What have you eaten today? (Low carb forum)

As I said, very good job only 1 son here and school day tomorrow, In a couple of weeks all 3 boys and all grandchildren here so may go all along the spirits cupboard plus the stash of single malts people buy me for Christmas - double digit boxes still boxed - doesn't float my boat atm but would be a fun afternoon no doubt, You would be most welcome @Emma_369 until the moment you stayed into the "good" brandy and port:angelic: If gin is your thing Julie has a range that would probably entertain you.
My spirit cupboard usually only gets raided on the odd occasion the girls come round and we decide to concoct homemade cocktails, which doesn’t tend to end well. Other than that I’ve always been a cider girl. But know from now on spirits will have to become my friend-which of course means I’m going to have sample them one at a time in more reasonable measures

Try a 3 litr bottle of Hennesey - yes my boys did once. I'm guessing you are not 6' 4 and 16 stone though.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: rolled lamb belly roasted with rosemary and garlic with one tiny roast potato, mixed veg and gravy thickened with milled flaxseed, followed by SF jelly, cream and LC chocolate granola.
Tea at ILs: cold meat, cheese and salad buffet followed by one Jaffa cake.
 
Definitely not 6ft4. Although at the start of all this not far off the 16 stone part :( A 2ltr bottle of white lightening did me in at 18. Since then I make it a rule never to exceed 1ltr of anything ;)
I'm guessing white lightening is cider, We made our own - 50 litres. Those clowns couldn't manage 1 pint each - we may have misunderstood the quantities - neighbours like it though said it was potent, Did find the ditches had odd footprints for animals:angelic:
 
Evening

Breakfast - Hi-lo toast and butter
Mid morning - Home made ginger biscuit at 'alternative' remembrance service
Lunch - Egg, tomatoes and spinach
Dinner - Pate, salad and olives. Strawberries and cream. Two squares of Lindt 90%
Snacks - Nuts

On the subject of alcohol, my plum gin is nearly ready (made with erythritol this year). To be drunk sparingly!
 
Funny you should say that! I was thinking that the one I did should be easily adapted to IP so I’m not surprised there are some out there. Thanks for the link - I’ll definitely be having more.

If you look on the FB pages, you'll find loads making cheesecakes, although not all LC by an stretch. Right now, folks seem to making C puddings.
 
No breakfast apart from usual water when i woke up; mid morning decaf hazelnut coffee with cream.

Lunch - chicken drumstick with crispy skin, celery heart, apple, walnuts & chives with sour cream and a splosh of lemon. More of my unloved Oppo raspberry ice cream; apple, ginger & cinnamon tea.

Dinner- crispy back bacon and the rest of my cauliflower cheese, with some extra cheddar added for a bit more flavour; More raspberry Oppo with a few fresh raspberries and a spoonful of chia & berry jam, which did zing it up a little; I shall finish up the Oppo tomorrow, so i've got space in the freezer for a Halo Top vanilla replacement! More apple &co tea.

A bit down on water consumption today...
 
Hi all picked what I think was my last crop of raspberries

Don’t often feel temptation thankfully but today definitely did!

Not surprised about the temptation with the last few days you’ve had! Impressive self control though I have to say.

Our raspberries finished a month ago so yours have done really well. I found some blackberries I’d forgotten about in the freezer today, which was a nice surprise.
 
Hello all. Was a bit hungrier today, but all in all did pretty well, I think.

Breakfast: Two double decaffeinated espressos with cream and erythritol. The last of the mashed cauliflower with cheddar, cream and butter with the last of the beouf bourguignon -- couldn't finish it all.

Lunch: Nothing.

Snack: Two babybel cheese plus some liver pate.

Dinner: Lamb's lettuce with Caesar's dressing and parmesan. A small serving of lupin bean hummus, fried calamari and an avocado. A glass of red wine.
 
You'll get there. I probably spent at least a year reading and learning and I still don't understand all the things that happen but most of the time I manage. The support from the like minded people here is invaluable.
That's good to know. I had been wondering how long it's supposed to take for things to "settle down". I have gotten my A1C from 11.8% on diagnosis in July to 6.1% three months later in October. Good news is I seem to have stabilized again in the low 5s to high 4s again. Not sure what that jump from "red high" to "red low" was all about.

That's a great result. Well done. I still remember mine. I dropped from 14.4 to 9.9 over 3 months on diet only. Took another 3 months to get into the low 6's.

Yes. I have done a fab red cabbage in it. Mine was loosely based on Delia Smith's version.
An added joy was when I dropped Mr B's new potatoes into it (anything to save on washing up!) and the little darlings came out dyed red-purple.

Today I am finally making that pumpkin soup I mentioned a while back. Only I won't be phaffing about with that glorious pumpkin skin soup tureen. Will just make it a normal soup, but use those flavour combos (herbs and parmesan). Sadly won't be eating it myself, barring the Swedish Chef Tasting Ritual.

Mid Afternoon: Clearing leaves from trampoline - lost wedding ring; CCB and Tea
Evening meal: Tuna pate (tin tuna flakes, butter, 1/2 tbls ACV - smashed to oblivion in Nutribullet) and 2 flaxseed crispbreads - actually worked well

Get the grandchildren to play hunt the wedding ring in the leaves ( hope you found it again)
 
Bed 4.6 FBG 5.9. Bit of a mad day. Usual school run but confused because we got No 2s dental appointment wrong. Mid school run hubby phoned to say I'd got into the 10 am aqua fit (which he didn't know about mainly because I thought I wouldn't get in). Rushed home, got an aqua bag ready, me ready and off to the gym. Good class and suits me better.
B. Quick coffee
L. Eventually 1/2 Mattesons sausage and 2 scrambled eggs.
D. Leftover stroganoff and probably wilted spinach.
Didn't get creme brulee made yet !

Will see how tomorrow goes. May fit them in then.
