What have you eaten today? (Low carb forum)

Evening all. Cold start then blue skies and bright son. @shelley262 holiday sounds good; @jayney27 @DJC3 hope illnesses are abating; @ziggy_w good news about lower ketones and hope the whole gamut is as you want.
Seem to have found some affection for the IP this evening and the Greek influence played its part.
Wakey Wakey Tea
Breakfast : Hot chocolate - soya milk, 25 gms callebaut 100% - 4 gms carb? (our soya milk 1.8 per 250 mls; callebaut 5%?) after swimming lesson
Mid morning: Waitrose Latte
Lunch : Tea; Large salad with avocado and chicken; psyllium husk powder and chia seed for fibre
Mid Afternoon: Walk
Evening meal: Lamb breast stuffed with feta, Greek basil and Oregano; cooked in IP in veg and bone stock made in IP; Kale, broccoli, celeriac, chives, mushroom;
 
Strange eating day...
Breakfast - Hi-lo toast and butter
Lunch - Chicken sandwich with lots of salad on white bloomer:( oh dear (in cafe)
Dinner - Avocado and serrano ham. Strawberries and cream.

Mooching about thinking what else I can eat now and feeling a bit bah!:yuck: Wish I hadn't had the sandwich or left such a big gap between breakfast and lunch (which I'm not good at)

Oh well, tomorrow is another day, as they say:D
 
Hi all. Very long day today, but a good one!

Lunch - at work meeting where only sandwiches were provided. Had taken supplies with me so ate one 65g bag salted almonds and one 30g bag plain almonds. Also salvaged a small amount of smoked salmon from inside a couple of the sandwiches.

Dinner - treated myself to a small doner kebab (no bread) with salad.

@ziggy_w hope your GP appointment went well and results were as good as you deserve them to be.

@jayney27 and @DJC3 hope you’re recovering and @shelley262 I just get greener and greener.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch at Subway (I love their nutritional calculator, you can add and remove items and it works it all out for you!

Mid afternoon: Diet Pepsi and a caramel Carb Killa bar.
Dinner: bolognese with butternut squashetti with grated extra strong cheddar followed by SF jelly, cream and LC chocolate granola.
How cool, I didn’t know about the calculator, have had the breakfast option, egg and bacon just gave the bread to the bin, the second time I asked for the filling only, most places seem to be aware and ok with this request which is good.

Feeling much better this afternoon, ventured out with the dog for a stroll in the sunshine then sat with the sun on my face, wrapped up in a lovely blanket but it did me the power of good.
B coffee with cream and boiled eggs
Late morning after dog walk I made a bullet type drink with peanut powder, splash of cream and butter, it was rather nice
L chicken salad
Almond milk cappuccino
D chicken breast cooked in the pressure cooker in a butter chicken Maggi sauce served with spinach, tomato and spring onion garnish, followed by clafoutis with a spoonful of halo top
 
Bed 6.7 FBG 6.6 so still higher than normal and the sweats are back. I'd be fine if it wasn't for that and the achy arms. Turned very blustery again.
B. Tassimo Americano grande with a dash of cream. Headed out to M&S with hubby in tow and had another black coffee there. Have to say the cafe is poor now for low carbers. I couldn't see a thing I could have eaten.
L. Back home and had some M&S mozzarella pearls, fresh anchovies and the Honduran prawns.
D. Hubby at the football (lost on penalties) so eventually battered out a chicken breast and did parmesan chicken together with air fried brussel sprouts which I laced with panchetta, mushrooms and pine nuts. Scoop of halo top toasted coconut and 6 raspberries.

Today I wanted to make chicken stock for soup - asked the butcher if he had any chicken carcasses and he gave me a large bag of frozen ones -about 12 in all, and all stuck together. It was a bit more than I wanted, but after lugging them up the very steep hill home I realised I woukdn’t fit them in the IP so spent an hour bashing the bag on the floor to try to break them up a bit to get a lump that would fit in the IP! Finally managed - fridge now full of jars of cooked stock and the rest of the defrosting carcasses to cook tomorrow ( no room in freezer) a lot of soup coming up.

B: bacon and scrambled egg. Coffee and cream

L: Tin of mackerel in olive oil ( thinking about your 15 fresh grilled sardines @shelley262 and it seems a very poor substitute!) salad of leaves, avocado, walnuts, celery. Olive oil/acv dressing. Lazy mousse with 20g Callebaut, 20ml cream and 4 raspberries.

D: Daughter cooked curry with chicken, paneer, spinach and cream. It was delicious. Couple of glasses of red wine then a CCB when we got home

I added panchetta , mushrooms and pine nuts to the brussel sprouts and hot paprika to the parmesan on the parmesan chicken recipe.

DCJ3 - Once you have done your stock, you could reduce it, using the saute function to get the volume down. If you used the cartilage from the carcuses, it should become gelatenous when cooled, so you could make your own stock cubes in ice cube trays/muffin/cupcake tins, or even a roasting time, then cut into "portions".

You can tell I've been there and done that with gallons and gallons of stock!
 
Evening all busy day today long hike up to amphitheater this am - new avatar shows me hiking up there in the sun!
Breakfast cheese omlette and coffee
Lunch three lamb chops with olive oil and salad
Dinner chicken leg with Greek salad and red wine followed by Greek yoghurt
Had a higher than normal spike before dinner was it:

The sprinkle of balsamic on late lunch salad?
The bee sting this afternoon whilst I was sunbathing? This was blooming painful!

Evening all. @shelley262 my money’s on the bee sting - surely injecting some honey!

Sticking to the plain and simple again today:

Lunch - M&S Serrano ham and manchego cheese rollitos and a bag of pork crackling

Dinner - ribeye steak with garlic butter. Still a bit peckish so,followed up with a bag of moon cheese.
 
Evening all, Bit of a groundhog day today with early wakeup, weird fbg and September virus. Can't get my reboot going until this all clears up. Much of the day was a total waste of cals and carbs no nutrients or pleasure then evening meal burst on the scene - well took Mrs P ages to prepare. @shelley262 hope the bee sting isn't painful for too long.

Mid morning: H/m soya Latte with ceylon cinnamon
Lunch : Tea; piece of cheddar; slice of Brunswick ham; chicken and salad cream in 1 slice of Schneider Protein Brot; CCB - just junk food really - not comfort food nor nutrition
Mid Afternoon: Tea and dozed off in chair
Evening meal:Thai green curry from this very website which was an absolute favourite 3 years ago when I started this journey https://www.diabetes.co.uk/recipes/thai-green-chicken-curry.html; we didn’t add onions or lemon grass; carbs are very high nowadays but I wanted comfort. So tasty cheered me up
Oddly, same fbg and sub optimal performance this day 3 years ago but put in 75 mins walking that day
