What have you eaten today? (Low carb forum)

My logical head knows this! It just doesn’t communicate with my phobic head!
Snap! At least I know what caused my phobias. As I mentioned a while ago, it was my granny. She would gather us all up any time there was a thunderstorm, then put us all in a very dark cupboard. It's no surprise that I'm phobic about thunderstorms, too. Granny would rush around unplugging anything electrical while we children were all contained in the dark cupboard. My late sister was even worse than me. She didn't shut herself in a cupboard as an adult but, any thunderstorm resulted in her shutting herself in any place where there were no windows (usually a hallway).
 
@maglil55 wow both your meals and your teaching skills are impressive. Sorry to hear though about return of the norovirus and hope it's not catching again!
Today's food
Breakfast two boiled eggs and LC roll
Mid pm while at eldest sons I took a LC coffee and walnut cake and some nuts with me as a treat as lots of caring related jobs today. His heating has also broken down so I need to chase up a repair asap in the morning. Took him spare heaters over so at least he's not cold.
Dinner - had left beef in slow cooker and had with cauliflower mash - no wine as blood tests tomorrow and gather that alcohol in 24 hours before can put up your triglycerides - not taking risks. Also had small piece of my LC lemon cheesecake id taken out of freezer with some yoghurt.I
Starting my 14 hour water fast in a while ready for the fasted bloods at noon tomorrow.
@Antje77 that party looks amazing so pleased you had such a lovely fun birthday.
 
I haven't done chaffles in years! I used to add to eggs and cheese mix a teaspoon of pysillium husk to give it a different texture ( not the one that turns baking purple - the blond version) and then switched to add small amount of oat fibre but my chaffle machine stopped working and I started buying low carb bread and rolls. I used to use the PH and oat fibre in hm LC bread but stopped making when found reasonable LC bread to buy.

Thanks. I do have Psyllium husk ( not the one that turns purple!) and oat fibre in my cupboard, but they are probably stale by now. Like you I tend not to do much l/c baking. I’ll stick to the plain egg&cheese chaffle mixture I think.
 
Breakfast
Large Americano. Blueberries with a dollop of Greek yoghurt.

Lunch(only on Sundays) 2 fried eggs.

Dinner
Spiced tofu, pepper, aubergine, tomato skewered kebab on a bed of veg.
Veg was shallow boiled in frying pan and heavy spiced with mild curry powder, garam, cumin, coriander and chilli paste.
Cooked so it reduces and before all moisture is gone add a large knob of butter to gloss. Carrot, tender stem broccoli, broccoli, cauliflower, green pepper & spinach.
My favourite way of cooking veg at the moment.
Tofu kebabs was my daughter's idea and went down well.
 
Hello. I forgot I hadn't posted. I've had a very mixed day with food, picked at anything that took my fancy and had a doughnut (shock! horror!) and felt so guilty afterwards. I haven't had one for a very long time so hopefully it's just a hiccup. Tomorrow it's Mother's Day. My daughter is no longer with me, one son is 60 today and lives in USA and the other son lives in Portugal! So tomorrow I have treated myself to 2 lamb steaks and I have broccoli, cauli and carrots to go with them. Enjoy Mother's Day ladies. :joyful:

Easy lazy day today, the only thing I did was feeding the animals and cleaning up after yesterdays party. Very easy task, the party was outside so no mess inside, and any leftover bread/cheese/crisps still on the outside table could simply be discarded right there to be cleaned up by chickens, turkeys and dogs. Some bottle collection and a run of the dishwasher and everything is back to normal. :)

There was still some soup left in the kitchen, and even some of those little meatballs to add, sitting in an open pot in the garden. Chickens, turkeys, dogs and cats, huge missed opportunity here! :hilarious: Too late now, they went in my own meal.

Well, if eating a doughnut filled you with remorse @RosemaryJackson, I suppose there's hope.
Personally, I've never liked them much. Horrid, sickly concoctions, in my view, but I realise some peeps relish them.

Is there a little treat that you might reward yourself with instead, should the need arise?
How about a new flowering houseplant for instance or a favourite scent?
 
