What have you eaten today? (Low carb forum)

I tried taking Ibuprofen both as medication and as a cream to rub into joints but neither had any effect on me, so I stopped. I was offered surgery on one of my knees, but was unable to get answers from surgeons about the prognosis or management of recovery, considering that other parts were/are worse than the knee being considered for surgery. So I didn't go for it. I just use the occasional half dose of co-codamol when I can't cope with symptoms and that takes the edge off the pain. If I took more it would really knock me out - even half a dose makes me sleep for about an hour.

11 am - Had a late breakfast of a RyVita and cold meat sandwich. Plenty tea, of course.

Dinner will be cabbage stuffed with spinach and cottage cheese. Maybe some strawberries to follow.

Goulash (2 servings) now in the freezer. I've ordered more meat (so that I can take the car for a run on Thursday) and was told that the shop is now open for customers so I will be able to go in and pick up my parcel of meat. I've ordered offal, black pudding and cheap meat - I could do quite well without any meat this week, but I have to have a reason to take the car for a reasonable length of drive - 14 miles should keep the battery charged and the engine turning over.

Ann - if the shop hasn't been open through all this (our has, thankfully), please be aware they are likely to have measures in place to limit the number of customers inside at any given time. On that basis, ensure you are wrapped up warm.

More often than not, I have a little wait outdoors for the shop to clear, before getting in. Of course, I have a good looking the window to see what's looking particularly good.

Did you need to actually make an order? I often find going in, I'll see x, y or z that looks particularly nice, so my initial list changes.

I'd actually given my order before the butcher told me that the shop was open for customers, so I just left it at that. Next time, I will probably just go in. If there is a queue, I shall just go away again, since I can't stand for any length of time. I will still have plenty of meat in the freezer and the next week, I'll go back to ordering. You're right, it would be good to just see what is there and make a choice then. Of course, I would still have to stand around for long enough for my purchases to be wrapped and paid for - maybe too long.

These are our butcher's special today. We couldn't consider them, as there's all likelihood of gluten in the sauce.

Until relatively recently, they didn't do any prepared meats, aside from the odd time they'd do BBQ packs in the summer. They're diversifying a bit.

I like the idea of pork stuffed with garlic - not sure about garlic sauce - at least not shop made. Don't really fancy cheddar in it though. Might try to develop that idea. I do have some pork loin to cut into slices. Maybe garlic with a kind of buttery, nutty stuffing, or maybe marscapone and garlic. Have to think about that.

Just wondering what to stuff cabbage with - so far I have wilted some spinach and I have cottage cheese. Maybe add some chopped/processed nuts and I do have some hard boiled eggs, could chop a couple of those. So far I have only wilted the cabbage leaves and the spinach. I do, also, have a couple of rashers of streaky (but not very fatty) bacon left. I don't think I'll use all of those things - bit of a dog's breakfast - but I'll have to work it out soon and get the stuffed cabbage steaming in time for a not-too-late evening meal.
 
Was unable to buy cauliflower, or celeriac, so plan was to substitute with buttered cabbage. But just thrown about a third of the cabbage away. Very disappointing.20200610_175348.jpeg
 
Evening all.

Something odd is going on. Bought a ribeye from the butcher on Monday but two days in a row I haven’t fancied eating it. Very strange.

Lunch was corned beef fried with onions, 2 eggs and some grated cheese, followed by Greek yoghurt.

Dinner was cold corned beef (remains of large tin used for lunch), a small piece of cheese, 2 pickled onions and a dessert of extra thick double cream and almond butter.

Tea. Tastings of cooking. odd bits of bacon and chorizo, few bits of grated cheese. One salmon and courgette fritter.
Dinner, another of the salmon and courgette fritrers, dollop of tartare sauce, buttered cabbage with nigella seeds. Frozen Green beans. Nearly finished the bag now. This 1kg bag says it contains four servings. Really? Does anyone eat 250g of beans as a servng?
Glass of wine. Might be another later. Possibly some tea.
Cat greatly enjoyed the salmon skin.
Mountain of washing up. Every bowl in the kitchen, several baking sheets and a couple of frying pans. Looks like MrSlim was cooking :woot:here.

Decided I deserve a treat, Made DietDoctor chocolate molten lava pudding and served with cream it was nice,but the "BEST Low Carb keto Chocolat eMug Cake". is delicious. AND ready to eat in five mins

Airfried salmon skin? Quite delicious. Crispy, savoury and not slimy at all.

