What have you eaten today? (Low carb forum)

Breakfast - wholemeal toast and raspberry chia seed jam, tea

Lunch - satay chicken salad

Dinner - Argh Pizza Friday!! ... or it always used to be. My turn to have someone cook for me. Saved by Pizza Hut chicken wings and a huge plate of spinach salad.

There is going to be ice cream fail though, as there's a mobile ice cream 'deli' in our area tonight and I'll be having one!

I'm pre-diabetic (just barely) and have been quite strict as I'm keen to reverse it, so I'm not going to beat myself up about the ice cream
But you can have pizza. The wonderful fathead pizza. Make the dough, wrap in greaseproof and pop in the fridge until you need it. I usually make enough for The next day too.
Even easier is the lo dough base. I had a lo dough pizza the other day and it took me about 3 mins to make then 7 mins in the oven. Both are wonderful.

Yes I've had lo dough pizza - I was quite impressed! Yet to have fathead and I must have a try. It's just that Friday is my no cook day
 
Bed 5.6 FBG 5.4. After yesterdays chaos today was more peaceful and the sun is back. MyFitnessPal took a bit of tweaking today to complete. Can't believe how much food I had and still had to increase quantities to get it to complete. It's annoying when it won't accept a count under 1000 calories. After my wanderthrough keto recipes I decided to go buy a few things and experiment.
B. Tassimo Americano grande with a dash of cream.
L. Back to lo dough. A cornish pasty shaped lo dough with a smear of No sugar ketchup, slice ham, 3 Santini tomatoes and grated cheddar all toasted in The George. Been having a bit of a problem keeping The lo dough in place until I close the George. Solved the problem today by threading a wooden skewer through it. Worked perfectly.
D. Ah, dinner. My kitchen was filled with aroma that made it Jimmy Chung like. 3 woks on the go. Made hubby beef teriyaki stir fry but I had cauliflower rice and savoury sesame chicken. I added a little stir fry veg and sesame seeds at the end. It is another seriously good Asian dish and only 3g carbs?? Quite salty from the liquid amino but you get a little sweet kick behind from the monk fruit sweetener.

Really easy to make. Chuck the chicken bits into hot oil in one wok all The other ingredients for The sauce into another. Add spring onion to the chicken towards the end. Put together, let the sauce thicken and throw in some sesame seeds at the end. That monk fruit sweetener is very Asian like.

I did have a Scoop of Halo Top and 6 raspberries.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: one slice of HiLo toast and marmite with 2 x scrambled eggs followed by Greek yoghurt, strawberries and LC chocolate granola.
Mid afternoon: raspberry chia pudding and black coffee.
Dinner: cold roast chicken, pork scratchings, coleslaw and cauliflower, broccoli and radish salad followed by strawberries, Oppo and LC granola.

Didn’t have a chance to post yesterday but have a few quiet moments now, (grandaughters still not awake amazingly) so will write yesterday’s menu before I forget.

B: with daughter no3 before she went to work scrambled egg, smoked salmon, avocado

L: went round to see daughter no 1 and cooked us the courgette fritters topped with a fried egg. She loved them and saved a couple for the girl’s tea. I ate too many and ended up with a spike of 7.0 due to the chick pea flour I guess. More self control needed.

D: daughters and granddaughters back here, we went to watch the village carnival which was surprisingly impressive for a small place - brass band, vintage tractors, lots of ponies and princesses. Girls had hot dogs and candy floss, we came home and had lamb chops, asparagus and roast cabbage with bacon and blue cheese. Few glasses of wine but not as much as Wed thank goodness.

Don't panic when the box arrives. The size and complexity of it all looks a bit intimidating - but all it takes is using it a couple of times to get over those groundless first time nerves. lol.

And I found this youtube vid incredibly helpful, because I watched it BEFORE I tried to use the thing. :D

I don’t have Prime so it won’t be here for a few days, which gives me time to stock up at the wonderful butchers here. I’m v excited.
 
Just to say, anyone making the coconut/almond quiche may need to cook the base longer according to Mrs P and possibly make it thinner. (She has bandwidth issues so download speed is an issue) :angelic:

I agree with @Brunneria. She sent me the video too plus there are loads of videos on YouTube. Other useful places are the Instant Pot Facebook group and the Instant Pot app. The official Instant Pot app is the one with the red background with the white IP on it.
I remember sitting looking at this thing when it arrived and yes I was a bit nervous of it at first. I had always used stove top pressure cookers but these are a world away. The fact you can set it and just leave it alone is great. You can do so in the knowledge it will switch to keep warm when done and it won't harm the contents.
Within weeks I wanted a second IP but hubby got me a new Kenwood Chef instead in the hope I would stop visualising a row of IPs.

L: Sausage, bacon, scrambled egg, mushrooms, toms - out at a cafe so shared an all day breakfast with my toddler, she had the beans and toast!
D: Meatballs in homemade tomato sauce with cauli rice, couple of squares of green and blacks salted caramel dark choc.

Have seen lots of people talking about ice cream - this is new since I was last seriously low carbing! Are the halo top, Breyers and oppo all pretty similar? Have also been looking at lo dough but it's quite a hefty price tag, I'm guessing as a lot of you use it you'd say it's worth it?

Hi @marvkat Your menu looks good. Tastes vary quite widely so my guess is you would need to take a plunge on ice cream and Lo dough. Morrisons have Breyers on offer at £2.50 just now so it would be a cheap way to try. I have recently tried Breyers and Halo Top. Taste is fine but from what I can see Waitrose Cornish Cream Ice Cream is lower carb than both but just plain vanilla. Since I never liked Ben and Jerry's or Haagen Daas no biggy for me.
Lo dough for me works as a wrap and will be cheaper than buying food at a service station/roadside Starbucks when travelling. Others have enjoyed them in various ways. Another suck it and see I am afraid. Probably no use at all to you but meant in good spirit.:)
 
Bit of a summary from 4 day break in Cornwall - had some issues at cafes and restaurants due to limited low carb & veggie choice (OK there wasn't any choice! ). Had tried to plan ahead and check out menus online only to find that the hotel we stayed in said it was "for guidance" the only thing they didn't have was the veggie low carb salad! :arghh: Majority of the items on the menu were very high carb, burgers, chips, pasties/pies, "salad" with loads of grains in it etc but it was still possible to work around it - most places had a side salad on the menu.

I had a week of eating salad and cheese, but did enjoy lots of clotted cream with a few fresh berries :-)

B: nuts (taken with us) - scrambled eggs were avoided as from a pack mix with thickeners and yogurt was low fat and over 15g of sugar!!!!

L: salad leaves and cheese, olives, seeds from cafe/restaurant if available or from supermarket if not

D: see lunch - followed by a pot of clotted cream and few berries (yep despite having a whole pot of clotted cream and loads of cheese every day I lost 4lb :( )

I haven’t tried Breyers, but Halo Top and Oppo are quite similar.
Or you can always make your own icecream with frozen berries, cream and something like erythritol (need a powerful blender though!)

I bought a pack of Lo-dough to see what it was all about. I thought it was really only good for quiche bases and pizza bases, whereas Mr B loves it for wraps. We both thought it was a disaster for pastry alternatives, but other people seem to get on with it better. It did seem genuinely gluten free, which is a major bonus on my part. Overall, I would buy it for occasional use. Mr B would use it every day for his packed lunch - if it wasn’t so expensive!
