What have you eaten today? (Low carb forum)

Saturday 26 November bed 6.8 FBG 7.2
@AndBreathe - no I haven't. My worst reaction is to the penicillin family. My face goes puffy and itchy and my fingers swell up. Add a rash and that's it. An antihistamine usually takes care of it. I react to valium the same way. The others just make me feel weird..Anyway, way behind again.

L Nothing

D. Usual cold cuts - ham, pork & egg, roast beef, chicken and coleslaw.

Boy here as usual for dinner but I had to collect eldest from school early as he was very unsettled. Turns out he was anxious about me going into hospital for eye surgery. So many family members have died in recent years, he really doesn't like it if anyone needs a procedure.

B. TAG and 2 slices of SLC toast with ox tongue and coleslaw.

L. Nothing

D. Mattesons smoked sausage with mustard and a CC little chocolate pot. 20221129_190427.jpg

Late morning: black coffee and an Aldi protein bar.
Skipped lunch.
Mid afternoon: black coffee and a food dr bar.
Dinner: same as yesterday, just different colour tomatoes followed by SF blackcurrant jelly and cream.

Thursday 1 December bed 7.7 FBG 7.2

@MrsA2- hope you are recovered now. @Annb any word on your endoscopy yet? Me? U'm still trying to reassure grandson that my operation will be good as it will really improve my sight. A bit of dashing about today - ordered all my Christmas butcher meat, order arriving from Sainsbury's as I won't be able to drive from tomorrow for at least a couple of days. Tree and lights went up yesterday and I gave the bathrooms a good clean and upstairs a good hoover having seen the list of "do not" for after my operation tomorrow.

B. TAG and a slice of SLC toast with butter.

L. Vegetable bouillon

D. Pork chop with apple sauce, spinach, tomato and King mushrooms. CC little chocolate pot.

Friday 2 December bed 6.7 FBG 7.1

Took the boys to school then straight back to drop off my car, get everything together, then 2 buses to the hospital with Hubby (who insisted on coming despite me warning him he'd have to find something to do for quite a long time).

B. Water and a slice of SLC toast with butter.

L. At hospital - just a black tea. I knew they would have nothing to suit me and, I did have a keto nut, apple and cinnamon bar with me but, I saved that for later.
After operation at 3pm, another black tea and my keto bar.
I'm glad to say Hubby went home for a while as we were there at 11am and I was the last (fourth) on the afternoon operation list. Apparently, I was the most likely to take longer due to the tricky astigmatism in my eye.

D. After Hubby's return, we got a taxi home (not allowed to use public transport) and got home around 5.30pm. Mushroom, chicken and onion omelette made by Hubby as I couldn't get my specs on with an eye shield on the right eye.

I had to call grandson from the hospital too as I saw he'd tried to call me. Mum had tried to get him to wait but he was just too anxious. Another of my operation pals had the same situation. Once he knew the operation was over, and I was fine, he was quite settled.

Glad to say that the astigmatism didn't cause issues.

Despite good intentions, several minor crises, and a couple of funerals and medical procedures, and I haven’t kept records For a few days. Mainly had egg, yogurt or soup, with plenty of fasting in beteween.
Today brunch of Greek yogurt, walnuts and seeds, black coffee
two cups black coffee during afternoon
dinner of vegetable soup, some cheese, and some mineral water.

Today, Saturday, 3 December (doesn't feel like Saturday) bed 7.7 FBG 7.2

This morning started with a wow and went onto a whoa! Everything is about 10 shades brighter, but, as suspected, there is a massive imbalance between the 2 eyes now. Ended up having to mask one eye until DIL arrived with my specs.

B. TAG and 2 slices of SLC toast with coronation chicken.

L. Nothing I was too busy trying to work out a schedule for a crazy number of drops. Left eye is just the regular 3 drops but right eye, 14 drops!! All with varying gaps between applications. I reckon I'll be getting up at 6am to fit this lot in.

D. Gammon, mix of turnip & carrot and one small boiled potato. CC little chocolate pot.

Why is it that now no alcohol is on my "do not" list I would love an alcoholic drink?

