What have you eaten today? (Low carb forum)

Hi all. Another OMAD day. Used same tactic as yesterday and drank a low carb hot chocolate after my gym visit in the early morning. Worked well.

Dinner was Waitrose lamb kleftico with cauliflower cheese followed by chocolate chia pudding with clotted cream. Absolutely stuffed now.

Woke up really early so although I knew we were going out to lunch had breakfast-
B: chipolata sausage, 1rasher bacon, mushrooms and a fried egg

L: carvery at local pub, roast lamb, cauliflower cheese, small spoonful peas, cabbage. 2 glasses red wine

Spent afternoon and early evening in the garden enjoying the sun with the family and a bottle of champagne. Some olives and cheese late afternoon.

D: around 10pm we got hungry again and had grilled halloumi, mushrooms, scrambled egg and spinach
Washed down with G&T

Had far too much to drink today but thoroughly enjoyed it.

It’s my own recipe - inspired by @Brunneria

1 heaped teaspoon of the lowest carb cocoa you can find (Lidl’s is 8.7g/100g) mixed into a paste with 40ml double cream (I use the term ‘paste’ loosely - mine is decidedly thick, but don’t worry, it turns out fine in the end)
Add 330mls of warmed (I bring it to the boil) unsweetened almond milk and a chia shot (these are individual 5g sachets of chia seeds I found in Lidl), stir thoroughly.

Delicious and filling. Would work just as well with other liquids and without the chia.

Edited to say, forgot the erythritol. Add about a teaspoon.

Ha ha! It was a low carb almond scone recipe that didn’t go to plan! The ‘scones’ spread in the oven and all joined together and don’t have the taste or texture of scones at all! However I have been cutting slices and eating them with chia raspberry ‘jam’ and cream and it is just like a crust less Bakewell tart! Hence my renaming it Bakewell cake!

Agree even my hollow rolls outcome at my first attempt the crusts were delicious - shows it’s worth persevering with trying slight adjustments to recipes especially with the amount of liquid if a result tastes good but doesn’t work out quite as intended.

It was one of those recipes where the dough is quite sticky (even though I put less liquid than suggested in), then you put it in the fridge for half an hour to enable cutting out the scones. It did firm up in the fridge but then obviously softened again too much in the oven!

Still sounds good @Rachox and I've never heard of chia rapberry jam. I agree with @shelley262 baking can be tricky. I've given up on keto naan bread and DD bread rolls too. Just get too disappointed especially as I was a great baker:arghh:

Worth more tries especially dd rolls I’ve got my recipe to my taste now and intend to bake them a few times a week from now on as worried about gluten/wheat content in manufactured low carb bread as dd rolls seem to be kinder on my stomach but will still use lC bread as a back up at times especially for toast!

We ( Mrs Ianp and myself) definitely need to master these. The major thing I miss is bread. About the only really good product always available at local markets is excellent artisanal bread - sourdough, rye all my absolute favourites. Kinda breaks my heart that the only genuinely excellent product is forbidden fruit.:bigtears:

I suppose in a way I should count myself fortunate as T1 @ianpspurs because if I really wanted to be a gluten/carb glutton, I could eat the real thing and stab myself to counter the effect. I just don't want to do that.
 
Hi all. Third OMAD day on the trot. Going to see how long I can sustain this for - have been losing and gaining the same kilo for about 5 weeks. Want to drop the final 2 or 3 kilos to hit my target and figure fasting will be the best way. So far the morning hot chocolate is doing its job. Bought a small flask today so I can take it to work.

Dinner today was baked chicken wings coated in a crumb of Parmesan, ground up pork crunch, garlic salt and mixed herbs. Still need to get the flavours right, but pretty tasty. Dessert was sugar free jelly mixed with cream and extra clotted cream. Rounded off with a 25g bar of Sainsbury’s Taste the Difference 85% chocolate (my other mission is to prove I can exercise portion control with chocolate).

On another note, has anyone tried freezing the chocolate olive oil cake? I know we chatted about it, but don’t recall seeing anybody posting that they had done it, and what the results were.

Will let you know re freezing I have one in my freezer right now! Planning on doing all my cakes as two loaf tins freezing one and then rotating so can have more variety. i froze a lemon drizzle one and it was great so would expect it to work. Will report back but really can’t see why it wouldn’t work. I’m making another lemon this week to freeze and rotate. Well done on your OMADs

That would be great. As a 1 person household I end up eating the same dessert all week, so would be good to be able to freeze part of a cake. My sister is coming on Sunday (she lives in Thailand so don’t see her very often) and am planning to bake a cake for her.
 
Hi all apart from my continued deafness - which won’t be resolved until syringed on Friday - getting better and my bgs agree as all firmly back in the fours Phew! Managedhalf a days work too today a great relief as conference I’m presenting at as a carer consultant is only three weeks away - better for my stress levels to get on and hoping to work a bit tomorrow too. OH able to help with caring so despite bank holiday too good an opportunity.
Breakfast one slice of bacon and scrambled eggs
Lunch one and a half DD rolls with prawn and advocado salad followed by coffee and slice choc olive oil cake
Dinner chicken stir fry with courgette noodles and glass dry white having oppo ice cream with one or two strawberries later.
 
Hi,
Lovely day today out and about enjoying the lovely sunshine. As a treat we went to our favourite tea rooms, haven’t been since diagnosis so it was with mixed feelings that I took a seat. This place does the most amazing cream teas, however, before you all shreak at me, I didn’t have one, I had the all day breakfast minus the beans and gave the fried bread to my other half. I did give in to half a slice of granary toast but spread it with lots of butter. Tested before first bite, although a little higher than I like to see I hadn’t eaten earlier so wasn’t too hard on myself, 6.1 then 2 hrs after only risen to 6.5
BG back to low 5’s by this evening which is where I’m happier seeing them and I’ve had a mixed salad with some bacon followed by some strawberries and cream.
I confess that I have bought home a scone, they had a new variety, all my favourites, chocolate, coffee and walnuts, I am going to cut it into quarters and spread with cream, fingers crossed it doesn’t cause a massive high, if it does then the bin will benefit!
