What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: chicken Caesar salad (no croutons!) followed by Greek yoghurt and raspberries.
Mid afternoon: lemon chia pudding and black coffee.
Dinner: Waitrose keralan chicken curry with cauliflower rice and a garlic and coriander ‘naan’ (made from a Joseph’s LC pitta) followed by SF jelly, cream and LC chocolate granola.
 
Haven't been here much as life has been very hard - my mum's been in hospital for a few weeks and sadly is on an end of life care plan. Anyway, having got that information off my chest, I have booked my GP appointment to get my bloods retested and find out if I'm doing any good with my low carb diet. I hope so. I had a day off the wagon for my birthday - no cake - but had a lovely lunch out and cinema popcorn.


Back to today...
Breakfast - home made 'muesli' (1/4 oats bulked up with desiccated coconut, seeds and nuts) with coconut milk and fruit. Tea.

Lunch - bacon and eggs. SF jelly

Dinner - low dough fajitas. After lo dough pizza this is my favourite use of LD!

So sorry to read about your mum, I hope you can treasure the time you have left with her, is she still communicative? It’s such a difficult time, but please take care of yourself too.
 
After much debate with myself In have decided I like you all so much I will keep posting - unluckies.
Yesterday was a large roast - beef rib cooked overnight, roast sprouts,mushrooms and small pieces of banana shallots, mashed celeriac and swede, cabbage, kale and red wine, IP red cabbage with Christmas spice, pigs in blankets; CCB and cream; Cheese, port(s), Madeira - day lasted 3.30 am to 11.20 pm.
Today was lots of coffee and tea in local cafe waiting for recovery vehicle to take car to have wheel changed (5 hrs wait) - someone had lost/never put locking nut in. Meal was salmon fillet, avocado and big salad with chia seeds.
@Kingmidas sorry to hear your sad news; @DJC3 jumpers and base layers needed- no open fire or wood burner?
We couldn’t do without you either ! Loving your family meal sounds delicious but sorry to hear about your car troubles.
 
Quick update regarding the cheesy skillet bread, OMG deliciously dangerous, I had some with a nice thick spread of butter, 2 slices of bacon and the remainder of my soup, this was supposed to be tomorrow’s lunch! Oh well, I will have to have cheesy bread for lunch now, win win ;)
Bread sounds like I need to try it! Re your job situation take some time to reflect hope you are not being rushed to decide?

Yesterday’s roast dinner sounds wonderful in spite of your early start.

Yes we do have a woodburner but Mr C had legged it to the pub as soon as we got home and I just can’t get the hang of lighting a fire I’m ashamed to say. All sorted now though happily.
 
Thank you. I’ve been on a secondment, it was extended as the manager wanted to keep me on his team and is now offering a more permanent role, however I have to apply and be interviewed for this. It offers more variety than my previous role and is at a higher salary but it means continuing to work with a very difficult person and in a team that I can see changing quite a lot in the coming months......

I am expected back in my previous role Jan 1st, current manager has promised to complete the process for permanent role where I am before we break for Christmas but that’s not looking likely now. I’m going to meet with the head of department for my old role tomorrow to try and help me make a decision. I’m too old for all this malarkey lol
 
Wee bit of a catch up again. Yesterday bed 5.6 FBG 6.2 so no lasting effects from the Chinese spike.
B. Birthday - boys stayed the night so inbetween feeding them I had a couple of GF pork chipolatos, 3 rashers crispy streaky bacon and a duck egg.
L. Nothing
D. Out at the new Italian - a very large campari and soda and a wee prosecco (Well 1/2 a bottle). Started with a trio of clams, mussels, prawns in a delicious tomato, chilli broth. Main was a very tender butterflied chicken breast with a veggie mix of mushrooms, peppers , onion, courgette and aubergine. Wee espresso and when I got home 2 low carb "baileys".
Drunk a lot of water as well.
Bed 4.9 FBG 6.9 - obviously my liver was busy with the alcohol for a while.
B. Got into Aqua fit so usual School run then back to get bag ready and a quick Tassimo Americano grande with a dash of cream, slice of Tesco high protein bread with lurpack and a slice of ox tongue.
L. Nothing - cold miserable day. Caught up on little washing that was there.
D. My little spoonfuls of M&S stuff - whipped cream cheese, tuna with red onion and beans, anchovies, Honduran marinated prawns and 1/2 avocado. Wee scoop halo top and a few raspberries and blueberries. Lots of water.

Dentist tomorrow morning and Hubby is coming down with a cold - oh dear.

Evening all. I’m getting this post done while I can still feel my fingers - got home from fantastic weekend break to find heating is on the blink. Its very cold in my sitting room.

Breakfast - treated ourselves to posh hotel breakfast. A little plate of Smoked salmon, mackerel and whipped cream cheese first, then poached eggs, bacon, sausage and mushrooms. Lots of coffee and cream.
Completely stuffed afterwards but really happy I eat low carb now otherwise I know I’d have squeezed in a Danish or toast and marmalade, then regretted it.

No lunch but more coffee

Probably wont eat dinner either but have nibbled on some walnuts and a CCB since I’ve been in.

It’s a hot toddy I need!

So sorry about your Mum. As you know I've been through it a few times this year and had to deal with end of life care for my brother first then quite recently my sister. It's tough going but I found the best thing was to be normal - treat them as you always did and chat about normal things. As someone else said make The most of The time you have. Sometimes it's enough just to sit and hold their hand.
Remember to take care of yourself too. I neglected a lot of my regimes but I'm back on track now. xx
 
Really finding eating a chore at the minute as my appetite is basically non existent but aware of being tired and needing to eat so keep ending up just having whatever I can find as have no desire to cook a proper meal

Ah good - you make me laugh with some of your posts and goodness knows we need some laughter in our lives.
 
Ive had the Naked noodles and agree with you, they are great ( but need rinsing first) I’ll be interested to hear how they freeze. I’ve kept an open packet in the fridge for a couple of days with no problem.

A good thing about Cornwall is that everyone has more than 1 job. The landlord of the local pub is also a gas fitter. As Mr C had nipped off to the pub I sent him a photo of the boiler error message and Mick the landlord popped straight round and sorted it. It cost us a pint on his return, brilliant! Gradually peeling the jumpers off now.
