What have you eaten today? (Low carb forum)

Gah! I went to bed last night feeling 'not right' and have woken up this morning full of cold. I don't get colds very often but they usually hit me hard leaving me with chest infections and, on one occasion, pneumonia - so instead of my planned fast I will be treating myself like a delicate little flower until all danger of secondary infections is past. (Can you tell that I HATE getting ill??)

So today....

Breakfast: A whole avocado with a squeeze of fresh lime juice (this combination raised my BG by 2.1 units at 2 hours!!!

Lunch: 30g mixed nuts (mix includes Brazil nuts, almonds, pecans, walnuts, hazelnuts)

Dinner: Prawns, mussels, clams casserole thing (from Iceland) with konjac spaghetti.
 
Just while I think of it a friend cooked a fab Frittata for us last week. Recipe from BBC Good Food site, 2g a portion. Its called Bacon and Ricotta oven baked Frittata. Sorry dont know how to post link but you can find it I’m sure.

I just grabbed that recipe (thanks @PenguinMum !) for Copy Me That. PM, are you on CMT? If you are, we could add each other to our recipe circles if you liked!
 
@Chook I’m so sory you too got sick!! It’s been running around this forum like wildfire.
ve been doing my version of the same feeding thing lol except it’s involved trying really hard not to eat honey toast. I’ve stepped up my neti pot use to help the sinuses, and about all I can do for my lungs is get exercise in fresh air, play my flute, and pray! I’d use a steam humidifier if I weren’t on vacation. And while on vacation, I’m not testing much. Not beneficial but it’s just not happening.
 
I love this word “lurgy”, which I’d never heard nor read until I saw it here. Is the “g” hard or soft?
The word is so... evocative. Germs partying, lurking, creeping, being gross, in my personal body. Ick! :hilarious:

@Chook sorry you’ve caught it too. It’s odd that it really does seem to be doing the rounds of the forum. I feel guilty as I think I was the first to get it mid Feb and passed it through the ether to @Goonergal - then it seems to have gone viral, quite literally!
 
Finished eating for today so an early post from me as I’m off to yoga later.
Breakfast: Flaxseed bun toasted topped with a slice of Gouda and fried egg.

L: Smoked haddock on a bed of spinach topped with poached eggs. A lot of protein there and not enough fat even though I put butter on the fish. Never mind, it was lovely. Choc chia pud a bit later.
 
Posting now as my food today is done
B: usual peanut & chocolate Protein bar with coffee
L: 3 sriracha hot wings and a plain chicken breast with 50g cheddar and mayo
Straight from works it’s 2hrs of coursework to complete (deadline is next week and I’m miles behind :banghead::banghead:) then off to the pool again. My mom is coming with me tonight as she wants to start swimming regularly again. Now to overcome the hurdle of not leisurely swimming gossiping with her and make sure I get my usual lengths done :angelic:
 
Hi all.

Two meals today. Lunch was M&S Serrano ham and manchego cheese rollitos and a bag of their pork crackling. Also had tea with a very large pot of cream at a lunchtime meeting.

Dinner was 2 Waitrose free range Cumberland sausages, 2 fried eggs and 3 rashers streaky bacon

Off to Pilates shortly followed by a mad dash to Ikea.
 
Lunch today was a 90 sec bread monster - I replaced about a quarter of a tablespoon of almond flour with chia seeds - came out a bit biscuity but tasted good. Topped it with cream cheese and a host of salad items, jalapeño and some mayo.

Dinner; a slow cooker hotch potch to use up some pork mince lurking in the freezer. A few veg, spices, herbs, and some bone broth.
 
Usual tea and cocoa until 14.00 hrs. Regular mackerel fillets and avocado salad plus plenty of chia seeds for lunch. Evening meal has been salmon fillet, 2 portobello mushrooms and some mayo. There is the roasted rhubarb - first this year - and whipped cream to come. @Chook hope the lurgy soon passes but hugs until then. @BibaBee thanks for the nudge to use the rhubarb before we have another bonfire - one root is very close but survives them - last one was Feb half term.
 
Hi sorry I am so useless and technophobic I wouldnt have a clue how to do CMT lol. Sometimes I just write recipes from here into my Diabetes Book. See told you I am a dinosaur!

When I clicked 'Agree' I didn't mean I agree you are a dinosaur but that I do the same as you. I've got a whole notebook dedicated to recipes from this forum and another one for recipes from everywhere else. The one for the forum is nearly full up.

Thank you to everyone for being generous with sharing your lovely recipes and meal ideas.
 
@Chook Sorry to hear about your yucky lurgy get better soon.
@Goonergal your Ikea habit is getting serious I’m convinced it’s to do indoor walking out of wind and rain it must be at least 20,000 steps getting round the bigger ones! Enjoy Pilates and @DJC3 enjoy your yoga

@ianpspurs dont burn the rhubarb! I’m lovingly caring for mine which is now about 3” high! Bit more sun and warmth needed
Very busy day today out and about catching up so just stuck to tea and coffee until dinner
Dinner chicken, mushroom and cheese two egg omelette served with green salad and buttered lc seeded crispbreads followed by sf jelly and yoghurt.

That root is one of 3 that produce huge amounts - we don't burn it as such it gets scorched by bonfires at times. It appears to be indestructible. ( That rhubarb fool had very little cream, I had less than 40 mls lightened with beaten egg white, but it was so sickly. How do people eat much of that stuff?)
O/T If anyone saw escape to the country today you saw my village (Bluntisham) and the last house was about 1/4 mile from my house

@dunelm did you add extra liquid for the chia seeds, or was it fine without. Sounds very tasty!
Very cool to have the show shooting so close to you! @ianpspurs I have a problem with cream I readily admit. It’s so much like ice cream, which I also have a problem with................
