...a lot of new T2D don't get a meter to test they only have their HBA1C tested and it's based on that.....

That would be me then. At the second meeting with specialist doc, as they were about to finish the session, I had some questions like 'do I need a meter? Actually I am thinking about the sensor type' she seemed surprised or flustered 'sorry we don't have those in Japan' and the issue was dropped...

Cultural issue, it seems that a lot of people here don't ask questions and just assume 'doctor knows best'

Evening all.

Was out running an errand earlier and spotted that a local independent pizza place had a poster up advertising ‘keto pizza’. Unfortunately (or perhaps fortunately for my waistline), their base is made of roasted courgette and mushrooms and I’m allergic to the latter. Did think of popping in to give them my carnivore base recipe, or even the fathead one.

@DJC3 I bought some cream and chicken wings today too - feel some more brining coming on!

TMAD again today. Lunch was 20% mince fried with onions and 2 eggs. Dinner was the remains of yesterday’s smoked salmon and some 0% Fage yoghurt.

Cheese omelette for breakfast.
2 tuna melt muffins and some olives for lunch.
Dressed crab ( another from the local fisherman) will be dinner. Not sure if it’ll just be in its own, with salad, in a SLC roll or something different.

Planned and managed OMAD out and about a lot always makes it easier when away from fridge and cupboards !
Very Weak black coffee throughout day
Dinner Cajun chicken with salads followed by DGF brownie and cream

you have time to leave for a while my brine concoction is double cream, pink salt, pepper, and then some combination of paprika, garlic (fresh or powder). Mix together in a bowl and marinade for 24 hours, although overnight/a few hours would do.
Is that it for brining @Goonergal No water or lots of salt,

woke early so breakfast of yoghurt,seeds blueberries
L: 3 slices emmemthal, 2 slice pork slices, I think few other mouthfuls but can't remember what!

D: chicken curry using up yesterday's chicken and cooked carrots and leeks with curry paste, extra chilli and yoghurt. Boys had leftover stuffing refried with theirs.
1 brownie and 1 millionaire with double cream
(This cream was from lidl and is so gloriously thick the spoon stands up, and it was only the ordinary one not their extra thick)

Yes. My brine mix is double cream, lots of pink salt, pepper and then whatever else I feel like adding - paprika, garlic (fresh or granules), whatever is on hand. No water.

Saturday bed 6.3 FBG 5.9. I'm a bit narked today! I've had a meter and test strips since I was diagnosed at the start of 2008. Today I received a letter from my GP to say they've been instructed by the Health Board to conduct a check on all prescriptions and, because I am not insulin dependent, the health board has stated I "no longer need them". Any other Scottish members had this? I can't help thinking I'm being penalised for daring to control my diet, lose weight and reduce my overall medication intake.

L. Much later (had to do a decent shop) 2 slices of SLC toast with pate.
D. Courgette zoodle carbonara. Having to spiralise zoodles now since Oomi Noodles & Lidl's Lighthouse Bay High protein noodles have vanished of the face of the earth! I don't like the other alternatives. Courgette zoodles are an ok alternative although my Lakeland zoodle maker is a bit annoying so Hubby wants to get me an electric one!
I gave into a Lidl lolly - only 2 left now!
Not surprised you are knackered - who cares for the carer(you) ? I think you need some TLC! and make an appointment with yourself for some ME time (a friend gave me this advice a while ago and I sometimes use it). I have not had anything from GP/NHS btw

Brunch - 2 eggs mashed up in a cup with butter. Mug of earl grey

Dinner - prawn cocktail and smoked salmon salad. Afters of my own h/m gooey mess

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and Fibre One caramel protein bar.
Skipped lunch.
Mid afternoon: black coffee and chocolate chia pudding.
Dinner: liver and bacon with onion gravy with roasted Mediterranean veggies followed by SF jelly, cream and LC chocolate granola.

@DJC3 I’ve book marked the LC Scotch egg recipe you said you based yours on. Just one question do you brush them with anything to get the crushed pork scratchings to stick before cooking?

No I just rolled them in the crumbs and it stuck very well.
I was quite surprised that the mince stayed firmly round the egg too. I thought It would be too slippery and would slide about.

Lunch today two small slices of low carb toast with two poached eggs. Dinner football was on and so naughtily ordered a kfc but hated it, felt guilty and cooking stuff from the shop is far better and tastier. So not great carb or wallet wise tonight but a good lesson and experience and nice to know I won't miss it when I stick to the firecracker wings in future!

Breakfast, Nut granola, CWC x2
Mid morning CWC no cake or biscuits today, but did scoff several spoonfuls of peanut butter.
Lunch 2 ryvita with mashed avocado, topped with herby ham. Cup of tea.
More tea.
Dinner. Roast chicken, roast root veg and potatoes. steamed Savoy cabbage and French beans. (There were a few potatoes left from yesterday but I forgot to put them in the oven) so had just one roasted today.
Rosé wine and tonic.
Was allowing myself 3 squares of chocolate, but actually ate six.

Breakfast 2 eggs scrambled on sourdough toast butter and 2 black coffees

Snack /lunch combined tablespoon Mascarpone cheese and tbls thicken cream with 60g grated dark chocolate and tsp of monk and stevia sweetener

Dinner Leftovers roast pork belly half roast potato.

Then snacked on though out the day
handful of Darrell Lee dark chocolate bullets
Queen garnet plum and yellow Peach

Well one strange night last night. After that awful KFC and after the football I bizarrely ended up watching The Wizard of Oz for the first time in about 45 years on Sky! 52 years old and watching Wizard of Oz. With that and the KFC I must have had a "go back to being a child moment for the evening"! Mind you the last time West Ham won so many games in a season I was about 8 so that's probably part of it! Then I found a strange grey seal (not the animal) at the bottom of my dishwasher so have had to book a repair as I have no idea where it has come loose from. So that's a week and a half of washing up by hand coming. My punishment for the KFC I guess!

Have scrolled back a bit and made notes of some of these lovely recipes you all have. Especially looking forward to trying to make the scotch eggs, albeit not the washing up! No lunch today so going by the use by dates I'll be having a tub of firecracker chicken wings and some steak tonight. No hardship mind you!

By the way do any of you eat lobster and crab? Expensive and not the easiest thing to cook in the UK I suspect and at times I wished I lived in Florida as I could have eaten Red Lobsters Lobster, crab and shrimp platter every night!
