What have you eaten today? (Low carb forum)

I haven't posted on here for a while as I my menus can be very similar each day - however today I made a couple of new things;
Breakfast - scrambled eggs, 1 oatcake
Lunch - tuna and avocado salad - a new recipe I tried, plus almond soya yogurt
Dinner - aubergine and halloumi curry with spinach and cashew nuts - another recipe I'd never tried before and it was AMAZING, so tasty, - got the second portion in the fridge for tomorrow.
Welcome back to this thread @eggs11 - btw just watched The film the magic pill that you recommend - wow it was inspirational I watched it on Netflix but it’s also on YouTube. I’d love to get my adult autistic son to go keto but it’s hard to persuade a 40 year autistic man to change his diet when he will only eat a few items. I wish I’d had this info when he was little he also has epilepsy, asthma and mental health difficulties all of which seem to benefit from a keto diet. Will keep trying as know it works for me too.

It is a very inspiring film, I got quite emotional at the end watching how much happier and healthier everyone was.
I could see how hard it was to get the little girl in the film to change her diet, let alone an adult, but I'm crossing my fingers for you that your son may try a few things for you. My nephew is reasonably good with his eating, but chips and crisps are some of his favourite treats - I'm not sure how they would manage to get him off those.
It was quite amazing to see how many different conditions would benefit from keto.

L: Low carb bagel with smoked salmon and cream cheese with spinach
D: Chicken and cheese wrapped in bacon, 2 x eggs, garlic broccoli rice, lettuce, cucumber, avocado and halloumi.
Snacks: CiaoCarb ProtoToast Cocoa and a mini Peperami.

I've noticed a few of you mentioning wine - I've yet to try any alcohol since starting measuring my sugars. Is wine generally a safe option? :)
 
Morning all. Very busy day yesterday with my Dad and his wife and didn’t get to visit the forum at all once I left home in the morning.

An unexpected carb experiment yesterday. Was planning on a 23/1 fast, but one of our activities yesterday was taking my dad to see some very old friends of his that he (and I) had not seen in many years. Successfully dodged orange juice and lemonade, but a large Victoria sponge was produced and a plate with generous slice put in my hand! Made on the spot decision to try it. Didn’t taste too sweet and the filling was at least real cream as well as jam, so thought it might not be too bad. Wrong! Didn’t test beforehand (for various reasons my Dad does not know I am diabetic), but a couple of hours earlier I was at 4.2 and hadn’t consumed anything since, so took that as baseline. 1 hour later 9.3!!!

So yesterday’s menu was

Afternoon tea - Victoria sponge

Dinner - at local restaurant. Small pork belly slice = confit. Absolutely delicious. Skipped the accompanying rocket as drenched in balsamic vinegar. Skate wing with spinach and wild garlic. Dessert at home chocolate olive oil cake with cream. Back to sanity 2 hours later with a reading of 4.6. My ketones are also slightly up - the morning after I broke my fast they were 2.8. This morning 3.1.

Dad and wife having hotel breakfast and leaving around lunchtime so should be able to get in a 23/1 fast today and return to normal.

@ianpspurs - glad to see you on here and interesting discussions. Do you have a Lidl near you? I discovered that they sell ‘chia shots’ in a box of 21 individually wrapped 5g portions - thinking they’ll be useful when out and about.

@ziggy_w your sabbatical sounds very well earned.

Why not test it @nd see what your personal response is? I’ve personally found that it hasn’t made any impact on my progress. I generally only drink one glass unless celebration and usually only Thursday to Sunday to keep units down for my general health and I have found if anything my fbg are lower especially after red wine. Stress affects my bgs significantly and alcohol relaxes me after a busy day. Wine and spirits with carb free mixers are very low carb 2 g of carb for glass of wine See info on diet doctor.

Think you have to be careful with the sweeter ones I love a dry red or white or a prosseco at 1g per glass.

Well done @Goonergal on your recovery from the cake it would have been interesting to see how quickly it zapped back if you’d been monitoring more frequently. Would imagine a normal person would have a big jump after a slice of proper cake like that but good that you got back to a low reading later. You’re clearly less insulin resistant

Thanks for the welcome @Goonergal the meal out sounds lovey so I hope you enjoyed it. We do have a Lidl within 10 miles and I have seen the chia shots. I tend now to buy large bags of chia seeds, flaxseeds, almonds an walnuts from The Grape Tree. Probably not really fitting my clean eating idea but I am looking carefully at planting my own almond and walnut trees. If I could tolerate maple syrup etc I would probably go full on Hemsley and Hemsley. After my next review in June I might use the initial "free hit" period to test a few recipes as everything we have tried has been very much to our liking. Pablo's chicken is a a favourite,

Hi @shelley262 I did have a couple of interim readings. 7.5 two hours after the cake and then 5.6 about an hour after that, which was pre-dinner, so took a while to come down, but continued downwards even after dinner. It was a very large slice of cake - both layers were a good couple of inches high and there was a lot of jam and cream!
 
Evening all busy day today working but quite enjoyed - especially as such a wet cold day.
@maglil55 i made a lemon drizzle cake yesterday evening and used your egg method whisking egg whites and folding in at the end and I’d recommend this method it worked even better than last time - delicious
Breakfast one slice of bacon, Waitrose 97% sausage and fried egg
Lunch busy so had slice of low carb lemon cake and coffee
Dinner chilli with olives not beans and slice of livlife bread warmed with garlic butter followed by low carb lemon and lime mousse - there’s a glass of red wine waiting in the wings.
Final bits of decorating on agenda for tomorrow.
Whisked sponge method is an old trick. Goes back some 40 odd years in my case when my Mum bought me the Cordon Bleu Cookery Course and I discovered Russian Tipsy Cake - a booze laden sponge that used this method and was stuffed with whipped cream and raspberries. The sponge was so light and I've used the method many many times since.

