What have you eaten today? (Low carb forum)

Very much so. I think it's a little strange that I'm getting better BGs when eating more carbs. How are yours doing?

Much better this week after that stint of IF. Thank you. I was v hungry all the time though, so got to find a happy medium now between the 2.
Strange that eating more carbs is better for yours, sometimes I just give up trying to understand it. I think our bodies are constantly striving to keep the status quo, so if we make drastic changes it strains to get us back to where it was. No scientific basis for this, just my musings.
 
Well I have had a go at making these now and they are OK. Not perfect, but OK.
Going on the ingredients and baking instructions I baked as follows (my sister in Texas uses ground flax meal and water to replace eggs - 1tbs ground flax meal to 3 tbs water, mix and pop in the fridge for 15 minutes).

75g sugar free coconut flakes
15g almond flour
10g flax seed flour
50g butter, melted
3 replacement eggs
1/4 tsp salt
3 tsp stevia
1 teaspoon of vanilla extract (if you like)

Mix dry ingredients, add the vanilla extract
Then mix in the 3 replacement eggs
Now mix in the melted butter

I put into 12 silicone muffin cases and put in the oven at 160C fan for 15 minutes but found that not to be enough.
So, put back in for another 10 minutes then checked, put back in, turned oven off and opened the door a bit.

They taste fine and I suppose would benefit from a bit of melted 100% chocolate but didn’t do that.

That's brilliant thanks! I will have a go, but with eggs, when I've eaten all mine!
 
Have had a little wobble - carb treat sneaking back in - jacob cracks/chocolate/banana milkshake/Oreo thins/crisps- just one or two - think it’s cold weather n family snacking.
Also as I have lost weight starting to feel like an expert n treating myself or thinking it will come off - is missing the truth - that I’m ill - I’m dieting because my health is so bad. (Just trying to get back on track)

Lunch - Chicken bone broth
Dinner chicken soup

In the tale of my haunted weighing scales - Monday they said I was 12.8stone - but clinic confirmed I’d lost weight to 11.11(75kilo)
Stood on scale today said 69kilo - so lost further 6 kilo 11Lb in a week - thought I was weight loss queen - until I stood on them again for the gloating buzz - they said 12.6stobe - realised they were probably stuck at my daughters weight this morning ! 10.8 is her weight !!
Positive is - I did s farm foods shop like I was skinny - so it was a healthy shop.
 
Afternoon all or evening for when most will be reading this. Amazing light today and postcard perty if chillyMcchillyface. Hope each personage has had a good day.
Assuming OMAD means all food within an hour I managed it. Tea and cocoa with soya milk and cream until afternoon. By 16.00 hrs there was a real danger of eating my own arm so I fridge raided a slice of tongue and some of the cold Jacob's ladder. Turkey (last of Christmas bird from freezer), mushroom. cauliflower (florets due to Julie's avoiding cauliflower) and celeriac "pellets" in a curry within the hour. Pleasant enough.
Edit: VAR showed I was just on the line for satisfied which is "a result"

Breakfast: Homemade granola and hi lo toast with butter
Lunch: Two small slices of sourdough with butter, cucumber, tomatoes, cheese stuffed peppers, mixed olives. Two giant strawberries and cream.
Dinner: Lamb shanks with celeriac, sweet potato, carrots, sprouts and peas
Snacks: 85% chocolate of course!

Today I found out from another thread that I can receive free prescriptions if I take medication for diabetes!!! I had no idea:banghead::banghead:
 
Wow, this must be the most prolific thread on the forum.

What my butcher calls a 'mixed grill' - little bit of lamb, little bit of steak, little bit of pork and a couple of his best sausages - with mushrooms fried in butter and garlic then finished with a splodge of double cream.. Followed by vanilla chia pudding
Sounds great (aside from the mushrooms - I’m allergic) and glad your FBG is improving.

Quite hungry today. Lunch was M&S Serrano ham and manchego cheese rollitos. Didn’t quite hit the spot so followed up with a bag of their pork crackling and 2 mini pots of Philadelphia. Dinner was Arbroath kippers with butter. Delicious.

Off to a double Pilates session shortly - hopefully back before snow arrives.

Until I started viewing this thread I had never heard anyone utter the phrase hit the spot. Took me ages to figure out *** you were all on about. Double Pilates? Do they bend y'all into shapes like those balloon animals by session 2?
O/T Just found the original video of Always on my mind by the Pet Shop boys - probably the best thing I have seen in at least a decade.Find me an LC recipe that good and I will be in paradise.

Evening everyone. Woke up with the desire to fast - perhaps I’d dreamt about it? So nothing to report other than black coffee and water
