What have you eaten today? (Low carb forum)

Is the keto naan bread the dd recipe? I fancy trying that but wondered if it would work how similar is it?
Yes, it's the diet doctor recipe I have to admit I was dubious and it looked really bad in the pan and there was a whiff of coconut when cooking. They taste was slightly sweeter than normal naan but I didn't brush them with garlic butter. I flattened the first by hand and cooked in coconut oil. OK. The second I used a rolling pin and cooked in olive oil, this was great. I'll certainly do it again. It would also work like a piece of bread, not that I miss it much, I LIE!!! but you could certainly use them as a lunch base of for dipping or what ever. I'm thinking for lunch you could put in herbs or caraway. The recipe has great potential.

Thank you I think that’s a project for this weekends curry. I usually fry Lidl protein roll slices in butter which I love but do miss naan - I think I may use garlic butter as my fave naan used to be garlic and coriander thank you love the ideas and inspirations on this thread.

I'm already thinking about lunch tomorrow and what I'm going to do with it. A word of warning though, they're not big and puffy like naan.... more of a substantial chapatti. Still yumsh!
 
@ziggy...I have fallen at the very first hurdle after discovering I can't go cold turkey and stomach my favourite morning coffee without it. So plan B from now on is to stick to sweetened morning coffee then green or black tea for the rest of the day which I already know I like unsweetened. Then wean myself off.
They do say that it takes around three weeks for your taste buds to change. I have been trying my morning coffee with almond milk. The first day I thought that it didn't taste too bad but as the days went on it tasted worse until I threw the last one away and couldn't stomach it. So now I have changed back to watered down cream and I am back to being a happy camper. I am lucky though having not had sugar in my coffee for 40 odd years. I think I went cold turkey when I stopped sugar in my coffee but cutting down is probably a more sensible thing to do so that your taste buds can get used to it. Good luck with it, looking at how far you have come I am sure you will master it.

My experience is similar to yours, @shelley262 and @Goonergal. After I lost most of the weight and am now in the normal weight range, I tend to be hungrier than before.

I also have to check out the naan bread, @SueJB. Thanks for sharing.

Tuesday ...

Breakfast: Two double espressos with cream and xylitol.

Lunch: Roasted vegetables (eggplant, zucchini, bellpepper, mushrooms, garlic and olive oil), Greek yoghurt and 2 scrambled eggs). A small piece of low-carb cheesecake.

Dinner: Cornsalad with Caesar's dressing and parmesan. The last of the roasted vegetables with Greek yoghurt, about 60g of lamb, and a heaping tablespoon of hummus.

Late night snack: Some beef salami, some Basque cheese, DD seed crackers with butter. Half a glass of red wine.
 
Well done on managing the fast you’d planned despite your snack - just shifting the time to restart eating to accommodate is a good way forward. Important thing is the time not eating rather than when it is.
The naughty step showed another pou d gain this morning. Thats 4lb since Saturday. I didn't put that much on at Christmas when I was scarfing down the Roses at an alarming rate!
The tricks your body can play just to cheese you off eh!!!
 
Difficult day today had planned an 18/6 fast but ended up with a 23/1. Basically had call at 9 this am that mum had been taken in to a and e a mere 120 miles away! Had to grab bag and next train for my 3 hour journey. Not practical for OH to come and only one car because of our adult autistic son who we would need to put plans in place! Got to a and e where mum was refusing to be admitted ended up with an interim solution of her being rehydrated and then home to hers with me! So at mums she's got a severe infection of her parathyroid gland which is dangerous as it pumps out too much calcium which can cause heart attacks and strokes.anyway hopefully will improve will see tomorrow. We have hospital consultant appt next week so may be able to get other family members to help so can go home for a few days and then come back up with car! Meanwhile nothing all day but black coffee and just now small portion of fish pie and cauliflower had to scrape potato off the m and s ready meal!
Good job don't have blood meter with me with stress etc! It got left behind in rush..... Hope others have had a better valentine's Day steak and red wine were on the menu .........
 
A bit late posting today - not long back from a very enjoyable dinner with my colleague. A long time since I’ve been out post midnight. Caught the last train, which unfortunately turned out not to be stopping where we thought it was - sailed all the way to London Bridge and had to go back out of town again!

No breakfast.

Lunch was a tin of wild Alaskan salmon with mayonnaise and salad.

For dinner, colleague did very well on the low carb front - baked cod wrapped in pancetta, topped with pecorino with roasted veggies and a Greek salad. Dessert was my chocolate olive oil cake with cream and there was also a cheese course. Ate a lot more than usual but no spike - highest reading all day was 4.9.

2 snacks - seedy crackers and cream cheese. 2 of my low carb cookies.
Not getting weighed again for a month. Another phantom pound ON this morning which is really cheesing me off no end.
Im not counting anything because Ive done that in the past and driven myself insane with it and I refuse to go there again. My rules are nothing over 5% carbs, only veg that grows above ground, no food after 7p.m. and fat where possible. Deffo not keto but low carb. Obviously not working, I could weep that such huge changes to my whole life could reap such disappointing 'rewards'.

Dinner - pan fried sea bass fillet with with buttered cabbage followed by a large slice of chocolate olive oil cake with cream.

Thanks for the link. I won't be trying it as mounds of coconut flour is a rather expensive single naan and the psyllium husks at that amount per serving would render me captive of the toilet at an eighth of the amount.

It sounded too good to be true ;[
Haha perhaps you could have a look at other bread recipes on that site as there are some other bread recipes that you might be able to change slightly
 
they all use the psyllium and even they warn about the effects. ha ! to me, I would rather not even think about the consequences

In the 60s, they used to see this laxative that tasted like really good chocolate and it was considred and funny evil trick to put these out on a plate at a party. You could bake these little pitas and pile them up...
Yeah I think the psyllium seem to give the bread texture from what I know. I do get the problems with it though and some people can tolerate it and others not. For me I am forever grateful and it wouldn't seem an issue, but everyone is different so you need to do what your body is the most happiest with. I am sure that I have seen another recipe online which uses almond flour instead. I will have a look for you and if I find something will let you know. But both almond and coconut flours are both expensive here in Australia.

Hi all th@nk you for your hugs. Got back late yesterday mum improving but willl need to go back up mid week next week for consultant appt or earlier if family worried about her. Done lots of jobs and cooking for her so hoping should be ok - she’s a very independent 87 year old with diabetes and poor kidney function so it’s a delicate balance - wish she wasn’t 120 miles away makes it more complex.
Eating while away very erratic lots of nuts and coffee with cream to keep me going but few proper meals and two glasses of red wine late yesterday - broke my no drinking in week rule but was exhausted and I slept like a log. Anyway every cloud ...... I’ve lost a pound this week. No doubt will regain when eat normally again!
