What have you eaten today? (Low carb forum)

Tried my cauliflower cheese bread/savoury/thingy today as think I told you wrong. Its 200g cooked, rice cauliflower, 2 eggs and 100g grounf almonds and 100g grated cheese.
Today I added seasoning when cooking the cauli rice, and some chives at the final mix. Today it went into an 8" square tin but I often do it in a loaf tin to get a higher slice..
More of a scone than a bread but very savourily satisfying

Quick post before I try to catch up on many posts. I've got the cold now but recovering again. It is just a cold. Thursday bed 8.1 but FBG much better at 6.3.
B. TAG and a slice of LC toast with ox tongue and coleslaw.
L. Nothing.
D. Ended up with a lot of back and forward so by the time I got to eat I just had chicken wings and a garlic dip. Handful of cherries.

Friday - bed 7 FBG 7.1. Still sniffy and a mild sore throat.

B. TAG and a slice of LC toast with pate.
L. Nothing - early pick up day from school and boys to feed.
D. With a new stock of Lidl noodles I made a "spaghetti" with mussels and a tomato & garlic sauce. 2 squares of Godiva.

Will catch up on many, many posts now.

Sorry to hear you've been off colour again. You didn't need it after the last few months.
 
They look wonderful, and I admire your self-control!

I'll raise you a fresh batch of cheese crisps in two different flavours :hungry:
The cheese balls will have to wait for another time as I needed to save some cheese for later.

Saturday Bed 6.3 FBG was also 6.3. I have so many parcels for my niece my house looks like a sorting office. Still she's back today.
@Annb - sorry to hear about your DILs toe. Really that is not acceptable for a telephone consultation. @ziggy_w the cauli rice absorbs the stock and goes creamy with the addition of the cream or a dash of cream. Not sure konjac would work the same. Chia might. The Glasgow/Clydeside situation is even more confused. You can't go into other houses unless it's for childcare/ caring. So they've said it's fine for grandkids to be with grandparents if they're looking after them but not if the grandkids just want to visit?? Parents come to collect them they're not allowed in. I think they have to stay 2 metres apart when they are in your house. So, you can meet your family in a pub and stay one metre apart, a restaurant but 2 metres apart and you can't sit at the same table, or a gym and goodness knows what the rule is there! How on earth is anyone supposed to follow this gobbledegook?? @Annb - no doubt you can tell me if I've got any of this wrong.

D. Cold cuts again. Slice turkey, ham, ox tongue and chicken. Veggie chips and coleslaw. Handful of cherries.

DIL's toe has improved over the last 3 days - since she was put onto the only other antibiotic she can tolerate. So she can now get a proper pair of shoes on. I agree, it's not good to have things like that dealt with over the phone. That's just typical of our GP practice/health board.

Can't tell you if you're right or wrong. I don't know what the regulations are, even for here, any more. Never mind in the West of Scotland. 2 sisters-in-law and their families still live in Ayrshire. One hasn't been out since the beginning of the lockdown - her daughters do everything outside for her. The other one has severe dementia and doesn't really understand what is happening. She is cared for by her son, who is now unemployed due to the virus. At least it means he can stay at home with her. Don't think it is doing much for his (normal) explosive temperament though.
 
Let me know what it tastes like. I'll need a lot of space before I can consider buying it. The Iceland shrimp dish is this. There are 3 different ones but this is the one I add things to like spinach, Lidl noodles, mushrooms, cauli rice, dash of cream ....not all at the same time I hasten to add! The risotto does work well. It is just a case of making it the same way as a "normal" risotto gradually adding stock.

Thank you for the Iceland thing tag. I did find it on my second foray there on Friday. It’s a really good freezer standby. I’d forgotten about it so it was good to get a reminder.
The bread tastes like bread but has a slightly chewier texture. It was sublime for my bacon sandwich yesterday and the bacon was robust enough to offset it. I’m not sure about a more delicate sandwich filling. I’ll maybe try an egg mayo sandwich soon.

@DJC3 thanks for the brisket recipe. Brisket is definitely on the menu later this week.

Successful food day all round. After the little cheese and bacon ball ‘starter’ an earlier dinner than planned (cooked much quicker than the conversion table suggested) of the most delicious air fried lamb shoulder. Rubbed it with oil, paprika, pink salt and rosemary. Small pot of Greek yoghurt to finish.

The lamb looks wonderful. I wouldn’t have considered air frying a shoulder.
I was thinking about you today as the news from Birmingham was coming in. I’m so glad you’re not there still.

Didn’t fancy putting the oven on and making the flat hot, but wanted a crispy outside. It was delicious and cooked in 2 hours - nice crispy top and tender inside.

The area in Brum is right in the centre - was on one of the cordoned off streets quite regularly (near the canal).
 
Usual black coffee this morning.
Sort of Omad of roast pork, roast aubergine and cauliflower and a cabbage dish posted on the low carb recipe section of the forum. I must find the OP and credit them, it was lovely. Cooked quickly in a small amount of water. Added butter and cream and stirred in Parmesan.
Followed this with blackberries fished out of yesterdays gin experiment and h/m yoghurt. Red wine with the meal. Blackberry gin and soda beforehand with a little bit of h/m mackerel pate on sliced mushrooms.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Late morning: black coffee and birthday cake phd bar.
Late Lunch: pistachios followed by Greek yoghurt, orange chia pudding and vanilla and raspberry LC granola.
Dinner: roast chicken, mixed veg, one tiny roast potato and gravy made from meat juices thickened with flax followed by SF jelly, cream and LC chocolate granola.
 
