What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: chicken soup with toasted 90 sec mug bread followed by Greek yoghurt and raspberries.
Mid afternoon: raspberry PhD bar and black coffee.
Dinner: duck and mushroom Chinese style stir fry followed by SF jelly, cream and LC chocolate granola.
 
Breakfast : Slice of Bergen bread toasted with a generous helping of liver pate. One clementine.
Lunch : Left over pork sausage, chunk of Brie and a couple of slices of corned beef
Dinner : Fried marinaded pork loin medallions on a bed of broccoli rice.
Supper : Handful of peanuts and another chunk of Brie.

All washed down with mugs of tea.

6yo completed her first Taekwondo grading today. :D
 
Gah! I went to bed last night feeling 'not right' and have woken up this morning full of cold. I don't get colds very often but they usually hit me hard leaving me with chest infections and, on one occasion, pneumonia - so instead of my planned fast I will be treating myself like a delicate little flower until all danger of secondary infections is past. (Can you tell that I HATE getting ill??)

So today....

Breakfast: A whole avocado with a squeeze of fresh lime juice (this combination raised my BG by 2.1 units at 2 hours!!!

Lunch: 30g mixed nuts (mix includes Brazil nuts, almonds, pecans, walnuts, hazelnuts)

Dinner: Prawns, mussels, clams casserole thing (from Iceland) with konjac spaghetti.

I need to try the Konjac spaghetti. Not sure where to get it from.

So sorry to hear about your cold, @Chook. Hope you can some rest and can nip in the bud before it gets bad.
@zauberflote -- Good to hear you are slowly feeling better.
@shelley262 and @Goonergal -- Agree, it definitely gives you a good workout to go shopping at Ikea. I dare anyone to get in and out in less than 30 minutes -- and this is if you don't have a look around.

Today's food ...

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: Nothing.

Dinner: Lamb's lettuce with Ranch dressing, Gouda and three baby tomatoes. One very small avocado. Two scrambled eggs with mushrooms. Keto Pad Thai. 7.5g of 85% chocolate. One glass of red wine.

Today was a rough one, nine and a half hours of work left me frazzled. Ended up doing OMAD but probably not the best...

Breakfast: CWC as always
Lunch: Small chicken salad with some cheese, had to leave some because I didn't notice the mould...
Dinner: Peperami around an hour after the late lunch

Got hit hard with the nostalgia and regret as the boss brought in some burgers and fries along with some garlic bread with cheese and watching him and my workmates eating and having to refuse it all slightly broke my heart. Set off my anxiety about my condition and WOE again even though I really loved my salad besides the cheese but still with it being early days this hit me like a sledgehammer.
 
@zauberflote Glad you are feeling better. Thank you for your kind words, did manage to finish the tapestry. ( approx 12 years in the making) Colors were correct, amazing how different they look in artificial light. Now need two pieces of backing fabric. Have a suspicion that stitching is not helping my RSI problem in shoulder, so its likely to be the last ever.

Breakfast, the last of the mixed granolas. with milk, out of cream. umm...whats for breakfast tomorrow?
Need to make more. Going to try a different recipe.
Have also found a recipe for low carb bread that looks wonderful. Shame it doesn't give the nutritional details.
Off to buy ingredients for both tomorrow. before going to the dentist. Wish me luck. Not very good with dentists, had some bad experiences and some very expensive ones.
lunch: Slice of burgen toast with a tin of mackerel in tomato sauce. 2 tiny clementines, Chunk of cheese and slice of ham to increase protein and calories. Coffee.
Dinner: 100g roast chicken, 80g potatoes, 40g carrot and 80g french beans, splash of gravy. 100g yoghurt and 25g berries. Glass of water and one of wine.
Supper: couple of chunks of Comte, cup of tea
 
@SlimLizzy congratulations on the tapestry!!!! You deserve a prize for fortitude. Give the shoulder a break - I had to quit knitting around age 40, same thing. Best of luck at dentist :)

Lunch getting sick if the rich broth but it all has to go because we’re leaving tomorrow. 2 broth with olive oil and pink salt
Supper spinach (raw, took forever!), cheeses, leftover chili w avocado and sour cream and had enough left to freeze for next visit next month!
Watched a video from s-i-l’s Antarctica cruise. Truly beautiful starkness. What a contrast with the ship.

@Caeseji - Could you have had a burger pattie, without the bun?> If it feels that bad, maybe try a few fries? If they're from McD or the like, they're so nothing-ish, in terms of flavour, that tried I find them no issue to ignore.

We all get these days from time to time. Mine tend not to be with the LC aspects of my way of eating, but sometimes I just need to stick my tongue out and make a vile face at gluten-free.

It'll pass.
 
@dunelm did you add extra liquid for the chia seeds, or was it fine without. Sounds very tasty!
No, I didn’t add any extra liquid. It turned out a bit more like a biscuit but was OK. Next time I will soak the chia seeds in a dash of water first and then add all the other ingredients. Once I have it right, I want to then add seeds to make a more wholesome 90 second bun.

I buy mine in Holland & Barratt “Slim Pasta” when they have their penny sale on (buy one, get another for a penny). I get slim pasta, noodles, rice (I do prefer cauliflower rice though and noodles made from courgettes but the Konjak is very convenient).
Most supermarkets now sell Konjac products - look out for “zero noodles” , “bare naked noodles” that sort of thing. You can even get it on Amazon if you don’t fancy shopping.
Hit google for what the packs look like.

CWC? - Chicken With Chips?
It’s a challenge, when so called “goodies” are brought into the workplace. Depending on where your boss gets the burgers from they should be able to do you a bunless one - or, you could strip off the bun and eat the rest. Lettuce leaves are good for holding a burger.

My grandson (aged 9) wanders into a well known burger supplier and just says, “ can I please have two burger patties, with cheese, in a box, with a knife and fork”. When they ask him if he would like say, tomato or a host of other options, he just repeats the sentence - very funny to watch and he always gets just the burger patties and his cheese.

They taste of whatever you mix with them really. Just open the packet, drop into a strainer, rinse with cold water and stir into whatever you are making. You can ping in the microwave for a minute if you want.

Breakfast: avocado
Lunch: 30g nuts
Dinner: Depends on how much energy I've got at the time. I'm defrosting 500g of lamb mince it will be either Moroccan spiced lamb burgers with crumbled feta and salad OR (less effort) Moroccan spiced braised lamb mince with crumbled feta.
 
@DCUKMod Ooooh I cannot blame you there, my Grandma on my Mum's side is gluten-free and so is one of my friends and that is a rough time. I think it's because I'm like three months in so the lingering cravings are still there but it passed and I loved my salad so I'm happy.

The burgers were from the usual street side burger place so they would be topped up with filler. Honestly I can go without or I would rather be sure they are proper patties before indulging. Probably should have just got a chicken kebab or something! Thanks for the advice!

@dunelm Ahh it's my code for Coffee With Cream that's all and like I said to DCUKMod, I wasn't sure what was in them but your Grandson is all kinds of adorable for doing that. That garlic bread looks absolutely delicious, I am going to have to make that someday, sounds BETTER than the takeaway stuff of the past.

More wholesome is right! My problem with my first (and only, so far) was just how blah it was. I think I pretended it was good, but have since made another pan of my brown bread, which may be my benchmark for satisfying lc bread. For me it may turn out to be more practical to spend the time to whip up a long-lasting batch of the bread, which keeps very well.
