What have you eaten today? (Low carb forum)

Saturday 30 July - bed 7 2 FBG 7.4

Boys at jujitsu then shopping, otherwise a quiet day.

B. TAG and 2 slices of SLC toast with pate.

L. Nothing out shopping

D. Cold cuts again. Pork & egg, pork leg, ox tongue, ham, roast beef. Santini tomatoes, port salut, coleslaw. Smoked chicken, coronation sauce. 4 strawberries and a spoonful of Skyr.

Sunday 31 July - bed 6.5 FBG 6 1. Quiet day.

B. TAG and 2 slices of SLC toast with guacamole and smoked chicken.

L. Nothing

D. Campari and soda. Rib eye steak. Mix of exotic mushrooms and Broad beans. 2 grilled halloumi with chilli. 4 slices strawberries with double cream
 
@Goonergal the beef looks perfect. What joint was it? And what size, and what time and temp did you use?
I did a rolled pork joint on the rotisserie recently and it was wonderful.
 
A while back there was talk on here about how the seeds stick together in the M&S seedy crackers. I may have the answer!
I found a recipe I’d cut out of the paper a year or two back and tried it at the weekend it’s really good. I’ll put it in my CMT in a bit but basically, soaking the linseeds causes their seed husk to absorb the water and form a gelatinous coat. This gloopy matrix will encompass any other seeds you mix in and as it dries and cooks in the oven they all just stick together.
The soy sauce in this recipe gives a lovely savoury taste but I think I’d sub sesame seeds for some of the sunflower and pumpkin seeds next time just to lower the carbs a bit - it would be so easy to eat it all. IMG_0615.jpg
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a food dr bar.
Skipped lunch.
Mid afternoon: black coffee and an Aldi protein bar.
Dinner: salt and chilli ribs with runner beans and tomatoes followed by SF strawberry jelly and cream.

11 a.m bacon and eggs (thought this would keep us going all day but...
12:45 hubby announces its lunch time! Half an avocado and 2 seedy crackers with pate for me. He ate a huge plateful! How does he do it?
Long dog walk and it was hotter than expected, not feeling too good.
Snacked on fruit on return, 2 plums 4 cherries
7pm beefburgers with bacon and broccoli and cauliflower and cabbage with cheese

@DJC3 thanks for that. I've been experimenting too and think I have the proportions right but they were always coming out too brown.. I'll try with your method

I did a rolled pork joint on the rotisserie recently and it was wonderful.
Not sure on the cut - was just labelled ‘roasting joint’! Had a nice fat cap on it. Was about half a kilo - just over perhaps. Did it for 1 hour 20 mins on 70 Celsius and rested well.
 
Forgot to mention, found the first ripe wild blackberries of the season today.
Yes we are on the south West coast and they were only ripe in one sunny spot but they did taste good :hungry:
 
and tomorrow I'll do some experimenting to find out if creamy runner bean soup is any good/ :)
Made the soup yesterday. Runner beans, fried onion, green bell pepper garlic, chilli pepper, stock cube, crème fraiche. Turned out a bit bland so I added some goat's cheese as well. Made a picture but the colour turned out all wrong in the picture so I thought to postpone posting until today, with a new picture. :) In real life it's a very pretty bright green!

Today I added fried Turkish sausage pieces (sucuk) but still found it a bit boring, if better than yesterday.
I think there's nothing wrong with my soup, it's just that I don't feel that soup is a real meal, even though it is. Dogs and cats love it, so I think they'll get the last small portion tomorrow. :D Depends on what my neighbour will cook, I'm invited, but if it's all carbs I can always eat the rest of the soup when I get back. :)

My 2nd meal was soup - the green one - with one end slice of wholemeal bread. Quite filling. Lots left for tomorrow (and the next day and ...) but I'll have to use some of the tomatoey chicken as well, at some stage.

Em brought me a bag of gooseberries a day or so ago. DIL had bought 3 bags (about a kilo each) so Em had bought the last one the seller had for me. So this afternoon I made some pretty sour gooseberry cheese (aka g'berry curd). It will go with some mackerel and maybe some other fish as well but I'll need to freeze it because I would only use a small amount at a time. Might freeze in ice cube trays - one or two of those with some fish would be about right.

Your soup looks the same as mine but mine was cauliflower plus cauliflower leaves, salad leaves and an onion and a carrot with shop bought vegetable stock (gel). I added some peas and some butter, but didn't bother with cream - the remaining cream tasted a bit off so I thought I would add yoghurt, but, on tasting it, I didn't think it needed anything extra.
 
1030hrs B scrambled eggs, bacon, 1x sausage
1500hrs L wife's hm veg soup with some chilli flakes for extra heat :hungry:
1800hrs chicken breasts in an oven dish with a sause made from stock, cream and sundried tomatos and a side of steamed veg.
On another note b4 going low carb I used to suffer with bad heartburn if food was too spicy havnt had 1 single bout and I am able to handle hotter foods now. Another plus to going low carb:):)
 
Sausages and bacon, two well done fries eggs, frred tomatoes, two slices vegimite of toast for breakfast.
No smoko.
Two chicken legs, green veggies, mashed potato, gravy, for lunch.
Toasted cheese and onion sandwiches for supper at six.

Same here! I’m also in the SW and was amazed to see a few ripe blackberries yesterday.
 
Forgot to post yesterdays food in the excitement of seedy crackers.
B- cheese on lc toast
L- leftover chicken in garlic and parmesan sauce on zoodles. Choc chia pud.
D- not very hungry but I knew I would be later if I didn’t eat. Good excuse for cheese and a few of the crackers. Glass of red. IMG_0629.jpg

Supper was the chicken and mixed pepper stirfried with Fajita seasoning with spoon of salsa, soured cream and guacamole. Mr PM had his with wraps but I found it quite filling.
Today same brekkie.
Lunch early due to eye injection at 1pm and will be very small amount of last night’s supper, a saucerful.
Supper will be two Green Cuisine plant burgers baked with two Portobello mushrooms.

Like for the food, but a hug for the eye injection. Hope it all goes well. Shuddering to think of an eye procedure - one of my worst horrors.

Just had a bowl of the green soup from yesterday and a slice of well buttered wholemeal bread. Feeling too full and slightly queasy now. It will pass, however, and then I'll be hungry again.

2nd meal will be the chicken and tomato dish also made yesterday.
 
@Riva_Roxaban - how is your partner's recovery going? @PenguinMum - like @Annb I don't relish eye injections. My brother when he was still with us had them monthly. I remember when his laser eye surgery went wrong, he was admitted and had to get an injection in the eye every 30 mins! Now that did creep me out.

Monday 1 August - bed 7 FBG 7.2

L. Glass of coconut milk

D. Leftover cold cuts - pork with egg, pork leg, ham, ox tongue, roast beef, smoked chicken with coronation sauce, santini tomatoes, port salut. 4 strawberries with double cream.

This was Aqua day. Achy limbs have eased now.

Ate at the neighbours, a pasta meal with a completely guessed bolus. Thanks to covid, I've completely lost any idea on how much insulin I need for a 'normal' meal, having almost always eaten my own meals for the past couple of years.
So far so good, but possibly a little too good, it's not two hours ago and I'm starting to drop. Currently at a nice 5.7 but the insulin will keep on doing its thing for a couple more hours. So let's wait and see, and keep a very close eye on my numbers to prevent any surprises.

At least it's a good reminder on why I prefer low carb meals!
