What have you eaten today? (Low carb forum)

Where I live in Bundaberg in Queensland the fires are mostly under control around the area where our block of land and shed is on.

Where I am now in West Australia there are fires but a lot further east out in the middle of nowhere really, but none in where we are staying on the coast.

According to the environment minister 30% of the Koala population have died in the NSW fires

Another volunteer firie died yesterday fighting the fires in NSW when the truck overturned.

It's not going to get any better until we get loads of rain such as it's raining pick and pick handles, cats and dogs, buckets, for several weeks to help put the fires out.

Poor koalas ( and other wildlife) a horrible way to go and so sad to lose another volunteer fire fighter.

@DCUKMod I’m chuffed to bits: I successfully made clotted cream in the IP. @Goonergal beware if you make this, it is seriously delicious.
After a day of high BGs yesterday, today’s been a lot better.
B: Scrambled egg on a slice of Emmental and 1/2 avocado.
L: Out at a pub, sometimes it’s hard to know what is the best lc option. Went for a Cajun salmon salad (sans spuds). It was odd but very good - the salad was a bit of rocket with Brie, Parma ham and olives with garlic mayo. Bg stayed the same pre and post. Soda water to drink. Couple of strawberries when we got in with the new clotted cream.
D: Pork and mushroom stroganoff with cauli rice.
Middle daughter and her partner are home and the grandchildren are staying over again so it’s a noisy household.

It's seriously good, isn't it? Did you have much runnyness (is that even a word?) at the end?

Did you do the whole process in the pot, or PIP?

I keeps really well in Kilners, we've found. I tend to use smaller jars so that as much as possible of the "crusty" bitscan be preserved intact.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: cheesy scrambled egg followed by Greek yoghurt, raspberries and macadamia and coconut keto granola.
Mid afternoon: birthday cake phd bar and black coffee.
Dinner: cocktail sausages, coleslaw, cauliflower and broccoli salad and cheesies followed by a mini mince pie with a large dollop of cream (12g carbs each, I had forgotten I bought these! BS before dinner 4.8 with a 5.3, 2 hours after :))

Yes agree, it’s fab, I made everyone who passed through the kitchen try a little spoonful, Young and old, they all loved it and most didn’t even bother having a strawberry with it.

I don't do the Kilners in the IP. I keep thinking I'll try it, even with part of a batch, but as yet, it just hasn't happened.

I usually do it in a stainless blow, as wide as I could find, to still fit in the pot with the require space around. That way there's more "crust", than using something narrower.

Now, please don't ask where the bowl came from, as I can't remember.

I used a stainless steel pot too - I got some last year from Lidl (actually I think it was you mentioned them when they appeared in the middle aisle). I didn’t use the biggest pot but will do next time - as you say, will give a nice big surface area to crust.

Morning BG 6.3 so lemon and ginger tea, no breakfast.
Outside still collecting logs and removing the useless brush. So many twigs. MrSlim called a coffee break, but I decided on early LUNCH as It was 12.30.
CWC, ham, pâtè, lettuce, cucumber, few radish and half an avocado.
Tea in the afternoon. And before dinner
Dinner was reconstructed rabbit casserole. Tonight with cabbage. One coffee macaroon. 2 glasses of pink plonk. Later,
While waiting for kettle to boil, had small piece of cheese, literally a mouthful. Killing temptation to have second macaroon by eating something else. L&g tea.
 
When I felt a bit better last night, I had some bits of cheese (very thin slivers) but left it at that. Didn't check BG before bed but FBG at 7 am was 9.3, so it was probably pretty high last night.

Took some meaty things out of the freezer to defrost overnight so my brunch will be a chicken leg, probably done in the AF. Dinner will be some beef ragout - tomatoes and onions in it, of course, but pretty meaty. I really have to use up some of the ready cooked things from the freezer, so can't go completely carnivore just yet. I have so much ready cooked compared to raw meat in the freezer that I can't easily find the raw stuff - other than fish, which has its own drawer in the freezer - even there I noticed some ready cooked bags of something or other.
 
Morning All. @Annb I hope you feel much better today.
Today have had slice HiLo toast from the freezer, thick butter, large tea.
We are going to the coast for a long walk so there is a possibility of fish and chips which is small cod for me and both for Mr PM. Tonight we are having a Thai takeaway which will be something stir fried for me and pak choi. We may or may not stay up if tv is interesting and we’re not too tired but we are not big revellers on NYE.

Good morning (oh, its afternoon now)

Firstly @Tipetoo and @annabell1 - on most of our news programmes we are seeing the awful devastation Australia is suffering with these dreadful bush fires. I hope both of you are far away from them or are able to stay safe. (The picture of the little koala bear drinking water from a bottle had me in tears.)

@Brunneria - thank you for your really helpful post - its given me a lot to think about. I can empathise with you about the firecracker knees - I've got the same and a firecracker thumb (which is pretty weird). I really found the nightshades connection interesting as I eat quite lot of the peppers, aubergine and tomatoes, especially in the big salads I've been eating recently. I've also looked at my food diary and found that one or twice a week I've eaten breadcrumbed quorn products (carbs have been counted but they are a recent introduction to diet) AND I've recently started drinking coffee with caffeine (one large mug first thing in the morning) which Dr Google says can contribute to arthritic pain.
( @Brunneria and @Goonergal Do you get a buzzy feeling in your hands with your arthritis - feels like a very mild electrical current running through them all the time? )

@Rachox - I wish I could lose some weight, I really do. When I first started keto it was after five years on ever increasing insulin injections and over the course of those five years I'd gained five stones - a stone a year. After discontinuing the insulin and starting keto I lost those five stones quite quickly but it stopped there and I've never permanently lost any more. :shifty: I'd love to permanently lose another 3 stones but I've accepted its never likely to happen.