Had my endoscopy on Tuesday. I was told to fast for 6 hours before the procedure and to attend the unit at 9.30 am. In fact, my procedure was second last of the day so the fast was 11 hours long. Just as well I had one slice of toast at 3 am with my last cup of tea until after the procedure was done. It was horrible, rushed and rough because, due to lack of fluids, my veins just disappeared and they couldn't get a cannula in at first. Eventually a very experienced nurse managed it at his 3rd attempt and they wheeled me in and did the endoscopy. About 15 minutes afterwards, the sedative kicked in. Not my best experience of endoscopies.

Hi All. Fasted till dinner time then had a piece of fish. For my tea, I had raw cauli and mushroom with Keto Ranch dressing (h/m) and 2 slices ham. Tomorrow I'm having beef casserole with vegetables. Teatime will be pot luck! I find I don't eat breakfast very often now. I'm not hungry when I get up. Funny, because I was always hungry for bf but now a cup of coffee will keep me going. Still haven't lost any weight tho!

Increased risk of bleeds after operation because alcohol is a blood thinner?

Had a small experiment with tofu, tomorrow I'll celebrate Sinterklaas with a vegetarian friend and I thought I had this brilliant idea with tofu.
Tomorrow's experiment will be seeing if chickens and turkeys like tofu, I'm very sure we don't want to eat my 'brilliant' idea.

Evening meal was spicy green beans with lots of garlic, various miniature cuts of meat at 50% off because of use by date, and a very tasty zaziki. The zaziki was meant to be had with falafel with my friend tomorrow, but I made more than enough so no reason to not eat it today as well. :)

Ended up as 2 meals after all. Em had a sleepover last night and she kept me going all day with one thing and another. In the end I had a portion of the soup and added the mince to it instead of making the mince into a ragout. Tasted fine and was quite satisfying. Bit short on fluids today but not enough time before bed to take in very much.

Sunday 4 December bed 6.5 FBG 5.7 I got lens "sleeves/masks" today so I could block off one lens. Currently, I can see perfectly well through the right eye either with or without glasses (since it's plain glass now anyway. However, I can't read with the right eye yet, but it is improving. I can read with the left eye, either with my specs on the end of my nose or without them, but I cannot see for distance without my specs??? This is all a bit of a juggling act.

B. 2 slices of SLC toast with ham and whipped cheese and TAG.

L. Nothing.

D. Will be the Hairy Bikers recipe for featherblade steak. It's in my CMT. I haven't made it for a while, but it is real melt in the mouth stuff. Will be having cheesy cauliflower mash, sprouts, and some of the carrot/onion/celery the featherblade is cooking with. It's a very slow 3.5 hour cook. I did the cooking, but Hubby had to do the chopping. I'm not sure I'd remember what position to have my specs in.

No doubt I will also have a CC little chocolate pot.

Thanks for the recipe recommendation @maglil55 I’ve now saved to my CMT - otherwise I’ll forget where I saw it. Sorry about the eye issues though, must be a real nuisance.

@filly Gk yoghurt and peanut butter is an interesting combo - do you just mix equal quantities?

Todays food
Brunch- Scrambled eggs and smoked salmon
D- 4 minute beef - topside, done in instant pot www.everynookandcranny.net/instant-pot-4-minute-beef/

Small portion of unsweetened stewed apple with yoghurt and cream to finish

Added my pic. I prefer not to sieve the veg through as they have absorbed a lot of flavour. It's super tasty. I'm going to freeze the remains of the sauce for something else another time.

The issue with the eye is the imbalance. I knew about the likelihood as I had a long chat with the surgeon. Operation itself was great, and the outcome is amazing. I just hope the imbalance corrects itself a bit more. I'm going to get a post-operative test at the optician as soon as I possibly can, but Christmas/New Year will intervene. I'll see what they say then. I know they'll be reluctant to do a correction to the other prescription lens when there is going to be another operation, but we'll see what happens. 20221204_190003.jpg
