What have you eaten today? (Low carb forum)

Yesterday breakfast made ricotta pancakes served with butter and sugar free maple syrup and also real maple syrup and two black coffees

Dinner made some zucchini ricotta fritters but decided didn't feel like them as was craving a salad luckily I had some ingredients except for a carrot and parsley so went up the road to buy them. So opened up a tin of tuna and made a tuna salad with lettuce carrots celery parsley and coriander with mayonnaise, sour cream and lemon juice dressing served on a few Eskal Gluten Free Crackers buttered and glass of sugar free cranberry juice and water.

Sunday

Brunch zucchini ricotta fritters with a poached egg and 2 slices of bacon some fetta cheese and black coffee but found it hard to eat it all was feeling a bit bloated and blah but did managed to eat the bacon .....mmmm bacon

Late afternoon decided to mow my lawn so did my front yard and some pruning but didn't get around to doing the back yard hopefully I feel ok tomorrow as predictions of rain and also did some stuff around the house. Now my body back and joints are quite sore and I'm very exhausted after doing that so not wanting to cook so rummaged through my freezer and found a mini frozen chicken pie and vegetables that I made a months ok thank you me for having a readymade meal on hand as was to ******** to really do some cooking. So reheated my pie in the oven and boiled up some broccoli and green beans and made a quick homemade gravy to have with it plus 2 glasses of red wine called winter red that I found in aldi. Funny enough I opened the wine a few days ago and didn't enjoy it but popped it in the fridge and tonight tasted better cold so ended up having 2 glasses of it I enjoyed it that much! me bad but it can't go to waste now can it!

Thanks. I just hope I can keep it up. Because we are not having anyone over for a meal or going to anyone and not really eating out (although we do have two meals out planned but I'm getting a bit worried about going with the rise in cases) it's making it easier. I'm one of those people who can trundle along nicely on an eating plan as long as nothing interrupts it. As soon as something happens, such as a meal out or Christmas, I go off it and then can't get back on for weeks or months.
I can usually find something when we eat out. It's got a lot easier in recent years and I love that halloumi fries and celeriac is appearing more and more on menus. We're lucky our favourite restaurant is an Argentinean Steak house so we are spoiled for choice there. Many restaurants are happy to offer substitutes nowadays if you ask. The common one is bunless burgers (although I have asked more than once for a burger less bun!). As for Christmas, when I have a full complement, I have a coeliac, seafood allergy, vegan, vegetarian, dairy allergy and low carbers in the mix. Takes a lot of prep but I've fed them many times on low carb dishes and not told them. They don't know the difference.
There's some great recipe sites out there for low carb/keto. Diet Doctor is one of my favourites. Others I breathe I'm hungry, all day I dream about food, even mainstream sites like Good Food, Delicious and All Recipes offer keto recipes now. I must admit there are a few keto recipes I like better than the traditional one now.

Can you look up the menus on line for the places you are going to eat out at? If they are part of national chains you can usually find the nutritional content out in advance and decide what to have accordingly. If not, my staple eat out meal is steak and salad. If you have a plan before you go out you’re less likely to make a bad choice and then beat yourself up about it.
 
@Chook thanks for the additional info on the veggie food. She will definitely try it. Glad you’re feeling a bit better and your fish pie looks gorgeous.
Today I thought I’d mix it up and have breakfast and lunch so
LC coconut porridge as loved by @Rachox with strawberries and cream. I really like this but it didn’t bring rapidly rising BG down. Tomorrow I’ll just have eggs.
Lunch around 2pm was roast beef, roast broccoli, cauli cheese and creamed cabbage. A couple of glasses of wine and 1/2 a lc custard ( granddaughters had the other half to try it)
We are off to a pub quiz tonight. Feels a very normal activity after so long so I’m looking forward to it.

Fabulous day today. Hot, sunny and spent the day meandering along the Thames, visiting the Brunel museum and sitting in a very sheltered, sunny outdoor bar at a hotel that has just reopened. Was a favourite loo stop before lockdown so very happy it’s available again.

Brunch was 3 small eggs fried with a bit of onion and some corned beef.

Dinner was beef short rib followed by a small ramekin of cream cheese and a little bit of double cream drizzled over.

Evenin’ All,

Still no covid test result, so still not going out.
Too hot to walk the dogs, anyway.

B: sausage and cheese omelette. Mr B added beans to his plate. Blasphemer.
L: a little Lindt
D: chicken livers in onion, garlic, white wine and cream.