Must take another look at Russian Tipsy Cake - don't think it would take too much effort to lower the carbs although the crunchy, sugar exterior could be an issue.
 
Well got a couple of days to catch up on again
Bed on Thursday 6.6 and FBG 6.7. Sad day Friday as it was final Aqua Fit at current gym before we were all scattered to different clubs.
B. Tassimo Americano grande with a dash of cream.
L. 1/2 Mattesons smoked sausage (getting addicted to these now I've discovered they are fine carb wise).
D. Continued with Thursday's fishy theme - poached salmon fillet, tablespoon prawn cocktail, 4 Santini tomatoes, lettuce, boiled egg, 1/2 avocado, 2 Walnuts and Helmanns.
Scoop of Halo Top cookie dough and 2 squares of Lindt 90%.

Bed Friday 6.6 again FBG 7.2 and I got a burst of DP up to 8.1 pre swimming with grandson. Owners of current gym doing their best to upset everyone. Kids swimming was supposed to continue in current pool for another 4 weeks but now with only 3 days noticed they've said No - they are closing for everything next week despite the instructor having a contract AND having paid for pool use. 350 kids learn there weekly. Don't think anyone should do business with this lot - obviously don't give a jot about employees/customers. Rant over.
B. Saturday just coffee
L. The other half of that Mattesons smoked sausage and another coffee
D. Slice each turkey, ox tongue, roast pork and a half slice of Moroccan spiced pork (new one on Tesco deli counter). Lettuce, Santini tomatoes, tablespoon each coleslaw and waldorf salad.
I did have a slice of Hovis LC seeded with Lurpack and a scoop of Halo Top later as I was so narked about what had occurred over the kids swimming.

Today Sunday
Bed 6.7 FBG 6.9 - still seething.
B. 2 scrambled eggs and yet another bit of Mattesons smoked sausage with Tassimo Americano grande with a dash of cream.
L. Nothing
D. With certainly have a campari and soda and a wee prosecco.
Diet Doctor lamb roast. Will skip the broccoli puree and substitute spinach and the green beans with avocado.

Evening all (Dixon of Dock Green?)

Successful low carb day today.

Breakfast - none

Lunch/mid afternoon snack - very hungry while out and ate a late snacky lunch courtesy of M&S. Pack of crackling straws - not great: half of them were crispy and satisfying, the other half chewy and tooth breaking. Supplemented by a 30g portion of mature Cornish Cove cheese and a 32.5g bar of a newly discovered 100% chocolate - Labooko (found in the John Lewis food hall).

Dinner - roasted lamb rump seasoned with garlic, pink Himalayan salt and olive oil with buttered tender stem broccoli and followed by 3 Hotel Chocolat 100% buttons.
 
@Goonergal That is a mighty impressive day there. Doubt I'll match that.

B: 1 sports direct mug of tea with almond milk and triple zero stevia; 1 similar mug with 30 mls double cream
Mid morning: 1 baby mug Auchan camomile tea
L: Lamb shoulder; Roast kale, mushrooms, tomatoes; broccoli; chicken stock gravy (forgot to buy lamb stock) thickened the stock with broccoli as I was not having mint sauce (actually picked broccoli wrongly for cauliflower which we usually use); large mug of coffee with double cream; 1 pint water with cider vinegar
D: Rhubarb fool on cheesecake base ( cheesecake base is flaxseed, butter and psyllium husk powder); rhubarb sweetened with liquid sweetner 4 drops for about 300 gms; double cream
Hope everyone had good food, good company and good times this weekend.

Impressive food cooked today by @Goonergal and @ianpspurs - love the sound of your cheesecake Ian I have rubharb growing nicely at the moment had wondered about rhubarb fool, must try it. Hungry day today and made some diet doctor keto rolls they weren’t as risen as last time but at least were not hollow @maglil55 !
Breakfast bacon, egg, sausage and half a large tomato
Lunch dd rolls toasted and served with scr@mbled egg yolks remaining from dd rolls recipe which uses 3 egg whites followed by thin slice of lemon cake.
Dinner slow cooked sirloin beef served with braised celery and cauli cheese followed by low carb lemon and lime mousse
Hope everyone had a good weekend.

@shelley262 That was just the base. We also combine cream cheese and greek yogurt (with sweetner) to actually make a cheesecake. My son and his wife like this cheesecake more than any other. Top with fruit of choice - I like home grown strawberries or raspberries. I would leave psylilum husk powder out of this for other people! BTW, is this the type of thing inulin could appear in? I know Tom Kerridge uses it to make caramel. We are going to try make a version of millionaires shortbread with the cheesecake base and inulin/low carb caramel. I did use that base with 100% chocolate and cream to make high fibre bars which were very good.

Hope it is useful although not quite caramel per se I would guess you just adapt as per caramel with sugar.
 
B. Fried egg, 2 vegetarian hotdog sausages, mushrooms, cherry tomatoes.
L. 2 feta and spinach triangles, leaves, cucumber, cherry tomatoes, olives, small amount of manchego. Homemade low-carb banana and pecan muffin.
D. Hake, parmesan and chilli cauliflower steaks, purple sprouting broccoli from the garden.
(Did not eat masses of nuts!)