The stew tasted great, and thankfully no more boney bits :)
Before bed will be (almost certainly way too much) cheese crisps :hungry:

After dinner there was an obnoxious bit of meat between broken molar and it's neighbour so I resorted to a mirror to go with the tooth pick. Tip of the toothpick disappeared underneath broken molar's neighbour. :wideyed:

Now I'm really dreading the dentist call. Pretty sure it will be The Talk on having my lower teeth exchanged for plastic as well. I don't think repairing those two will last for a long time, if even possible, and without there won't be much left to chew with.
Feeling rather sorry for myself now.
 
@Nicole T I have also looked for HiLo anytime we are out and about up and down the country and have still to find a Sainsburys that sell it - so I have given up I think.

@Chook The seriously low carb bread and rolls are a tad expensive but well worth every penny! It will be burgers again for me tomorrow (yippee) to use up the 2 rolls that are left in the fridge :hungry:

Brunch - 1 slice of seriously low carb bread toasted with butter spread thickly on it. Also mug of earl grey and double cream.

Sunday dinner out - juicy steak with prawns and peppercorn sauce on top - couple of bits of scampi and tartare sauce with a large salad on the side. Afters - SF jelly and clotted cream (at home).

Glorious day here today - got lots of washing out and dried and managed 2 large walks also :happy:

How did your blackberry infusion go? Did you get a more appealing shade this time?

Careful of these berries though. They can be dynamite. Nice dynamite, but dynamite all the same!

Bfast avocado, boiled egg, pecans n kitties on the patio, 1 Lindt, flax crisps/dilute soy, saving a little of each for "Baptist First Sunday Covid Communion"
Lunch en famille: a Greek chicken/feta/tomato grill, wish I'd thought to take a pic of the platter-- was as beautiful as it was tasty. I need me some Greek seasoning! 1+ Lindt 90%
Two days ago I took some baked chicken thighs out of the freezer for tonight. Hmmmmm. Will they still be okay tomorrow do you think? We already ate plenty of chicken today! So, supper will have the usual spinach/hm dressing and flax crisps but what to serve MrZF? I could have cottage cheese, or a couple of slices of swiss. We'll see.

Today, i forgot all about breakfast and then airfried some lamb chops at around 4pm.
Still hungry, I then had some goats yogurt with a splash of added cream.
Lovely.

it is now 9.30 and I expect I shall need something before bed, but not sure what... perhaps a couple of slices of cheese...

They do, but I don't dare getting my hopes up. It's expensive and I won't do it if the dentist thinks the teeth where the bridge will be based on won't last many more years. Let's wait and see, and call the dentist tomorrow.
 
@Goonergal - your boiler has brought back memories of a year ago when we got back from holiday to find our ceiling on our bed (but we did get it all replaced and redecorated), followed by the TV blowing and finally the seal on the boiler at 11pm and stuffing towels in it to stem the water while I yelled at Hubby to turn off the mains! That was a very expensive couple of months.
@DJC3 belated Happy anniversary. The bread sounds interesting. Skinny bread gets a bit chewy on the crust 2nd day so it may be OK. I'd still like to try the rolls though. I did at least use something else from the freezer today!
 
No matter if electric or lamp-oil powered, they're brilliant!
Kitchen worktop is very much cat territory, and I'm not taking chances after all this peeling and chopping vegetables, and buying so much oxtail :hilarious:
Your oxtail dish looks very similar to my tripe dish. Similar ingredients and I'm sure just as delicious.
 
Anyone had the DGF gingerbread cake? It’s the new limited edition variety. I still have plenty of others in the freezer but thought this might be nice for the colder weather ( and dare I say it - Christmas!)
I'm out at the moment but I noticed it in their latest email. Freezer space permitting I'll buy it in a month or so. I was thinking that cream cheese icing would be nice on it but I'd switch the lemon juice for something else in the mix.
"Out" as in run out of DGF!

@Annb - glad to read your DIL toe is getting better. I was smiling at your Blue Badge renewal. I did mine recently with similar issues but Hubby was so awful at taking the photo I ended up with contortions to take it myself with the tablet and ended up with a still awful photo! One thing I will say is the system is very efficient. If the WI council charges for the badge you'll get an email asking for payment. Badge arrived very quickly afterwards. @Antje77 I love these sausages. There's a Polish one in one of our supermarkets that I buy when I see it. I have been know to microwave it and it squeaks. @PenguinMum - have to agree about Bath. If life ever returns to normal I want to go back. We found some excellent restaurants. Just hope they are still there. @DJC3 - I smiled at the gin. I see your issue Would a little saffron help (or would that compound the problem)?

D. Duck breast from the freezer. Scored and rendered down the fat then 1 min on other side. Finished in oven then rested. Made a stir fry of carrot & squash julienne, mushroom, green beans, broccoli, beansprouts, red pepper and a sauce of soy, garlic and stock. Served with the sliced duck. Usual campari and soda. Raspberries and cream.

I've steamed my sinuses a few times today and it's helped this cold.

Well ... I received my delivery from seriously low carb this morning ...:D:D:D

Brunch - 2 slices of seriously low carb bread toasted with lots of butter and mug of earl grey tea with double cream.

Dinner - 2 :hungry: Burger Rolls - one with onions, a teeny bit of heinz 50% less sugar ketchup and cheese on top and on the other I had salad - both were delicious and well ... today is the first day in over 3 years (since the big D) I had have a roll but won't be the last - happy days are here again! and oh (in line with the fast food) washed all down with large glass of pepsi max - lovely jubbly. SF jelly and clotted cream.:happy:
I'm assuming the SLC rolls are good too? I must do some boiled eggs mashed with butter again. Noticed it a few times catching up on posts and it would be great on a roll
