What have you eaten today? (Low carb forum)

trouble was I'd overestimated how capable my arthritic knees are for bending .... and fell over backwards. Very elegant!
Pro-tip: Park close to a wall, tree or other car. Open front and back door, creating a three-quarter cubicle with the 4th quarter provided by tree, wall or car. Pants down/skirt up and sit down on the instep of your car, as comfortable and private as at home!

Pro-tip when without a car: Squat with your back to the tree instead of the other way round. It'll prevent you from falling in your newly created puddle, and passers by will only see crumpled clothes instead of a full moon. Bonus points for a friendly wave if someone does pass by.
 
My wee solution when out in car now is I’ve had to purchase a special container from Amazon! I’m normally a very regular user of public loos!! Not needed clearly when on country walks but really useful when loos closed as they are in most rural small towns and no private places - mind you @Antje77 your solution sound very clever for lay-bys! @Chook felt for you falling over........
Breakfast one slice of bacon, double yoked egg and half a slice of toasted lc bread
No lunch as out just coffee
Dinner marinated chillichicken with asparagus, celeriac chips and salads followed by lc lemon mousse and one strawberry with spoon of yoghurt and cream.
 
Still at Mum’s getting used to the layout of her kitchen and where things are kept.
Breakfast: strawberries and cream with black coffee.
Morning: black coffee and salted caramel phd bar.
Lunch: ham and a small leafy salad followed by Greek yoghurt and coffee chia pudding.
Dinner: chicken breast stuffed with cheese and wrapped in bacon with mixed veggies followed by DGF orange and chocolate brownie with double cream.
Hubby had to deliver my old phone to me as my current one has died :(, so I took advantage and got him to bring some brownies too!

Breakfast, scrambled two eggs and had 2 pieces of brie. Somehow this lot is not as nice. Maybe its not ripe enough yet.2x CWC.
Lunch: salad. With ham and some more brie. Small carrot raw with salad. Large mug of tea.
Grazed a bit, almost literally, cutting grass then, weeding, picking and eating as i went along the mangetout.
Tea.
Dinner: fish, egg dipped and coated in ground almon, parmesan and sesame seeds. In the end tipped the left over egg in as well. Was very tasty, if not a very tidy looking plate of food. Oven Chips. Again. This time I weighed them 60g which is about 20g carbs. Tested before meal 5.6. Frozen beans, but roasted a courgette from the garden. 2 hours later BG 5 8. Glass of wine. Another half glass later.
Lemon tea at bedtime.

Sunday Bed 6.4 FBG 6.8. I'm off colour again! Hopefully it doesn't last but back to the hot showers and Vick to sweat it out. I rested most of yesterday and did feel a bit better at night.
B. TAG and a slice of toasted skinny bread with pate.
L. Nothing
D. Steak, kidney and mushrooms with sprouts and celeriac mash. I did get Genius GF pastry and it was vile so ended up in the bin. Last time I had Jus Rol GF and I was OK with a small piece but no luck getting it this time.
Usual campari and soda and later raspberry chia pudding with a few raspberries.

@Annb - the faggots and the terrine look delicious. @Goonergal - hope the whitebait work out. I was always very fond of them. Hubby never liked the idea of eating their heads!
 
Accidentally discovered a new favourite lunch/easy to carry meal/midnight snack today :)

Yesterday I had celeriac for my evening meal. Bake thick slices of celeriac sprinkled with olive oil and a little salt in the oven until close to done. Put grated cheese and (smoked) paprika on the slices for the last 10 minutes or so. I also added chilli powder. Fry a thin rasher of bacon to go on each piece of celeriac.
Now that's the old part. The new discovery is to put the leftover slices in the fridge (I did with the thought to reheat them for tonight's meal but they didn't last that long) and eat them cold! Very yummy, easy to eat without cutlery like a sandwich, very low carb :)

Exciting day yesterday. So exciting that I forgot to post my food.

Both Mutt 1 and I had our chiropractic appts.
Now, before I tell you about this, I want to remind you of earlier episodes in The Knee Saga, where a doc/nurse combo sent me for xrays without even a physical examination, and when the results came through saying 'arthritis' I was just referred to a physiotherapist, who conducted no physical examination and gave me exercises for arthritis, then discharged me when I said 'it is worse after your exercises. Much worse'.

So, anyway, I rock up to Mrs Chiro today. Mutt's session went well (he is a sucker for fuss, back massages and regular treats) and then it was my turn.
Full and detailed health history taken, back to childhood. Notes taken.
Detailed examination of posture, stance, gait, back, neck, hips, knee, ankles, flexibility, areas of muscle tension and tendon/ligament tension, pain, etc. etc.
Lifelong hypermobility acknowledged and assessed, and explained as likely cause of both the arthritis and other issues (loose joints => various compensatory mechanisms in play => current aggro which has probably been brewing for years. Arthritis as one of the symptoms, not the cause).

And, FINALLY, bless her, I have a diagnosis I feel I can trust, which is:
- arthritis, not the problem. Current regime of bone broth, collagen, glucosamine and chondroitin, vit C, magnesium, potassium, all doing a good job.
- pes anserinus bursitis, with a lot of aggro in that area (inside knee) and spreading up through quads
- adhesions in the quad tendons
- bursitis on the femur above the knee (that explains the swelling then!)
- tendonitis of quads and hamstring

Huge relief! Because is someone has actually identified the problem, then it can be tackled, can't it?

