What have you eaten today? (Low carb forum)

Getting used to Mum’s kitchen now, not wasting so much time looking for things!
Breakfast: strawberries and cream with black coffee.
Elevensies: black coffee with peanut phd bar.
Lunch: ham, pork scratchings and a small leafy salad.
Dinner: lamb Balti curry, made with the left overs from Sunday‘s roast, with cauli rice followed by SF jelly with cream.

Will your GP accept Mrs Chiro's diagnosis and prescribe for it? Maybe a Chiropractor could help me.

Sorry to hear about your Le Creuset disaster - if soaking in biological washing powder solution doesn't work then maybe try cooking rhubarb in it.

what do you think a doc would prescribe?
Genuine question. the only thing I can think of would be painkillers, and I don’t like taking them, unless it is v occasional and because I can’t sleep. My experience is that if things hurt it serves as a very good reminder not to do more damage. Painkillers just dull things and then I use the inflamed, annoyed body part too much, and slow the recovery.

This is the first chiro who I have found who will deal with arthritic ol’ me. Most of them seem to steer clear.

Had my goulash - about 8.30 - tasty but it didn't taste as I expected then I remembered - I forgot to put the garlic in! Still, started with a small bowl and then went back for another small bowl. Lots left for another one or two meals. I also found the end of gammon that I boiled last week and cut that into chunks and added it.

Neil had a letter today to say that he has to keep shielding until the end of July but he can go for a walk, if he wants to.

Elder grandson, who was in Oban at college and had a flat there so stayed where he was for the duration, is being evicted because the flat's owner is coming home from somewhere abroad and has to self isolate, so he needs his flat. It may not be very fair, but I don't think he had a proper tenancy agreement, just a kind of student, unofficial kind of thing, so there's nothing he can do about it. So grandson has to come home and has arranged with Calmac to allow him to travel on the ferry. (I think he has to prove that he does live on the Island.) There's not much space in No 2 son's house so he may have to sleep in the old caravan in the back garden. He's not happy - he didn't want to come back to the Island - actually said, at one stage, that he'd rather be homeless on the mainland than live on the Island. Changed his tune now, when he actually is being made homeless! The caravan should be allright at this time of year.

The mackerel hot pot did me for 3 very decent lunches and the cauliflower cheese bread was great toasted with extra butter for breakfast for a few days. I love cooking ahead so I don't have to think about each meal.
Dinner yesterday was a omelette wrapped around some butter and olive oil fried courgettes. Did a big one so boys had majority of it and just had a few bites.
Today had salmon baked on top of creamy leeks. Was quite a lot of leeks so thought might spike, but no only went up .6
Have managed to persuade GP to let me have HbA1c (or whatever it is called) as part of some other tests. Really interested to see results as it will be 4 months since diagnosis and 10 weeks since very low carbing.
 
@Brunneria And, FINALLY, bless her, I have a diagnosis I feel I can trust, which is:
- arthritis, not the problem. Current regime of bone broth, collagen, glucosamine and chondroitin, vit C, magnesium, potassium, all doing a good job.
- pes anserinus bursitis, with a lot of aggro in that area (inside knee) and spreading up through quads
- adhesions in the quad tendons
- bursitis on the femur above the knee (that explains the swelling then!)
- tendonitis of quads and hamstring

Huge relief! Because is someone has actually identified the problem, then it can be tackled, can't it?

Much sympathy for you Brunneria, have had buritis and tendonitis and adhesions, know how painful those can be although mine were in the shoulders and elbows. In the knees possibly feels worse. Hope the new exercises help and bring you some relief.
I did find ibuprofin 10% gel helped, especially at night.

When I can get them I buy 2 or 3 at a time. I rice the caulifower and freeze it in 200g bags. The celeriac gets mashed or cut into chips and frozen in individual portions. I believe celeriac is seasonal but luckily a neighbour is a wholesale green grocer and is still managing to get them. But I might try the baked recipe that was on here earlier with one of them.

2 glasses of wine in the afternoon, unsurprisingly followed by a little doze on the sofa..
dinner. mince and green beans, both from the freezer, the beans are in a kilobag which apparently contains only four portions !! Perhaps if that was all you were having...sprinkled some parmesan on the mince. Defrosted some frozen strawberries and nearly drowned them in cream.

Just caught up with all the posts, can't believe it's been a week since I last posted.

@Rachox -- Hugs and my sincere condolences. This must have been quite a shock for you and your mother.

Won't try to post meals for the missed days, so here is today's food ...

Breakfast: A double decaffeinated espressos with cream and erythritol.

Lunch: Half a DD keto roll with h/m mayonnaise and cheese. Tuna sashimi with soy sauce. Some salad olivieh.

Dinner: The other half of the keto roll with butter. Sous-vide ox cheek. H/m low-carb mousse au chocolat. Some dry red wine.

Morning all. Got distracted by a work related project last night so no time for posting.