@SlimLizzy @Tipetoo and @Lotties - Mr C's favourite way of eating Marmite is stirred in to a fairly stiff egg mayonnaise and I have used it a few times as a flavouring in a vegetable casserole.

@Goonergal - OMG - please don't say that!! I eat a lot of cruciferous veg and they would be the hardest to give up!!!

I think that I'll discontinue the caffeine and gluten immediately and then start an exclusion type diet after we've got this next traumatic weekend safely out of the way. (*This Thursday, Friday, Saturday and Sunday morning are likely to see me hiding under the table with a bottle or two of gin and a big tub of icecream!!) So, first to be excluded will be the nightshades (which I've just deleted from my next Asda order), then my beloved cruciferous veg. Then IF - and its a big IF - those exclusions don't work then I'll try removing cheese from my diet as Dr. Google says it can cause inflammation. :eek: Do you think a month's exclusion (before reintroducing) would be enough before moving on to the next one?

*You may remember that several people were looking to find free board and food during MIL's funeral weekend (Thursday to Sunday) - well, guess what, they've invited themselves here!! Just what I need.
I'm not near the fires although they are around me. I have a brother down south he is safe but on watch. it shocking the fires and been sad two days of 3 people being caught up in the fires and dying. The sun has been red here for months and can't believe we have had no real rain its so dry this is a photo and video about 26kilometres from where I live.

That looks absolutely horrifying. Just seen a news item about people taking refuge on beaches. How terrible for them and for the rest of the Australian people having to see their homeland and going up in flames like this, and knowing that lives have been lost. And 26 km doesn't sound so far when the fires can move so quickly. I hope the wind keeps blowing away from you and you keep safe. I pray for the safety of you, yours and all Australians. Thoughts always with you.

Still waiting the full arrival of this cold - just nosebleeds and sneezing so far. With any luck it won't go much further. A coastal walk followed by fish and chips sounds heavenly. Had my chicken leg - done in the AF and it was very good. The ragout is well defrosted and ready to heat up. No hassle today. (DIL now has hassle - her car broke down outside the house yesterday - just wouldn't start but we don't know why. Just as well the Kangoo survived the last few days and will be able to be used for her business needs at least.) I usually don't go to bed until midnight, but I might make an exception tonight - nobody here does the New Year thing any more - not in my age group anyway, nor in the next generation, but I expect older grandson might. It's his kind of thing.

Happy new year and wishes for good health and happiness for 2020 to all forum readers (that's you too, Ianspurs. I know you are lurking in the wings.
 
Oh @annabell1 - that is horrible. Please keep safe!

My last post before having a little break (planned this time). The Mr C's offspring from Kent are coming to stay for a few days. Wish me luck! Two of them are having to sleep on sofas in the lounge - I hope they like dogs. Last time I slept in the same roof as all three dogs I was woken up multiple times by cold wet noses touching me and the middle one just stands there staring for hours.

I'm trying to work out a menu for the four days that my visitors have said they are staying that incorporates low calorie, low fat, salt free, vegetarian, low carb, no gluten and no nightshade vegetables.:banghead: TBH, its me thats the really awkward one.

Anyway.... I don't know if its the sunny weather or my avoidance of all things nightshade and gluten but my joints are feeling a lot better today. We took the Christmas decorations down this morning, had a bit of a spring clean before the visitors turn up tomorrow, so the house is all back to normal for a few hours. I really love the decorations when they first go up but my love affair with them lessens each day until I'm glad to see the back of them for another year.

These are yesterday's and today's menus:

Yesterday:
B: 100% mozzarella chaffle with almond butter
L: A few small chunks of various cheeses (in an effort to reduce the cheese mountain in my fridge)
D: A huge salad with cider vinegar and EVOO dressing with cubes of cheese and chopped up Quorn cocktail sausages (don't think I'll bother with those again)

Drinks: Coffee with caffeine at breakfast then water the rest of the day with a glass or two of Christmas red wine (along with the cheese I've also got my own personal Christmas wine lake - which will come in handy over the next few days)

Today:
B: Half cheddar / half mozzarella chaffle with a few baked beans and a couple of fried eggs
L; Four small chunks of a variety of cheeses - the only one I didn't like is a smoked one
D: Crustless quiche with salad - I've made the quiche with a hard goats cheese and roasted garlic cloves and small roasted butternut squash chunks - Mr C thinks its a bit strange to make quiche without a crust but I said I've doubled the filling to make up for it. :smug:

Drinks: Decaff coffee until lunchtime, plenty of water and a glass or two of red with dinner - then probably Prosecco to toast the New Year in.
 
Ooops - I forgot the most important thing - I hope everyone enjoys their New Year celebrations and has a happy and healthy New Year. xx
 
@Chook - I had to like that post. I probably shouldn't but it made me laugh. Your post cam on the back of an email from a friend in Ohio who reckoned nothing could be stranger than her family and I'd had a laugh at their antics. The brother who can't come back from the USA though in your post certainly takes the prize for strangeness.
@Annb - hope your legs are recovering. I've had to work hard on mine to relieve the tension in the muscles. Like you, I know my limitations but your head sometimes overrules common sense. Thanks for the hugs @ziggy_w.
Got a couple of days to take care off as I've been busy with the year end clean. Last batch of washing is drying in the pod currently.

Peaceful today, no swimming and no reason to go out.
B. TAG with ADOC. Slice of skinny bread with Dairylea and a slice with pate.
L. Nothing.
D. Usual campari and soda. I got the most delicious rack of pork in M&S and it was as delicious as it looked. Had it with a creamy apple sauce, green beans and a mini cob. Has yet another LC creme brulee with raspberries and blackberries.