Then last evening we had a kitchen disaster. I hobbled off leaving a pan on the stove, thinking that I had turned the dratted thing off. Extractor on, so didn't smell the burning from 2 rooms away, until it was too late for the meal. My lovely cast iron Le Creuset is now soaking. Fingers crossed it isn't ruined.

Therefore, yesterdays food:

B: lc hot choc and bovril
L: cold ham and cheese rollup
D: chinese takeaway omelette with roast pork. Yum. Also chips stolen from Mr B. Too many of them. blood glucose rose to 12. haha! Then came down again, with a classic RH double peak. Felt fine throughout, and feel fine this morning.

Back to straight and narrow today, with a Tescos delivery to fill the fridge with good stuff. :D

Yesterday was my worst day and it was reflected in the BGs - bed 8.7 (on descent!) FBG 7. They had been fine after dinner on Sunday and had dropped back to the 5's then about 1 hr before bed they shot up. Glad to say today (Tuesday) I feel better again.
Monday - forced myself to do some ironing yesterday but probably shouldn't have as it made me feel worse. It was back to mild breathlessness, heavy head and my legs were agony. I'm still waiting for the courier to pick up the damaged bike as well. Hubby has decided on the new garden set he wants (I like it as well) but it won't be in stock until the third week in August. I've pointed out to him it's not a bad thing as the whole deck will have to be cleaned and retreated anyway (as does the fence and the shed....) Give him his due, the desk stain was ordered and arrives today!

D. Chicken breast escalope coated with a cajun rub. I did have some celeriac on the side but didn't eat it. Spoonful of the chia pudding with raspberries.

Otherwise the day consisted of hot showers, Vick, water and paracetamol!
 
@Tipetoo - that bovinecetta & lambcetta look delicious. Definitely my kind of food. @Brunneria - glad to see a sensible diagnosis at last. Maybe you'll get some progress now. I got a surprise this morning. The chiropodist called to say they're back working so I made an appointment for next week. I'm surprised because I expected them to be a long time away as we are waaay behind everyone else (although why I do not know).
It seems this has just been a 48hr thing (touch wood). Waiting for deck stain arriving and I've informed supplier again I still have a damaged bike awaiting collection. Meantime I was hungry.
Bed 6.4 FBG was also 6.4 but I did get a surge to 8.6 before a breakfast turned the tide.
B. TAG with a slice of GF black pudding, 2 rashers of crispy back bacon and a fried egg (another double yoke).
L. Will be nothing.
D. I'm making kung po beef with mange tout, baby corn, peppers and green beans with cauli rice. Will have the remains of the chia pudding and raspberries.
 
Hi All sorry for MIA again!
Sunday was Mr PM’s landmark birthday so our son and partner came over for coffee and brought cake. Only had a sliver, it was Colin the Catterpillar after all. Then I did two platters of cheeses, smoked salmon and a big pile of mixed salad in the middle so we were able with two tables 2m apart have a civilised lunch. I put out a big bowl of soapy water for them to put their plates, cutlery etc in. We also had champagne.
In the evening I panfried scallops and monkfish which we enjoyed with Jersey Royals (him) broccoli (me).
Monday yesterday had slice HiLo toast, butter, lots of tea.
Lunch was egg mayo and salad.
Supper was roast chicken which fitted with the cold weather.
Today same breakfast.
Lunch will be the same too.
Supper will be leftover chicken & chorizo pasta for him and spinach omelette for me.
 
Another day out - this time to a rather swish farm shop that was advertised as being open but, in fact, is at the moment only open from 11am for half an hour. I was quite pleased as it is a pig farm and (going by the price list on the shop door) only sell meat and meat products - mainly pork, of course. It was set in between huge fields of pigs all with their own little houses. I think its put Mr C completely off eating pork!

Next stop was Brigg Garden Centre. ( @Brunneria Have you been there recently? Its been all changed around.) We did manage to eventually find the pink and white lavenders we were looking for (we've already got the blue and purple varieties).. The front garden was looking a bit 'tired' so we are changing it to be easier to keep with different textures on the ground and different colour lavenders. We transplanted all the roses to the back garden and are keeping our fingers crossed that they take. Each rose was planted in memory of a dog so I don't want to lose them.

Breakfast: scrambled eggs and kimchi
Late lunch: Actimel drink
Dinner: Mr C is making curries - bombay celeriac, an aubergine one, spinach and paneer and a lentil dhal - he's also making himself a lamb and apricot one.

So glad you managed to get a diagnosis at last. And that it gives you hope that it can all be tackled and hope for the future. Best wishes for that.

Hope you manage to salvage your Le Creuset pan.
 
Several cups of tea.
A bits and pieces lunch about 2.30 - slices from the faggots, roasted veg from the fridge, pork sausages fro the fridge. All heated together.
Dinner will be a kind of goulash to use up the shoulder pork from making the terrine with some mushrooms approaching the end of their useful lives, an onion and some tinned tomatoes. Might add the last bits of black pudding as well - so a kind of goulash, but not a faithful rendition.

Will your GP accept Mrs Chiro's diagnosis and prescribe for it? Maybe a Chiropractor could help me.

Sorry to hear about your Le Creuset disaster - if soaking in biological washing powder solution doesn't work then maybe try cooking rhubarb in it.

Dinner two lamb loin chops, stuffed mushrooms and a few onions with glass dry white wine followed by lc lemon and lime mousse with one strawberry with spoon of yoghurt. Planning on a few hc 100% choc buttons with coffee.