Since Mr B is fully recovered, and I have no symptoms, without covid in the headlines, he would be back at work tomorrow. But nowadays, they won’t let him back in the door til he has a negative test result.
Meanwhile, since I work from home, nowt has changed for me, except I can’t go out. Hey ho. There are many, many people FAR worse off.
 
Lunch one slice of bacon, two fried eggs and half a buttered toasted chaffle
Mid pm DGF millionaires shortbread- half slice - with a few squares of montezumas 100% with orange oil.
Dinner roast chicken with two chipolata sausages,celeriac roasties and asparagus then pudding DGF butterscotch and pecan blondie with a few berries from garden and Greek full fat yoghurt.plus two glasses of dry white with soda water. Just about to go on another walk to settle my bigger than usual meal! I was also out walking this am and gardening in the afternoon in this lovely weather.
Early morning swim booked for tomorrow followed by work Zoom meeting so will have to race back afterwards for shower and hair drying at home - good job I don’t often eat breakfast!
 
b: a small ff greek yog before a catchup walk with a good friend
L: mushrooms fried in butter wih fresh spinach with added leftover cabbage and an egg thrown in last minutes. 1 sq of the 70% caramel chocolate. Son is keeping it well hidden as it could so easily put me right back to old habits of eating whole lot then going straight out to buy and eat 2 more bars (2 at least)
D: roast beef, carrots, broccoli, cabbage. Small crumble of apple and blackberries topped with ground almonds, milled seeds, coconut and a bit of sweetner and meleted butter. Served with soured cream. Was yum, and again could get me right off the the wagon.
Boosted motivation by watching a couple of talks by Dr Paul Mason in how high bg affects dementia and cholesterol. My brain sees the sense but my body seems lead by sweet tastes on tongue. Keep thinking I've beaten the addiction but no, it comes right back
 
Not fair!
Up to now, fresh corn agreed pretty well with my bg's, not in the least acting like the carbs they supposedly contain.
Until just now. Went from below 4 when starting dinner (not sure how much below 4 because I was making a phone call at the same time and didn't bother to test. But tingly mouth hypo symptom, so my guess is around 3.5 or 3.6.) to 7.2 30 minutes after eating. Wot??? :wideyed: Why???

So either diabetes has decided to treat corn like carbs for a change, or there is a small chance the pre-marinated mystery meat I bought contained a lot of sugar. In which case I'll drop like a stone shortly because of my shocked bolus correction assuming the spike was caused by the corn.
A sugar spike is fast and steep, but short-lived as well, in which case the correction will send me low. If it was the corn I expect my bolus to do its job.

Wait and see, with my new bag of salty licorice on hand :)

At least my meal tasted wonderful :)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
My fasting blood sugar was 4.6, two hours after ‘porridge’ reading was 4.9, did it put yours up by much @DJC3 ?
Late morning: black coffee and raspberry phd bar
Late Lunch: Babybel followed by Greek yoghurt, raspberries and vanilla and raspberry LC granola.
Dinner: roast chicken, one tiny roast potato, mixed veggies and gravy made from meat juices thickened by flax followed by SF jelly, cream and LC chocolate granola.
Off on my holibobs tomorrow, postponed from June, a lot of eating out winging it at restaurants for a week!
 
FBG 10.9. Not too happy with that.

Warm water and a cup of tea with milk - around 6.30 am.

Late breakfast/early brunch at 10.30 - one slice of a pork terrine from the freezer (after 36 units of the new insulin). BG 2 hours later - 9.7. A bit of an improvement. More tea.

Just now - another cup of tea with milk and a Co-codamol to try to settle some of today's issues.

Later I will make a kind of bouillabaise with some frozen fish and some tinned tomatoes. Must add some more to tomorrow's shopping list - my stock has almost run out. The tomatoes, onion, garlic and peppers in it shouldn't do too much harm. Shan't use any more risky veg than those.

My cleaning lady phoned to tell me that she got tied up with things and forgot to come yesterday but I've had to put her off until next Friday now. Too much going on this week.

Thinking about making some cheese crisps but really feel just like dozing in the chair. The Co-codamol will put me out if I do sit down there. And, if I do, I might just eat all the cheese crisps that I make. Risky.

A Zoom meeting got in the way of going to sleep. But I did have time to make some cheese crisps. A phone call to my brother in the south got in the way of making bouillabaise so I ended up snacking on the cheese crisps. Can't afford the calories to have soup now but I will make it ready for tomorrow. The fish is already defrosted so it will have to be cooked.