Breakfast: strawberries and cream with black coffee.
Elevensies: black coffee and a salted caramel phd bar.
Lunch: ham, a small leafy salad and pork scratchings followed by Greek yoghurt and coffee chia pudding.
Dinner: salmon with mixed veggies followed by SF jelly, cream and a couple of raspberries.

am sure it would be lovely, managed to crisp it quite well in the frying pan last timei had real salmon. Today though was using tinned salmon. The Skin was indeed slimy and disgusting, but i did warm and then drink the can juices. Something i have never even thought of before.
 
Stuffed cabbage and tomatoes steamed in the pan as well. I like my tomatoes heated through.
Finished off with 2 100% chocolate buttons.

I've twice seen a food programme featuring a top London chocolatier and he said you should just crunch 100% chocolate and then let it melt in your mouth. It should start to taste slightly sweet despite having no sugar in it. Tried it but either it doesn't work or I should have had more of the chocolate. Not going down that road.

The filling for the cabbage was spinach, cottage cheese, some flaxseed and coconut flour savoury crumble plus some mixed nuts. Better than I expected.

Gave breakfast a miss and instead took flask of coffee on a morning hike - wanted to get back home before rain arrived this pm. Wonderful walk and coffee.
Lunch scrambled buttered eggs with lc seeded crackers
Dinner garlic and chilli chicken with salads and glass of dry white followed by lc lemon and lime mousse with spoon of thick cream. Three 100% hc buttons with decaff coffee.
@SlimLizzy - re celeriac chips I always freeze them. I peel and chop celeriac some into roast ‘potato’ size and some into chip size. I then open freeze on silicone mat on a tray. When frozen I add to a container or bag and keep frozen. I then just take out the amount out needed for a meal and roast either chips or potato shape from frozen - works well. I also sometimes drop celeriac squares into a curry - they give lovely thickness. I usually buy two celeriac and bulk freeze they seem to last ages in freezer. Good luck getting hold of the celeriac and carrying on your bike. I’m lucky to get it in my online food delivery just now.

Ah, agreed. Even the sainted AF would have trouble crisping canned skin!
 
Actually slept 7 hours last night - have only been averaging 5 - so that was a nice surprise but felt tired still so stayed in bed reading. Then did a dance class so that neatly took care of the morning and meant I skipped breakfast.
Was surprised to see bg of 7.3 before lunch up from a 6 waking.
Lunch was scrambled eggs with 2 huge portabella mushrooms and 1 tablespoon of tinned baked beans. Touch of yogurt with linseed and apricots. Surprised to see 2 fresh apricots were 6g carbs. Those and the baked beans were half my daily 20g target.
Dinner was cooked by hubby who likes following cook a longs. Trouble was this one had couscous with pomegranates and an orange salad. Had to give most of mine to my son. Ate the chicken, then he told me it had been marinating in honey !
Sent my bg to 8.7. I have been trying really hard to keep it in range. Think my carbs for today went to 40g.
Tomorrow is another day.
Have hba1c test Friday. Results sometime next week
 
Thanks for all the good wishes re break in and aftermath everyone. Patio door still boarded up and glazier can’t get here til next week when we’ll be gone. Luckily my neighbour said she’d oversee proceedings. ( glass factories weren’t operating again until v recently so production is a bit behind apparently )
WiFi all turned off so a quick post just to keep my hand in.
No carby food has been consumed. BUT a lot of mindless eating, grazing, nibbling between meals etc
We’ve had 2 takeaway currys so far, which have been wonderful. Other than that, thank heaven for M&S and oven ready meat & microwaveable veg.
All cooking utensils packed away - just 2 plates, knives forks mugs and of course wine glasses for the end of the day.
Today there is salami, cheese and olives for lunch
M&S Aberdeen Angus roast for dinner with one of the mixed veg packs - Mr C has all the carrots and I have all the cauli.
BGs been ridiculously high so it’s just as well my testing strips have run out and I forgot to pack spares. It was only adding to my stress levels.
See you all soon when we are back in Cornwall and with any lunch normal service will be resumed and the house sale will progress at last.

Yesterday ...

Breakfast: A double decaffeinated espresso with cream and erythritol.

Lunch: Leftover salad olivieh, a whole DD keto roll with butter.

Dinner: Another half DD keto roll with butter, the last of the sous-vide ox cheek. Dry red wine.

Late after-midnight snack: A tub of chicken liver pate and h/m sesame brittle (sesame, erythritol, a bit of salt, butter).
