What have you eaten today? (Low carb forum)

B: steak and eggs with 5 chips, and water to drink. One of those days when I REALLY miss coffee.
L: not needed
4pm: slice of Cambozola
D: will be 2 chicken legs with the Nando’s lime/garlic rub scraped off and some goatsmilk yog. May also have a coffeesubstitute and cream, later.

Rain today, which cut the dogwalk down significantly. There will be a lot of python wrestling, tug’o’war and truffle hound games before they settle tonight.
 
Very wet day in Manchester today so haven’t done very much.
Coffee with cream on waking, no breakfast
L bacon and small salad with a few salami crisps
2 squares of 90% chocolate
D roast chicken, roasted celeriac, cauliflower, carrots and a glass of red wine
 
Hi all. Lots of baking today.

Lunch - Five Guys. Bunless cheeseburger with lettuce tomato onion and mayonnaise.

Dinner - Pan fried wild Alaskan sockeye salmon with garlic and lemon butter sauce followed by lemon zucchini cake with clotted cream and 3 chocolate and almond squares.

The squares were adapted from this recipe using almond butter and chopped almonds instead of peanuts. Used Lindt 90% for the chocolate. Left out the spices and added most of the chopped almonds to the mixture, with just a few on top. Recipe says 12 servings, but I got 15. Totally delicious. Remaining 12 boxed up to take to work. Let’s see if they get there.

Also made 3 small lemon zucchini cakes (1 for me, 2 for work) and some CCBs. Didn’t set the kitchen on fire, but not sure about the consistency. May have used too much flaxseed. In fridge and ready for testing tomorrow.
 
@Goonergal I’m glad you still have a kitchen. I’m going to try the almond chocolate squares.
@Brunneria have you given up coffee because of tummy upsets or bg spikes?
I’ve had a nice day today, few more carbs than the last 2 days for the fibre.

L: 6 of @shelley262 s seedy crackers with M&S whipped creamy cheese and some olives.
Sf jelly and cream
MAS: Carb Killer bar with coffee and cream from Pret
D: steak, mushrooms, watercress with olive oil/ avc dressing. Glass of red and a smidge of brie with 2 more seedy crackers

@pollensa the beach bar looks like heaven, no wonder you miss it.
 
Evening all from a dark, windy, dreary Fenland. I can't really get going over the last few weeks. It is either a virus/fighting off chest infection the Suffolk Ps forgot to mention was circulating or waking at 3.00 this morning. Fbg of 4.9 is useless without sleep - might actually be able to do useful things later next week. Menu today was about comfort within an LC framework - I think. Grandson slept over and was exemplary and Mrs P is convinced his sister smiled at her - 6 weeks old I don't think so.:***:
Breakfast: 4.5 pints tea with h/m almond milk - I was up @ 4.15
Mid morning snack: Coffee with 2 tsps inulin, cream ; 2 flaxseed flatbreads with chicken liver pate 8 hrs after fbg reading - probably more tired than hungry
Lunch: Avocado; Tin of Mackerel in olive oil; 3 small spring onions; cucumber; radish; acv; chia seeds; tea
Afternoon snack: CCB
Evening meal : 3 egg fluffy omelette with mushrooms, chorizo and jarlsberg

Hope you sleep better tonight, it’s really frustrating when you don’t isn’t it? I always feel cold and hungry all the next day so I think you’ve done really well to avoid the carby comfort food.

Thanks @DJC3 Genuinely don't think there is any carby comfort food I would reach for anyhow. Even before dx it would probably have been lots of tea, cheese and eggs anyhow. CCBs and coffee with cream are nearest thing to comfort food I have now - maybe cheese and celeriac pie in winter. Glad your mood has lifted. Sleep is definitely linked to low carbing - yesterday was OMAD and sub 20 gms so only myself to blame.

Sounds like it was a grey wet day for most of us UK residents! I deliberately worked today so got some stuff out of way for a big work meeting on Tuesday.
Breakfast one quarter of lodough dipped in egg fried with bacon and egg
Lunch tin of mackerel with olive oil and AVC with seeded crispbreads and celery
Afternoon fuelled by about 10 mugs of tea I was so cold sat working - @ianpspurs im trying to compete with your tea consumption!
Dinner steak on bed of buttered mushrooms and a few fried purple tomatoes from garden - they are delicious followed by my first second course of one raspberry clafoutis with yoghurt and then my weak moment one of my 3.5g of carb hotel chocolat birthday choc with my coffee.
Your cooking results sound good @Goonergal let us know how the CCBs taste - at least flaxseed is good for you and low carb!

@shelley262 They will need to be pint or better still 1.5 pint mugs and sometimes "German milk" is required. Now I have typed that it seems that Harry Potter and mug of tea with said German milk is in order.:)

Flaxseed, yes its great, as you say, except when you get the little worm wriggles, munching away the other day, on my seed cracker that includes flax seeds I decided to check the tight seal container to see if more supply required, saw something move, then thought no, I didnt see that, and I had not had any G and T believe me.....checked again, yes, the seeds moved, I watched and watched, and then took a seed, and inside there it was a worm wriggles, I fished around, and Oh my goodness so many little wormies...
Ditched them of course, these things can happen even from a new pack, but just keep an eye out for our helpful flaxseeds which are used for so much and low carb as you say, I eat them every day......how many wrigglies I have munched to and dont know, but still here, perhaps they are keeping my sugars normal???? now that leaves us all something to think about ??

I can’t abide any milk in my tea black and weak is how it should be! My mugs are about half a pint and have to be very thin porcelain !
 
Evening everyone. This is my first post, however I've been a member of the site for a few months and joined just after I was diagnosed. Apologies, as I have been a lurker(!) and it's taken 'til now to post anything. Anyway, this is my favourite thread, and you guys have given me lots of inspiration for ideas of what to eat with high fat, low carb. So much so, that when I went to receive my results yesterday from my three month blood test the HbA1c had reduced to the pre-diabetic range. Will continue to follow everyone, and might even get up the nerve to post something (hopefully interesting):rolleyes:....