Out at a quiz later so tried a recipe for caulifower crisps to take with me, but it failed (I didn't follow measurements or timings) so ate half before going out.

At the quiz everyone else was on sausages with jacket potato and beans, but I took pate and seed crackers, and the remaining cauliflower softies. Chocolate covered brazils for me instead of ice cream.
Fun evening, half a bottle of wine drunk, and we still won!
Part of the prize was a box of milk chocolates. Yes I had quite a few. Was going do well....
Congrats on your win @MrsA2 . Unfortunately, alcohol tends to weaken one's resolve. You can keep the milk chocs as far as I'm concerned, but brazils covered in dark chocolate, now that's a different matter.
 
Evening all

Plan A for a birthday celebration lunch was postponed due illness. so we reverted to plan B.

Today:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and baby plum tomatoes, all seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Baked whole sea bass, belly stuffed with sprigs of thyme and garlic, drizzled with olive oil.
Steamed asparagus spears topped with a knob of butter.
Baked broccoli, leeks, onions, garlic and sweet red peppers.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with walnut halves.
Water to wash down tablets.
 
Morning all, hideous weather yesterday but had a good time and dodged the showers for a couple of dog walks. Good to have a dog again,she goes home today. We miss our terrier who died a couple of years ago but they are a tie and we have some travelling planned this year.

L Nut roast, runner beans, tiny roast potato, small carrot, onion gravy, Cc choc pot with raspberries and cream
D Cheese on livlife toast
 
Just put some chicken goujons into the oven. I used desiccated coconut, spices and egg for the coating. That was to use up some chicken breast that was on its use-by date. Not sure when I'll use it, but it'll keep for a day or two. Maybe breakfast tomorrow, unless there's a lot of the cabbage and chorizo left. Smelling absolutely wonderful at present.
 
Stressful overnight as youngest son broke down on M 1 at about 9.30 pm yesterday on way back from taking his wife to Luton Airport for a work related trip. Car was smoking and burning smell! All very difficult and scary for him but thankfully Highways got him into a layby - 1hour 10mins from home. there followed a dreadful response from his breakdown provider despite having full package and a recently serviced car! Their lack of a timely response meant he eventually made it home at 5.15 am. I was doing a water only fast for bloods today so couldn't use my usual coffee go to to keep me going. He was on his own so I felt had to support him and offer advice so last night ended up with only two hours sleep before heading for my diabetic annual review. Still he's safe and car in garage getting checked out. Luckily they had left their dog with his wife's parents plan had been to pick him up about 10pm on way home.
My 9th annual diabetic bloods and foot check today was definitely different from my previous 8 annuals. She actually asked me about my remission and weight maintenance and asked me how I did it. Apart from a "when you say low carb you don't mean no carb do you?" She was encouraging and complimented me on how well I was doing.Although when she said you're obviously not a real diabetic though as you're not getting worse I did remind her my hba1c was at 97 when diagnosed 9 years ago. overall though I did pick up some change in attitude but still have the actual DN review in two weeks with my results and that is normally a statins sales pitch with just a focus on my ldl.
Water only until one o clock when back. I had treat of two large coffees and my hm kefir followed by two eggs scrambled and served on Ic toast
Mid pm LC coffee and walnut cake
Dinner left over beef with cauliflower cheese and small glass of red wine. Just had decaffeinated coffee and two of my mother's day chocs - hotel chocolate dark chocolate gingers.
Definitely an early night planned tonight.

Goodness what a nightmare. Full marks to you for sticking to your water fast, I’d definitely have caved in and taken a flask of coffee.
It’s excellent news about the change in attitude to LC from the D/N, it’s been a long time coming but hopefully this signifies a more enlightened approach.

Another vote here for the low carb food company bread rolls I love them and now only buy these for rolls. However I find their bread doesn't toast right for my tastes so stick for toast to either Hilo from Sainsbury s or l ivlife from Waitrose. I bulk buy when on offer and freeze in small portions to grab from freezer.
