What have you eaten today? (Low carb forum)

Perfect @ianpspurs looks amazing - now I didn’t know that inulin is the only sugar alternative that actually caramelises you learn something every day
@shelley262 You are very welcome. We have the Kerridge book and have tried a few recipes not all were to my liking. I have just found a recipe for low carb Maple Syrup so that is something else to try harking back to Hemsley squared.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream (2 tsp) washed down with a black coffee.
(Lunch: nothing, didn’t feel well)
Late afternoon: black coffee with a pinch of pink Himalayan salt (to replace what I lost when ill earlier!)
Dinner: a few mouthfuls of the roast lamb that hubby rescued from the oven when I retired to bed ill, followed by a couple of strawberries with cream.

Channelling the Tom Kerridge vibe there with a very tempting recipe.

Whilst on the subject of Tom Kerridge recipes, we did make an almond flour loaf from his book. It was ok and kept in the fridge for a long time. Thinking about it now, I would love to transmogrify this into an ersatz Panettone - anyone tried this or anything similar?
 
First meal lamb chops with buttered Spring greens and spinach.
Second meal cheese omelette with a couple of rashers of dry cured bacon and a creamed coffee.
Had a bullet proof first thing and multiple creamed coffees. Cutting down on tea, trying to switch to coffee more to cut out carbs.

@vanillapie I’ve only just started drinking wine ( or anything) again and like you I’m treading warily: just seeing what effect it has. I think you can only judge by what it does to you personally. Drink and test. Good luck.

@Goonergal your weekend with your dad sounds great, if a bit scary with the Victoria sponge situation. I’m finding social events more of a worry than I anticipated. You seemed to come back to normal levels in good time though, so presumably IR is improving. Must admit I’d panic a bit at the thought of being offered a normal cake.

@shelley262 your dinner sounds lovely. When is your A1c test? I remember you saying it was soon. Glad your keto rolls worked ok. I keep meaning to try them but haven’t got round to it yet.

Feel a bit ordinary posting my day on a plate...

1st thing: handful of brazil nuts
Dog walk then
B: cheese and Parma ham

L: smoked mackerel fillet, 1/2 avocado and boiled egg apple cider vinegar and olive oil dressing.

D: slow roast belly pork. Creamed cabbage (DD) brocolli and a couple of glasses of wine.

@DJC3 That is my kind of meal so don't feel ordinary and flaxseed and psyllium is becoming a real goto for me as a base for experimenting with either toppings or mixed with chocolate for high fibre bars and method for ensuring 30gm fibre daily.

Hi hbaca1 bloods taken this Wednesday and DN review following Wednesday just before go to my mums to help her pack for hols. However I have online access now thankfully so will be checking for my exam results regularly from following day! Not sure how long before on computer...... I feel oddly nervous. Mysugr suggests 31 but I’d be happy with current 33 - as had only come off Metformin 6 weeks before last test. This will be first test with no pills in whole 6 month period so trying to be realistic. I’m more concerned about cholesterol as it was high last time and statins refusal was an issue at least seeing result before review will give me preparation time,

I think I will be following you more closely. I have psyllium and flaxseed but never remember to sprinkle them on salads or anything.

Personally, I use chia seeds sprinkled on salads and reserve flaxseeds and psyllium for sweeter taste e.g. raspberries, cream/greek yogurt with those 2 mixed in at the end. Chia seeds also mix very well in mashed avocado, cider vinegar, mackerel and a touch of olive oil for a good quick snack after exercise.

You should be fine. My results came on line in drips but first ones were after 2 days.

Hope it goes well. I can understand the nervousness, I expect it never goes away completely, but wow! 31 or 33! Incredible numbers!
You’re right with the patient access giving you a bit of time to prepare though. It’s given me a lot more confidence, being able to research what it all means beforehand.

@DJC3 The best part for me were the graphs with an almost vertical drop really showed what I had done well. See MBaker's avatar

Well that’s an eye opener! Ive only used chia seeds for making pudding before.

Do you let the chia seeds swell when you mix them with the avocado/ mackerel etc or just mix it all up and eat straight away?

@DJC3 I tend to mix them in at the end and eat asap I also add cheese often and if I do that some small spring onions. I also add cider vinegar sometimes especially if I have this in place of my monster salad. This is a quick meal either after exercise or if we are late back from somewhere. I have always loved bowl food (yes Nigella) and if I could eat all meals from a bowl, with a spoon my life would be perfect!

My graphs are not vertical but a definite downward trend. Even so, my GP kept his screen turned firmly away from me so I couldn’t see, and could tell me off for my ‘dangerous’ dietary choices while ignoring the obviously improved results. I don’t think he realised I’d seen the results already.

I just told my DN what they were and asked if she had any questions! She asked about my diet and wrote down my carb intake and sent me on my way.