During lockdown our Department has a fortnightly Teams catch up which is not work related - attempt to recreate kitchen chat remotely. Really enjoy them. We take turns (in pairs) to kick-start the conversation. Given that this has been going on a while now, the person I’m presenting with and I were a bit stuck for something original. We found that we both like photography (she’s based in Wales so not someone I generally spend much time chatting to, so we hadn’t known that before), so we decided we’d each pick out 20 photos that say something about our lockdown experience and put them into a rolling presentation. Given that I have literally taken thousands of the things on my walks, that was quite a challenge - and I’ve cheated by making some collages to include a few more :D tomorrow is presentation day!

@Brunneria sounds like you had a very dramatic day, but glad you have a proper diagnosis and a way forward
@maglil55 hugs for the recurring virus. Similar here but not as severe as you, but my BG is ridiculously elevated this week, with no obvious symptoms

So on to food. Very hungry yesterday. Ate some salami and chorizo for breakfast, with Awfully Posh pork crackling later in the morning. Some cream with cocoa nibs in the afternoon and then some air fried chicken wings coated in Parmesan for dinner. They were fab.

Last time did buy two cauliflower and one large celeriac, but its not only availability that can be a problem. Its also neccessary to consider weight and volume, as can only manage about two carrier bags at a time on my bike.
How do you prepare and cook frozen celeriac chips? They would be very useful.

Those wings look stupendous, @Goonergal . Whilst I formerly always felt chicken wings were a waste for anything save the stock pot, the AF has transformed that view for me.

We had cold cuts from our Sunday lamb joint. MrB was concerned there might not be quite enough, so supplemented the fare with mustard coated ham, and cheese, with our salad, mayo etc. The result was enough lamb cold cuts left on the platter for a lunchtime sandwich for him, so all good.

Hi all so a few weeks ago had to go into hospital in Sydney for a sigmoidoscopy initially was anxious about traveling but figured Australia has been ok with low covid-19 incidents. I caught a train in and hardly anyone on the train but got good results scope showed improvement since my flare and scope in November so new treatment seems to be helping so continue with treatment and see GI in 3 months and another scope in 6 months.

My BSL has been ok I'm back on 60mr diamcron and still on januvia since steroids November but I'm also not really eating LC but I'm planning to start next week back to LCHF/PALEO. I also joined an online 28bySam exercise and meal program.

Anti inflammatories? I've been prescribed a ketoprofen gel which helps a bit. I also have Amitriptyline so I am able to sleep.

Maybe a conversation with a good pharmacist could be useful. My lovely local pharmacist is much better for medication advice than my doctor.
 
My BG is very erratic this week! Went to bed on 5.2 last night and FBG was 16.3 this morning - checked again and it was 16.2 - must admit I feel a bit weird this morning - sort of slightly drunk feeling and very tired. We have decided to shelve our plans for today and stay in. Might go back to bed for a bit.

Breakfast: scrambled eggs and kimchi
Lunch: Actimel drink
Dinner: Linda McCartney burger and vegetable bake (courgette, aubergine and tomato)

I won't take them, whether steroidal or non-steroidal.
When I was first diagnosed with arthritis, I did a fairly deep dive into the available information, and came to the conclusion that they are a very double edged sword, and there is a fair bit of evidence that while they have some apparently beneficial effect, people who rely on both pain killers and anti-inflams to relieve arthritis end up deteriorating faster, and end up worse. A shorter journey to joint replacement. Not something I want to hasten!
It bothers me a great deal that healthcare professionals throw them at people like pacifiers, rather than actually looking for the cause the inflammation.

Turns out I can control inflammation quite effectively by carefully controlling activity levels, and with diet choices (by being carni, and avoiding gluten and grains, the nightshades, and all the other vegetable foods that trigger my inflammation) and by using turmeric in the odd drink.

Today's food will be
B: Bovril and lc hot choc
L: chicken soup
D: a turmeric laden curry ;)

I tried taking Ibuprofen both as medication and as a cream to rub into joints but neither had any effect on me, so I stopped. I was offered surgery on one of my knees, but was unable to get answers from surgeons about the prognosis or management of recovery, considering that other parts were/are worse than the knee being considered for surgery. So I didn't go for it. I just use the occasional half dose of co-codamol when I can't cope with symptoms and that takes the edge off the pain. If I took more it would really knock me out - even half a dose makes me sleep for about an hour.

11 am - Had a late breakfast of a RyVita and cold meat sandwich. Plenty tea, of course.

Dinner will be cabbage stuffed with spinach and cottage cheese. Maybe some strawberries to follow.

Goulash (2 servings) now in the freezer. I've ordered more meat (so that I can take the car for a run on Thursday) and was told that the shop is now open for customers so I will be able to go in and pick up my parcel of meat. I've ordered offal, black pudding and cheap meat - I could do quite well without any meat this week, but I have to have a reason to take the car for a reasonable length of drive - 14 miles should keep the battery charged and the engine turning over.
