing wasted, and I'll go find some nuts or such. :joyful:

Lovely walk and catch up with a friend, nearly 2 hours worth.
L: out at a relative who is finally seemingly to understand low carb. Starter of prawns and smoked salmon with a drizzle of thousand Island dressing. Roast pork, veg and gravy. 1 very small roast potato. 2 strawberries with cream and best of all a wonderful cheese board. 2 glasses white wine
Evening, just a few olives and a couple of radishes

They were indeed polyols, and as you say it had no impact on my BG at all so maybe I just count the 1.2g in my carb count?

I’m still learning with low carb products as I’ve avoided them altogether previously :)

Early evening got the munchies and had a DGF Notella egg, then had another. I think I’ll have to stop buying them.

You just reminded me, I haven't infused any gin for ages. The strawberries are delightful at the moment. I may just do an infusion tomorrow.

Our dinner tonight was excellent roast beef. Nom, nom,..... very nom.
 
Haha, it is cottage cheese on the waffles. I think you've misread it (easily done!). Halloumi was my dinner. View attachment 60908

Whoops sorry yes I did!
It’s a bit of a relief as I couldn’t figure out how you’d made Halloumi look like cottage cheese lol. Still looks great though.
