What have you eaten today?

Late "midnight snack" /early brekkie: 2 of my coconut snowballs, cup of coffee with almond milk & a few drops of stevia.

Late lunch (wasn't really hungry): almond and blueberry muffin with last of last weeks blueberries to finish them off, with clotted cream, another snowball and herb tea.

Dinner: mixed veggies (green beans, mangetout, baby sweet corn and 1 1/2 baby carrots), a few slices of avocado, with king prawns, a bit of bacon - where did that come from??? - and a cream sauce. Raspberries, clotted cream and homemade shortcake - which was a disaster this week and ended up in pieces. Herb tea.

Supper: pending...

Breakfast turkey rashers and a tsp pickle( couldn't be bothered)
Lunch tuna, feta and some celery ( still couldn't be bothered)
dinner lettuce faijtas and homemade hummus - small portion- not hungry.
 
Bacon, eggs, coffee

Salami and Brie, celery, salad, olives. Yum!!

Out for dinner and had meatballs and chicken salad. Prob gone slightly over my 20g allowance but not by much. Can't wait to be allowed nuts and strawberries again!

My fruit arrived! I could smell the durian through the box. The whole ground floor of the house has this lovely fruity, almost alcoholic smell. I find it quite pleasant. Not sure why people would find it offensive.
The jackfruit was a bit unexciting, but the mangosteen is heavenly. Exquisite. Tart, sweet, beautiful.
I will broach the durian's armour plating tomorrow.
How long do they all keep? And should I be refrigerating them?

Pleased you got your goodies, a bit unsure myself how to store, will ask the misses when she gets home from work tonight, I think the durian can be frozen though.

Dinner: chicken breast wrapped in bacon roasted, brocoli peas and sweetcorn, cauli and butternut squash mash. Really nice
 
Off work for the day, so a lie in.

Brekkie: pork scratchings. Posh ones, as recommended by @modesty007 They are very, very good. And they make a far better breakfast than I would have expected. Zero carbs.

Lunch: oh dear. Went to a new dog friendly cafe, with friend, thinking there would be something to eat that was vaguely low carb. There wasn't. I ended up having their 'high tea', because when I go off the rails, I really do go off the rails. And it was delicious. Vintage cheddar and ham sarnie in brown bread. Salad of assorted greenery, raspberries, coleslaw, blueberry (singular), pepper and carrot. Followed by a piña colada scone, with pineapple jam and clotted cream, with 'rose garden' herb tea.
At least I avoided the caffeine, eh?
Went for brisk dog walk after, but still had a reading of 9.3 after 2.5 hours.

Sort of unavoidable. Sort of self inflicted.
Not something I intend to do again.

Supper: roast chicken, no veg, no pud.

I agree - go big or go home! But don't do it very often!! Doesn't that stuff taste so wonderful now? Mind you it puts me in a coma! X

Cheese omelette
Salad
Kebab
Nut balls throughout the day as snacks

Today
Porridge ( surprisingly was ok, probably because not had in a while)
Paprika dusted chicken cubes and salad
2 black farmers chipolatas, bacon, mushrooms and 2 fried eggs.
Finished off the nut balls
need a new batch, these are so addictive!! Too much as I over indulge everyday

I'm missing my nut balls :( not allowed nuts or fruit for at least two weeks. Can't wait to make peanut butter brownies and ice cream!

Chicken breasts seasoned and then fried both sides for a few mins, then a medium sized onion chopped and gently fried to soften, then add a tin of chopped tomatoes and a generous helping of ground corriander - gives it a sort of spicy orange taste, then add sliced red peppers. Saute the whole thing so the chicken is cooked for 20 mins intotal. Add some thinly sliced sping onions, salt pepper and a little cayenne pepper a few mins before ready. Served with three or four jersey royals.

The misses says good luck tackling the durian :) and that once opened cover with cling film before putting in fridge or everything else will be durian flavoured.
She also says not to eat too much of it at once as it can make your insides get all hot, and you can not feel well.

If we weren't diabetic this would be nice:
Mangosteens blended, and add condensed milk and freeze. Meant to be lovely! So might be nice to make into a diabetic ice cream.

Ooh, that's very helpful. Thank you. I had a look at a utube durian opening video. Hmm. Could be exciting! Will keep you informed.

Here is Debs recipe


300g nuts. I used almonds and Brazils.

40g pumpkin seeds

Handful of linseed

30g cocoa powder

50g salted butter

50g peanut butter

5 heaped teaspoons coconut oil softened

Agave syrup to taste

Ground almonds to 'dry out' consistency.

Chop all nuts and seeds in food processor.

Add all ingredients together except ground almond.

Add ground almonds 50g a time until you have a good consistency where you can roll balls in your hands and only get a little bit greasy. They are quite floppy so work fast and be gentle. Just make sure they are 'together'.

Place in grease proof paper and put in fridge for a couple hours. The above will make about 30 balls which will last in the fridge for about a month. You can get creative and add flavouring like vanilla or cinnamon.

They're very morish so keep them hidden in the fridge!

The mango season has come early this year, and there is a glut, so there are mangoes everywhere. That means frozen mango daiquiri. Doesn't it. Well, this evening was the appointed day. Six of us gathered early evening for sundowners, which developed into:

- Mango daiquiri x 2 (admittedly, I had half measures topped up with club soda)
- Chicken enchilada, taco with chilli and veggie fillings, black beans, rice and peas and a little sour cream dip.

I was 4.1 before this extravaganza, and 4.4 2 hours after starting, although we had only just finished eating. A further hour later I was back to 4.1. All in all, although not the most accurately timed testing, I think I should be happy with the scores.

Another few bits for the yes pile these days.
 
Thanks to you and to Debs! Most of the ingredients I have already, just not the agave syrup - which I think I could possibly miss out(?) - and the pumpkin seed. I'll try without as they sound yummy and I'm nuts about nuts! :joyful::joyful:
