What have you eaten today? (Low carb forum)

I've used this one before. He has a few Asian type recipes on his site.

Veggie chips - originally I used the strong roots veggie chips but I cant have too many as they're dusted in something. Just do my own now and freeze them - beetroot, parsnip, celeriac, carrot - Morrisons do the fancy beets which make it quite colourful. Thin chips.
Thanks. The food fairy thinks the superdooper mandolin, dehydrator and deep fat fryer may get a run out for veggie chips/crisps for tonight with the pigeon. As long as that doesn't disturb the rugby or football I have given my permission.:angelic:

Ooh, I like the sound of the veggie chips / crisps. Does food fairy think they'd work without a dehydrator, perhaps dried in a low oven? I'm cursing getting rid of my dehydrator now! Too many kitchen gadgets and not enough space!

I'm sure the oven way would be just as hunky dory and being such a good food fairy yourself I have no doubt it would work perfectly.

I've made these before with zucchini so can't see why it wouldn't work with other veggies. The zucchini I dry on kitchen paper for a while before I make them into crisps. (Although since I have a son with a multi tiered dehydrator I sometimes get him to do it in exchange for The many supermarket runs I do for him.

I'm going to copy your brilliant idea about the veg chips, they sound wonderful and something I know that both me and Mr C would like. :)

So, today is OMAD and that meal will be roast chicken, one of Mr C's secret recipe sausagemeat stuffing balls, cauliflower and broccoli with gravy and h/m sugar free cranberry sauce. And a glass or two of red. Yum!

Apart from the wine, drinks today will be water or decaff black coffee
 
Welcome to the thread are you type 1 or type 2? Looks like you’re working at lowering your carbs what no of carbs are you working with at the moment? Some of us on this thread work on under 20/30 others operate under about 100/120 especially when starting out. I started on about 60/80 g of carbs for a few weeks while I adjusted but now 18 months later I’m still sticking to below 30 as it works well for me.

Shelly - I am type two. Yes, I’m working on my carb count, and like you - I’m starting out and 60/80 is more achievable that 20g - which is where I aim for.
 
Oh my. She who must be obeyed has espied a LC Panettone on that site. LC bread and butter pudding could temp me but as usual with this WOE, it is the hope the kill ya:arghh:
I think I would get on with your food fairy! Great minds think alike! I must say, I am tempted by the panettone and the deal of LC BB pudding too. Like I said, forever the optimist! ;)

I'm thinking shoestring fries with a lovely steak......drool! I see some experimentation going on in our kitchen this weekend.

Walked the dogs - Nordic walking (which fitbit saw as 34 mins walk and 34 mins eliptical) and food fairy has the veggie fries in the dehydrator. Swede smells lovely and celeriac nearly done. Just wish I hadn't cleared all the beetroot from the raised beds New Year's Eve:arghh: BLT magically appeared to help me through the rigours of Bristol V Exeter:angelic:

Hi All,

Yesterday we had a fab hilly dog walk and fell into the nearest dog-friendly pub.
I had a 10oz lamb shoulder steak, and half a dozen very disappointing chips that were a total waste of time.
The steak was fabulous though. Simply fabulous. About 2 inches thick

To my surprise I got peckish at 9pm, and snaffled some beef stew and a handful of cashews.
But it was a bit late in the evening for so much, and it took a while to get to sleep.

Today has been nothing til 3pm when I made the DD chicken garam masala with lots of cream. There may be some 70% later, but that is probably all I will need.
 
lots been really hungry , bacon egg mushroom tomato breakfast , veg with minced pork which hubby didn't want from yesterday as went to grandson's 7th birthday party so he had buffet food , then I've just had mixed veg chicken breast in garlic and butter followed by strawberries and blueberries with double cream and a small bar of dark chocolate :)

Off walking at 7 along sea front as we do every night :)

Got back very late from holiday last night as my daughter sprung a surprise visit for the last night and day so we wanted to spend as long as poss with her before she returned to Uni.
So here’s yesterday’s food:
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: cold bbq chicken with leafy salad, one cherry tomato, cucumber and duck scratchings followed by SF jelly and 2 x LC lemon shortbread biscuits.
Mid afternoon: too busy socialising, so just sipping on Diet Pepsi.
Dinner at Bella Italia: I had their new butternut squash ‘lasagne’ again followed by a coffee with cream.
Ooh! How was the butternut squash lasagna?

It was amazing!!! Anybody have any ideas whether this sort of recipe could be re-heated? The cooking time means not doable for work in the week unless I could make of a weekend and warm up of a morning in the microwave?

Dinner - can’t lie, no idea yet. Gin has been poured - only ever have one or two and only been a couple of occasions. Not had a ‘real drink ’ So to speak since diagnosis as feel like I can’t or shouldn’t. Even on holiday I was very restrained. But after almost a whole day of coursework I’m totally in the mood for a few drinks and an unwind. The music is on, the crazy dancing around the living room will soon commence so not going to punish myself, going to try and enjoy my night - and my promised lie in in the morning!
