What have you eaten today? (Low carb forum)

Bacon and a cheese omelette for breakfast, banana prawns and salad for lunch, spicy Mexican sausages from our butcher that have a fair bit of chilli or paprika in them, green veggies and gravy.

It was steak here today, too. Cooked with a more traditional sear, but still delicious.

Steak looks good, but the egg need a bit more cooking to get it off the medium rare stage for my tastes :hungover:.

So back to posting after a long time. Thank you @maglil55 for reminding me.

Breakfast: A double decaffeinated espresso with cream and erythritol.

Lunch: Half a DD keto roll with mayonnaise and smoked salmon and some of the low-carb florentines I prepared last night.

Dinner: Three scrambled eggs with fried okra. Some homemade guacamole. More florentines. Red wine.

@Dawnharris73 -- SLC stand for "Seriously Low Carb" and DGF for "Deliciously Guilt-Free," two really great low-carb brands (unfortunately, in my case, not available in Germany).
@DJC3 -- The reverse-seared steak looks absolutely delicious. @Goonergal -- How does reverse-seared work?
@Annb -- Hugs, it really looks as if you are having a really tough time with food right now. Wished I knew what to suggest to help you, but am also at a loss really.
 
Thanks @maglil55, the readings seem to have settled just odd it seems to drop every time I eat. Very strange but nothing surprises me anymore!

@DJC3 that steak looks phenomenal!

Lunch - KetoCottage sub roll with bacon, tomato, a slice of cheese and some Mayo, a wedge of Matthesons sausage and some grilled halloumi on the side.

A Fibre One Caramel Protein bar and a Pepsi Max.

Dinner - chicken wings with buffalo sauce and liberal sprinkling of blue cheese and some Mayo.

A DGF lemon and blueberry cake and a square of mint chocolate with my tea.
 
Beef advice please.
Have splurged on a 2.5 kg topside from local grass fed farm. Will be delivering plates to various neighbours as well as ourselves.
How best to cook it? Want it nice and tender and rare on the inside.
(Don't have sous vide)
 
L: pizza of tomato and gorgonzola ona fathead base. Other portion of base kept for breadsticks tonight
Afternoon baking, teaching dh. We did an lc cheesecake for tomorrow and 2 chocolate roulade, one an lc recipe using xanathan gum which I am new to using and a Delia tried and tested full sugar version (but only did a third of the recipe)

D: pork chilli cooked by son and 2 puds, one each of the roulade. Yes the Delia was that bit tastier and softer but the lc one was quite acceptable and would have been fine on its own. Will do again.

Loving libre as feeling guilty about 25g carb meal (most of it being the sugar roulade 50g sugar in 4 portions) but it showed me no worries and no spikes. Yay!

Lunch. 2x ryvita with avocado. Few sponfuls peanut butter.
Dinner home made katsu curry. Son1 cooked, he gave me the smallest piece of chicken and only one coat of breadcrumbs.
Cauliflower rice and French beans.
Mucho vino. Late night Peanut butter snack.

Lunch, 2x ryvita with four slices roast beef.
Cup of tea.
Dinner takeaway. Tempura prawns, chicken yakatori, spiced crispy cauliflower. Didn't expect the cauliflower to be battered.
White wine.

Dinner grolled rump steak home-made babaghanish and grilled potato

Sunday
Breakfast scrambled eggs on buttered sourdough toast black coffee

Dinner half a t-bone steak (,remainder for another meal) home-made babaghanish grilled sliced potato's and home-made avocado dip ( avocado garlic Tabasco sauce sour cream pinch coriander spice and salt)

Evening all. I agree @MrsA2 the internal temp is becoming increasingly important in my cooking, takes a lot of the guesswork away.
@Mrs T 123 those SLC hot cross buns look so good, but at 7.7 carbs each I’d only be able to eat half, and I know I’d fail so have sadly decided against.
Today I had a Brunch of bacon and eggs.
Lovely dog walk then dinner cooked for me- started with champagne and a raised glass to no 1 daughter on FaceTime. Then Lamb steak with roast Med veg and celeriac dauphinois. Cheese and lc seedy crackers and a couple of glasses red to follow.
Feeling v mellow now!

Breakfast one lc hm roll with one sausage
Lunch half lc hm roll with 6 prawns then two hm lc truffles with coffee
Dinner steak, mushrooms, a few chips - oven cooked from a couple of new potatoes that had been par boiled, cut into chip shapes and frozen - green salad and a small beetroot plus spoon of mayo with glass of dry red wine.pudding DGF raspberry bakewell with yogurt.
Hoping to do OMAD tomorrow - will see how I feel in the morning but I like to try and switch things around when can and it’s a busy day ahead which usually makes it easier for me. Report back tomorrow!

Long hilly walk
Picked at pate and bits while prepping food for dinner
D: smoked salmon pate with prawns (on crackers for the wheat eaters), roast beef
1 Yorkshire and loads of veg, lc cheesecake. 2 glasses red.

The beef was tasty and although I cooked it for times given was slightly overcooked. Got to 57 inside . I was aiming for 52. Such large joint can't quite believe it cooked so quickly. Veg included 2 bits of roasted parsnip and some celery cooked in tomatoes that had a tiny bit of sugar in. Doesn't seem to have affected bg though.

The 2 roulade made yesterday both tasted good today. I was afraid the one with zanatham gum would have gone more rubbery but is was still good. Boys ate them up for me, very noble of them.
 
BTW, the husband who gave the crispy
chicken skin to the cats last week, was this week caught cutting all the fat off the grass fed organic beef, on the basis "I only wanted every one to have lean". How long does it take to adjust his thinking? He should know better by now!!!
Divorce could well be an option after all
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and raspberry Carb Killa (another libre experiment, no spikes with the polyols’
Skipped lunch.
Mid afternoon: black coffee and chocolate chia pudding.
Dinner: roast beef with mixed veggies a tiny roast potato and a small individual Yorkshire pudding (yet another Libre project, slightly higher post dinner spike for similar dinner without the yorkie, but still well under 7.8) followed by SF jelly, cream and LC chocolate granola.

@Goonergal -- The reversed-seared steak looks fabulous, but am a little reluctant to start the oven for just one steak -- but maybe next time I'm doing DD keto rolls.

Breakfast: A double decaffeinated espresso with cream and erythritol.

Lunch: Half a DD keto roll with h/m mayonnaise and smoked salmon. A side of baba ghanoush and a side of guacamole. Some florentines.

Dinner: One more florentine. Maybe a little cheese, turkey salami and red wine.