@Mauriac yes I can recommend the seriously low carb loaf and rolls they are fab - you can purchase the rolls and individual loaves @seriouslylowcarb.com They are a tad expensive but worth every penny in my opinion! I have had burger rolls and everything again ... the rolls were my 1st rolls in over 3 years since I have been diagnosed with the big D. Toast & sandwiches as well - life changer for me likes.:hungry:

OMAD day today:-

Sunday late lunch/early dinner out - mushrooms and pate in batter (which I took most of it off so just had a little) with a little salad and lemon mayo for starters, followed by surf & turf - steak with prawns and peppercorn sauce on top, 2 scampi & a little tartare sauce with side salad which included cheese and coleslaw. Also stole a teaspoonful of hubby's honey crunch cheesecake (yum) and teaspoon of ice-cream. Large diet cola.:D

Managed a walk over an hour long so around 10,000 steps and hopefully burned off some of the above.;)

At Antje77 - it's the cob. I can eat a Cobette about 1/3rd but no way I can eat a whole cob now much as I love them. @Chook - glad you are on the mend and that fish pie looks really good. @annabell1 - looking at your food reminded me of your cauliflower fritters. I didn't get them quite right last time around but they tasted fine so they are due another outing. @Goonergal & @DJC3 - I was delighted and surprised to have dropped another 5 lbs but even happier having worked out why it had happened. I didn't realise I was between 700 - 800 calories some days coupled with 20g carbs or less! I think I'll complete MFP for a while now.
We've been freezer eating again! I dug out 2 pork loin chops wrapped in Parma ham. I finally found my GF haggis which is thawing for tomorrow.
B. TAG and 2 Nairn's GF seeded crackers with pate
L. 1 Lotus biscuit
D. Said pork loin chop which was fried in an apple butter I mixed up, asparagus with crispy bacon bits, fresh broad beans. I'd made a raspberry chia pudding earlier so had some of that with a few raspberries.
Boys swimming lessons are due to start next Sunday barring any more restrictions. I've warned them lessons are liable to be the only swimming they get for a while as there are no signs of the smaller clubs like ours getting to open. Still feeling very miffed that we're all being penalised. Got two 4 day weeks now as it is the September weekend. Usually that would mark an exodus from Glasgow to Blackpool. Can't see that happening this year.

I think you're right, much as I want it to be the marinated meat.
It's just weird how it didn't seem to affect me much before.
It's also possible my liver kicked in to get rid of the hypo at the same time I ate of course. But I fear you're right, and cob isn't an easy meal anymore :sorry:. At least this one was very big, so maybe half will still be fine :)
I bought two, so the other one will get some more insulin to accompany it in advance!

The main issue for me is that whatever I plan to do before I go, when I get there I think, 'what the heck' and have something carb and calorie laden. I will try hard not to do that this time though. The first visit is to a one-off French restaurant and the second is to a Côte. I'll try and balance carbs and calories but if it comes to one or the other I'll go with lower carbs.

@DJC3 could you give me the recipe for the coconut 'porridge' please?

Thanks - I'll give them a try. I don't eat a lot of bread but there have been several occasions this week when I've really missed it.

I'd go all out on the calories, after all, eating out is a festive occasion!
And then keep the carbs to a minimum by choosing wisely and asking for substitutes. Your blood sugar doesn't mind calories after all.
French? Great! How about a nice cheese platter for dessert? Besides being delicious, it will fill any void left by skipping the bread and potatoes and such!

To be fair it didn’t really put it up much - about 0.4 but I started a lot higher (6.4) so I was hoping that eating breakfast for a change would help control the morning rise I’m seeing at the mo.

Feeling a lot better today.
Breakfast nut granola, chunk of emmenthal. 2x CWC
MID morning CWC
Lunch salad, lettuce, radish, spring onion and tomatoes all from the garden. About time we had some home grown again, it seems ages. Ham and another chunk of cheese, water and tea.
Tea.
Dinner MrSlim cooked us a chicken and vegetable stir fried coconut curry. Used up some courgette. Did I have more cheese? One piece only. Two glasses of red wine. Bedtime lemon tea.
Has been a properly busy day. Begining to get house back in order after weeks of sanding and painting, which ofc creates dust and general neglect of housework.
Grass cut, didn't manage to finish all the edges, bit of weeding. Did manage French lesson.
Cat has started wanting to sit on MrSlims lap. MrSlim protests - but invites him up.:)
